750ml bottle into a tall tulip. I'm not sure how old the bottle is, but it has a June 2012 best before date.

A: Pours a slightly hazy light golden color with two fingers of long lasting head. Active carbonation is evident in the beer, with a lot of bubbles rising from the base of the glass. Lacing looks superb. The head lasts throughout the length of the pour. This is a beautiful beer.

S: Lots of tart yeast aroma upfront, providing an aroma that is both fruity (mainly apricot, but also lemon, and green apple) and floral, I assume from the elderflowers. The beer is mildly funky and earthy providing an almost tonic-like quality to it.

T: Very dry. The tonic quality from the aroma comes off as more of a seltzer water flavor. The fruitiness is still there, mostly lemon peel, yet the apricot flavor does come through a bit. The elder flowers are also still there and provide a nice floral component to the beer. Tis works well with a firm bitterness and light peppercorn flavor. However, the juiciness I got in the aroma is not here nearly as much in the flavor.

M: Quite thin with very strong carbonation.

O: A wonderful Saison. The appearance and aroma are near perfect. The flavor is still quite good, but not nearly as good as the appearance or aroma. It could use a touch more sweetness and I think the beer would be near perfect.

A new one at DeCicco's in Ardsley, NY, $9.99 for a large bottle. Best before dating of 05 2011, notched onto the side of the label. Pours cloudy and dull ripe banana , under an awesome, huge crown of fluffy, wispy and super long lasting white froth. Nice merainge development and extensive fine and intricate lace sticks on the glass.Great looking beer. Delicate flowery nose, with a hint of peppery spice and some cilantro soapiness. Delicate, subtle, light and refreshing saison. More flowery notes, light pepper, light earthiness, some more cilantro soap. Drying hops join the fun late. Delicious. would love to enjoy on a warm summer afternoon, with the nice spread of cheeses, salads, crusty bread...you get the picture...Saison lovers seek out and enjoy this one..

I thought this beer was excellent. I'm in a years-long Belgian phase and I very much like the Saison style. This beer did not disappoint.

Light in color, generous head so pour gently. Very fine mouthfeel. Excellent taste. Low malt. Hops were fairly faint for me, but I have a high tolerance for hops so others might find it hoppy and I might not be able to tell...

Lautre Oeil, with Mathieu. White head on golden body. Very lacey afterwards. Not a praticularly interesting or spicey saison, elderberries and yeast and lighter mouthfeel. 700th Belgian style beer I am told I am reviewing, for people who keep count of these things.

Pours straw gold. Massive bubbly white head on each pour. Dissipates very slowly with nice foamy lacings clinging to the glass.

Aroma is very floral... unappetizingly so. Slightly sweet malt in the background with some dusty yeast.

Takes a few sips before you really start to appreciate the flavours. Striking combination of grassy hops and flowery elderflowers right up front. Certainly different. Tannic, but still quite soft. Aroma explodes in the mouth. Finish is on the dry side with some herbal aftertastes.

Light, but quite creamy, leaving a bit of a cottonmouth feeling behind.

A novelty beer.

Even carefully poured, Cazeau Saison brings up a massive head of bright white foam. Subsequent pours help it to rise out of the glass, forming a small mountain that looks a bit like whipped cream. Beneath, a hazy yellow body displays tiny bubbles steadily streaming upwards. The head retention is quite good, and the lacing is magnificent.

The aroma is quite floral. It's also gently grassy, straw-like, earthy, and lightly peppery. I even find a suggestion of lemon and honey, and maybe ginger. There's a bit of harshness to it but it's not really off-putting. It's hard to describe... vegetal, acidic ...possibly like vomit or perhaps even a baby's fecal matter? I'm guessing that that's a trade-off / side effect of the elder flower but I'm not sure. As it warms I also get a whiff of plastic mixed with some sugar.

In the mouth it's medium-light in body, and the natural carbonation leaves it just lightly tingly on the tongue.

The flavor follows the aroma, as usual. It's floral, grassy, woody, lightly peppery, and lemon-like over a honeyish malt base. It's also a bit earthy, but it's more like dusty dried earth than the somewhat harsh scent I found in the nose. A solid bitterness backs it, and it finishes quite drying with a slight bit of chalkiness and citrus-like acidity left in the mouth.

Overall, it's a very interesting and unique saison. I find it charming and beguiling. Even though I set my glass aside, my hand is drawn back to it. It's compelling. Not necessarily very complex, but compelling. Absolutely worth seeking out for it's unique character!

