January 2009 release acquired from fogdog courtesy of the Secret Bunny 2009, so a big "Thank You" goes out to him. Poured from a 750ml bottle into a snifter glass.
A: The beer is a bright gold color, with a large white head that fades slowly and leaves a thick lace on the glass.
S: The aroma contains Belgian yeast, apples, some spice, citrus and light caramelized malts.
T: The taste starts with mildly sweet flavors of apples, caramel, spices and some citrus. Then bready flavors of Belgian yeast and a hearty but not too heavy malt character follow. There's a bit of an alcohol sting and a mild hops presence, but a good balance. The after-taste is slightly sweet and slightly bready.
M: Smooth and crisp, medium body, medium carbonation, finish is slightly sticky.
D: Tasty, goes down easily, not too filling, strong kick, very good representation of style, this is a good beer to drink for a long time if you're in the mood for the style.

Murky golden body with some visible carbonation and a white cap. Smell is full of clove and various belgian spices, grains, lemon zest, banana, and supporting citrus. Taste adds apple and pear esters, tons of fresh white bread from the belgian yeast and malt combination, and generally has a bright flavor complexion, refreshing yet authentic. Feel is very crisp: great spice snap there, with good bready retention through the sip. Bright yet medium bodied feel overall. Surprised me, great tripel. The wife liked it

L - Golden yellow, with 2 fingers of head, lots of lacing left on the glass. Beautiful brew
S - Belgian yeast, candy sugar, great aroma
T - Like the smell, belgian candy sugar dominates. Very tasty!

Super airy head with no density at all, crests at two to three fingers and then sizzles off faster than Carl Lewis to a light, spotty surface dusting, the lacing broadens well but has close to zero stickiness. Deep worn gold color, the bubbles form a veritable maelstrom inside the glass, looks like a raging blizzard, mild haziness prevents full transparency. The nose quietly explodes into a full perfume of white grape, pear, apple, apricot fruit, white pepper, Saltine crackers, dried yeast to pie crust, coriander spice, when it sweetens it’s mostly as bubblegum and fruitcake. Full-bodied with a satiny texture which well disguises its actual heft, the carbonation also helps relieve weight without allowing it to get fluffily soft. More banana, fig here to go along with the pear, apple, grape to strawberry fruit. Likewise, clove equal to the pepperiness. It’s fresh enough that the yeastiness is not a real major factor. There is a booziness to it which helps warm the belly and in no way distracts from being able to enjoy the flavors. Lemony finish with a hint of basil. For the category this is eminently smooth and drinkable.

Smell: loads of belgian yeast, citrus, and some spiciness comes through to the nose.
Taste: nice malt profile with pear, green grapes, yeast, cracked pepper, and a hint of bubblegum. Bitterness is moderate and alcohol is warming.
Mouthfeel: medium-heavy in body. Crisp from start to finish. Long lasting aftertaste.
Overall: a great tripel with loads of flavor and a well balanced beer.

This is really a top shelf Tripel. I may have rated it higher than some of the better Tripels I have tried because I was surprised that it was this good. Picked it up at Bruisin' Ales, Asheville NC as a recommendation from the guy that waited on me. Pours a clear dark gold/light copper color with a HUGE frothy and bubbly white head. The head comes up so thick that there is foam higher than the Chimay goblet...kind of like the whipped cream on an Irish coffee (Except there are bubbles too). The head is long lasting and there is plenty of filmy lacing on the glass. Smell is good, light fruit (apples and pears), some yeastiness and a little spice (pepper). The flavor is very good. I often rate my favorite Tripels with a comment that there is a rich aspect of ripe cheese with it. This beer rates that comment. Light fruit, clove, pepper and a strong yeasty presence place this among my favorite Tripels. Mouthfeel is rich with a nice balance between spices and yeastiness. There is no noticeable alcohol presence. An excellent Tripel. Next time I am back in Asheville, I will seek out this and some other Pisgah beers.

A bit overcarbed for my liking

Poured from the bottle into a tulip glass. Contacted brewery, their listed Tripel is actually the same beer as Solstice.
Big frothy off white head out of the bottle, growing nice and strong, but with some snapping carbonation and shampoo like retention but big clumpy and rocky. Easily three fingers tall with a big roaring middle column of carbonation, if through an opaque deep orange colored tangerine body. Quite nice.
Thick malts and fruity esters come off this wonderfuly. Nice sense of sugars, a little bit of banana, but moves to hints of pear and apple. Dense smelling brewed malts, an almost husky and thick quality coming off of it too. Very impressive.
Excellent palate but with one minor flaw. Carbonation comes off a little strong and even a bit hot and gaseous. It really just manages to take away from a very delicious palate. Thick juicy apples and pear like flavors in the mid palate wash all over. Juicy and full bodied though with rich nice malts. A hint of mild banana finishes the palate with thick chewy body. Bubbless still manage to feel snapping on my tongue long after first sips.
I just wish this wasn't so prickly but it's still a great tasting tripel.

Look - I thought the beer poured beautifully, and it had a very vibrant golden color. When you see this beer in a glass it definitely gets you excited to drink it.
Smell - Nothing crazy here, smelled like a standard tripel, there were some hints of banana and dark fruit and a little bit of yeast. I don't have the strongest nose in the world.
Taste - Very nice beer. I found banana to be the most prominent taste, with a nice balance of maltiness to go along with slight nutty and dark fruit notes. Very drinkable, goes down smooth and it's so delicious you will be done before you know it.
Feel - Very drinkable. A little too carbonated for my taste, but that's just being super critical. One of the most refreshing triples around
Verdict - Worth getting if your a fan of the style. Moderately priced and a very nice beer.

Smell - Nothing crazy here, smelled like a standard tripel, there were some hints of banana and dark fruit and a little bit of yeast. I don't have the strongest nose in the world.
Taste - Very nice beer. I found banana to be the most prominent taste, with a nice balance of maltiness to go along with slight nutty and dark fruit notes. Very drinkable, goes down smooth and it's so delicious you will be done before you know it.