Supposedly brewed once a year in the spring when the elderberry trees are flowering.

Poured into a tulip glass, it generates a large head of sparkling bubbles. The surface has a meringue sheen to it, along with a certain stiffness like meringue also. Larger bubbles sparkle like soap suds, slowly dissipating above the golden hazed saison. Some unfitered sediment visible. Copious chunks of sticky lacing.

Soft but pungent floral aroma, must be the elderflowers.

Dry and soft with lots of mellow herbal/floral character. Crisp and very lightly bitter, nice. Grassy, hay, mild herbs. Effervescent with tight carbonation, very smooth and drinkable. Nice saison, not overdone with the spices. Definitely something i'd look for again.

Bottle: Poured a hazy pale yellow color ale with a rather large pure white foamy head with great retention and very good lacing. Aroma of floral notes with a rather dry finish. Taste is also dominated by some floral notes with some strange spices notes and some bready malt. Line seems be blurred between hops and those dominant floral ester. Body is about average with great carbonation. Very well done if maybe a tad too dry which cut into the refreshing factor of this beer.

Got this 750 in a great trade with OhSayCanYouBeer... Thanks a bunch Matthew!! Poured into my HotD goblet and shared with a friend who took a month off from beer and shitty food. Pours with a firm 2 finger head... tons of lace and rock solid retention... the brew is hazed yellow.

The nose is floral and and sorta sharp... It makes me think it is going to be tannic... Faint hints of pale malt, smells very dry.... Light peppery phenols.

Flavor is more spicy... very dry and crisp... The elderflowers are snappy and add a bright floral quality.. dry hay/grassy on the finish.

Light body with tons of carbonation... This is very very drinkable... Would be perfect on a summer afternoon... I would certainly buy this if I had access... Thanks again Matthew!

There are no real problems with this brew... It seems aroma/flavorwise on the light side for a saison... but the floral notes help bring it up and about.

8 oz. pour into a tulip ($7).

A: Saison de Cazeau pours a clear, light golden yellow color and yields a frothy, semi-rocky off white head of average size and good retention.

S: Very nice aroma. Light malts of grain and caramel were well balanced by lemon citrusy hops and flower esters. Less yeasty presence than expected (style and origin considered).

T: Very little to speak of in the taste department and surprisingly so after the pleasant nose. With no real overwhelmingly dominant flavor, alcoholic warmth was even pulling through. Shocking for a sub 5% ABV. The muted fruit & spice flavor leaves your mouth almost immediately after swallowing.

M: Decent mouthfeel. Light body, a little oily and a bit thin. But the carbonation was fizzy and right on time. The finish was lightly astringent and VERY, VERY short.

D: The drinkability is average or below. Too expensive and not impressive. Save your money.

750ml poured into a Tulip Glass. Elderflower Saison? My fiancee couldn't shag a bottle fast enough!

A - Pours a hazy, glowing gold with a fluffy white head that settles to a slight ring and haze.
S - Elderflowers certainly dominate the nose, this reminds me perfectly of St. Germain liquor in beer form. Crisp pilsner malt, a touch of hops, and some slightly earthy Saison yeast make up the rest of the aroma.
T - No surprise, but the taste is dominated by elderflowers as well. More crisp malt and Saison yeast character, but make no mistake, this is a perfume beer all the way. Flowery beers always have a slightly acrid chemical taste to them, and this one if no exception. Not bad, just not my thing.
M - Light and crisp, with a medium-thin body and good, "spritzy" carbonation.
O - Not my favorite Saison ever, but the little lady loved it so that's good!

A: The beer is slightly hazy golden yellow in color and has a light to moderate amount of carbonation. It poured with a finger high bright white head that has excellent retention properties and consistently left a thin layer of bubbles covering the surface.
S: There are mild aromas of citrusy and floral and hops in the nose.
T: Similar to the smell, the taste has flavors of a saison but the finish is lacking in dryness and mustiness.
M: It feels moderate-bodied on the palate and has a moderate amount of carbonation.
O: The beer is easy to drink but nothing stands out to makes me want to try it again.

Poured from a 330ml bottle. Pours a cloudy pale yellow with a ridiculously big foamy head. Nose has lemon, saison yeast notes of peppery spice and citrus. The floral elderflower notes show up on the palate, as do the spicy saision yeast notes. A little sweetness balances the tart and spicy notes. The carbonation is a little big and out of whack.

Poured from 750 mL bottle into cervoise.
A: Pours a clear, slightly green lemon color with high carbonation producing a generous 2+ inch bubbly white head. Good retention and nice lacing.
S: Soft and sweet citrus and barnyard funk. Musty and minerally. Mild hop note and a floral (elderflowers?) note too.
T: Clean and crisp floral and citrus hops. Elderflowers more evident here. Sweety musty barnyard funk. Grass, grains, and mild belgian spice. Also some definite similarities to delicate white wines. Interesting and unique.
M: Initially very clean and crisp, then turns toward mildly bitter hops with a dry, tart, and semi-sweet finish. Light body.
D: Not your typical saison. Complex and interesting--especially for style. With an ABV of 5% it is extremely drinkable. Definitely a unique brew and worth a try.

Picked this up at a great little beer store in Arlon, Belgium, Miorge Mihoublon. Cloudy golden-yellow pour with a foamy white two finger head with great retention and lacing. Great spicy, fruity, floral nose with lots of lemon zest, grass, white pepper, coriander, and as it warms, elder flowers. The taste follows suit with the elder flowers really emerging as the star. Nice tart lemon, melon, grass, subtle barnyard funk, caramel malt sweetness, white pepper, grapefruit, coriander, and yeast. The mouthfeel is tart and tangy with perfect carbonation, amazing balance, and a nice crisp, dry finish. Overall, this is one flavorful and highly drinkable beer. I'm a big fan of elder flowers so this was right up my alley. Pretty much a non-sour version of Cantillon Mamouche. Highly recommended!

Appearance: Pours a clear, very pale gold into a goblet. A smallish one-finger head dissipates relatively quickly, but leaves nice lacing.

Smell: Hops, carrying significant citrus flavors, come across first in the nose. They’re closely followed by very traditional spice notes (black pepper and others), and a somewhat surprising floral character.

Taste: Wow, this is an interesting one. The hops promised in the nose come through first, but they are quickly followed by a distinct tartness. The spiciness from the Belgian yeast remains present but lets the bitter and tart flavors take center stage. Earthy and herbal notes begin to make their impression felt as the beer warms.

Mouthfeel: Despite the complex flavors, this beer is pretty light in the mouth. The finish is very, very crisp and clean.

Drinkability: Quite high. I’ve dilly-dallied and am only getting around to tasting this on the first day of October, but this would be an ideal summer beer. At just 5%, you’d need to work at it to get into much trouble with this one.

A-Pours translucent straw yellow with about an inch of pillowy eggshell white head. Leaves rings of intricate lacing and a small cap of creamy foam.

S-White pepper, parsnips, coriander, hay. Delicate barnyard funkiness, a barely perceptible floral sweetness.

T/M-Medium bodied, with bracing carbonation and a chewy mouth feel. Slick, yeasty earthiness livened up by a bright citrus and cracked pepper note that creeps in mid-palate. The elderflower is very subtle, providing minute levels of floral sweetness on the back end. If you're not looking for it, you probably won't taste it. The finish comes back to life with a short, sharp burst of citrus to undercut the earthy, slick yeast.

O-An interesting, well composed saison.

Pours a cloudy golden yellow with huge plume of white froth. Scent is floral and earthy, moderate notes of yeast, spice and musty grain, hints of tart citrus, light tang and mineral notes. Taste brings components of scent together nicely, big floral and herbal notes lead the way with a splash of citrus and spice before a musty grain, grassy, metallic and mineraly earthy quality present themselves. Has a sharp tangy bite about 3/4ths of the way through each sip, interesting. Medium bodied, active carbonation, lingering herbal and floral notes. A unique brew with strong floral notes and interesting bite to it.

On tap at House of 1000 Beers in New Kensington, PA.

Poured into a stemmed tulip: Took a while to pour in order to fit in the big, dense, creamy head that settled to a finger. Head's a little lumpy over a waxy tan body, leaving a few chunks of thick lacing.

Dry herbal nose, with a subdued, subtle kind of fruit character, like cantaloupe - subtle, but nice, on the dry side.

Dry & bread in the taste, with some of those mellow melon & citrus notes from earlier, but ending a distinct black pepper character & dryness, which is cool...at first. After a bit it kind of morphs into a strangely vegetal taste, from black pepper to bell pepper. A little off-putting after a while, but interesting nonetheless. The rating here indicates less "average" than "a medium of good & bad".

Medium-fulled-bodied, leaves a dry aftertaste, makes me gush a bit. A little papery, astringent?

Man, highs & lows is the name of the game here - started out deceptively interesting & turned weird. I'd be intrigued enough to try another sometime, enjoyed the ride.

Bottle from Healthy Spirits in San Francisco. Served in a Moeder Lambic tulip because, forgive me, I don't have Cazeau stemware.

Pours a clear golden-yellow with a huge, foamy white head with great retention and tons of sticky lacing on the way down. Some visible carbonation bubbles in the glass.

The nose has some mild pepper notes plus plenty of the elderflower that's announced on the English portion of the label. It's nowhere near Mamouche levels, but is still quite noticeable. Probably a bit too over the top; I prefer saisons with subtle spicing so it's not completely obvious what was used.

The flavor is over-the-top with elderflower. This is a fairly-small beer and it's completely dominated by the elderflower character. There's pepper skin and a bit of spice. Really not a fan. Spice carries over to the finish. Light body and heavy carbonation.

This is really a one trick pony, and I'm not a fan of that single attribute, so this is one I don't really enjoy. If you like Mamouche and want something more accessible, give this one a try.

On tap at the Drafting Room in Exton the other day.

The beer pours a solid gold color with very good head retention and lots of sticky lacing all around. Nose is OK, with light honey, nutmeg and some light spice. Flavors replicate the nose, though this is really a pretty light saison with not as much flavor as I generally like. Also, there's something of an underlying wheatiness to this beer, and in many ways this is more of a wit beer then a saison. Mouthfeel is also pretty light to medium bodied, but drinkability is quite good. Alcohol is not at all noticeable, as you would expect given the abv. in this beer.

This is a decent saison, but is certainly nothing special.

A- Body is a cloudy yellow with a small white head.

S- Pepper and yeast with a squeeze of lemon a touch of a floral aroma, or is that just the power of suggestion? Phenols.

T- White pepper and light lemon with plenty of yeast, definitely tasting a flowery quality to this brew its light and a perfect accompaniment to a Saison. Some herbal grassy hops that add a nice kick to the spice rack of this brew.

M- Prickly carbonation on the palette, maybe a tad too carbonated, nice light body.

O- Interesting brew, not worth the 12 dollars I paid but decent enough to pick up at a reasonable price.

Capitalizing on the blooms of spring, Cazeau uses "the flower of elder trees" to decorate the already perfumy, spicy, and earthy character that's normal for Saison.

The fresh farmhouse ale pours with a light straw color that's lightened by an aesthetically, pleasing yeast cloud. Easily mistaken for Witbier, its fluffy white head caps the beer with a quiet calm that's nearly irresistible.

Without knowing exactly what elder flowers are like, the beer reveals floral notes of rose hips, sandalwood, thyme, citrus and rosemarry. Lightly musty in its scent, the essence of dried lemon, hay, sulfury green apple, and pepper add to the earthy counterpart to the beer's bouquet.

Apples and lemons provide a seldom-seen fruit taste to kick off the Saison and is backed by the sweetness of light honey and wafers. Under-rippened berries and dried citrus peels keep the fruit-floral taste developing across the palate with a late arrival of soap. Stern hop bitterness finishes the beer with an aftertaste of lemongrass and a medley of herbs and white pepper.

A lightly slick texture detracts from the dry, peppery, light zesty carbonation. Finishing quick, the beer carries a mild grape skin astringency with a pleasant wine-like acidity. Light warmth hides behind peppery prickle and closes fairly clean and crisp.

There's something more floral and fruity about this Saison than is normal for the style. I can only attribute it to the elder flowers being used. But the brewery takes all the fun out of it by letting us in on their secret ingredient, when the guessing would be so much funner without it.

A - Poured out a cloudy, straw yellow with a two-finger, bubbly white head of foam. It left sudsy sheets of lace on the glass.

S - It smelled floral with a funky/phenolic kick.

T - It tasted fairly spicy with a nice funkiness. Some sweet caramel with floral flavors.

M - It was crisp, sharp and smooth. A medium bodied ale with a dry finish.

O - This is a pretty tasty saison. I'm glad I got to try this beer.

pours a cloudy burnished yelllow with a tall, white head that settles out fairly quickly, leaving behind sheets of lace.

aroma is lemony and yeasty, with some musty and floral notes.

taste brings a dry, minerally tone up front, followed by some powdery yeast and lemon tang. Biscuity malt and some floral hops round out the flavor. Well-attenuated, with little residual sweetness. Not much spice, but some other floral, earthy and vaguely funky notes that keep it interesting.

Mouthfeel is mild and smooth on the palate, suggesting some wheat malt (although apparently there is none). Moderate to full carbonation gives it a nice clean finish.

Very nicely done. A great table beer for a summer meal.
