From the 11.2 fl. oz. bottle. Sampled on February 7, 2014.

The pour is chestnut brown with some reddish hues when held to the light. The head on this beer lasts for only a short time before dissolving completely.

Oh those bourbon esters really climb up my nose with a slightly more muted but still notable dark malt and chocolate character.

Body was on the thin side.

Same evolving flavors of dark malts, chocolate, earth, and bourbon play toss and catch with each other. It ended with a slightly lingering chocolate note. I found it to be delightful.

Firstly, it should be noted that this beer will not be at all one expects without having first read the label. Secondly, it's an extremely unusual beer in its own right.

It's a dark brown color, but with a very definite red hue to it. It does still reach a fairly dark shade, considering. The head reaches one finger and stays there for most of the session, only falling slowly and leaving plenty of lace on the glass.
This beer has an unusual array of flavors and some things that will throw off people expecting only what they think a stout is. Firstly, the absence of roast is notable; it is expressly intended, though. The rye crystal malts used in the base makes for almost an entirely new creation, particularly as this brewery uses its own particular ale malt in this recipe. Ultimately, this beer ends up being sweeter than many will expect without the big fullness or the heavy thickness and richness. American stout lovers may end up disliking this, which I can easily see. Those who can appreciate an English-style stout can appreciate this, even if it is a bit different. There ends up being a lot of vanilla, caramel and toffee with big notes of figs, brown sugar, and rum cake. There's a lot of balance, not to mention added complexity, though. Firstly, the oak comes through nicely with a bit of wood, but not so much to overturn everything. I imagine it also contributes to the strong vanilla notes. There's also a bit of herb, plenty of underlying earthiness, and just a bit of pepper. There's as much of a hops presence as could be expected in an English style, but maybe a little more to even the sweetness.
The body is medium-full, as most of its kind tend to be, with plenty of depth and a good, smooth flow to it balanced by just a light crisp bite. It's got a little bit of dryness easing in to keep it from being cloying, and it finishes with the full complexity of the flavor.

330ml clear bottle. Aged 'over Bourbon-infused oak'. No mention of barrels here.

This beer pours a clear, very dark ruby amber hue, with two fingers of puffy, densely foamy soft mocha head, which leaves some pockmarked limestone wall lace around the glass as things slowly ebb away.

It smells of sweet grainy, biscuity pale malt, a bit of crystallized toffee, dark orchard fruit - plums, apricot, and black currants - and mild vanilla, caramel, and wooden plank notes. The taste is sweet caramel and toffee malt, bittersweet chocolate, muddled pit fruit, an ethereal oak essence, manifest in barely a whisper of vanilla and woody graininess, and subtle earthy, leafy noble hops.

The carbonation is a tad peppy up front, but generally sedate otherwise, the body an introductory medium weight, and fairly smooth, but with a certain clamminess slowly building. It finishes on the sweet side, the caramel, biscuity toffee, chocolate, and obfuscated alcohol running the show.

Like the rest of I & G's offerings, this has 'gateway' beer written all over it. While there is a lot of flavour, everything comes back to that malt sweetness, which I am long past being an apologist for. I thought that the use of American oak (in whatever respect) would lend this the air of an American stout. Nope, still English, the hops surprisingly taking care of that. A bit more complex than I was expecting, but that's about it.

I love the holiday season. Especially when it comes to buying beer. you can always count on the holiday-style gift packs, usually a mix of the Breweries finest and or holiday appropriate beers plus a glass. This time around it's Innis & Gunn with a unique three pack of different aged styles along with a glass and for only $5.99. What can I say? I'm sucker for good marketing. And a sucker for Cask Aged brews.

I'm pouring this amber/red scotch-like color into the new glass. A 1/2" light brown cap of foam forms and slowly dissipates.

The aroma is so interesting because it really takes on the Bourbon Oak chips, but it really, really smells like bourbon or Scotch Whiskey, big vanilla, Huge "heat" or alcohol, it totally fools you into thinking you're about to drink something 80 proof. Sweet malt, light herbals and pepper. Old Leather and mild sweet fruits come through as the brew warms.

A thin or light bodied feel, it really is easy...not at all the lazy or thicker feel, which is interesting for something aged for 54 days. Refreshing feel, then becomes thick, slick and pretty darn smooth.

The flavor is a light, sweet malt, dark bread, sweet vanilla oak comes through big time, just like the aroma it seems like you might be taking a shot of something big, but a very mild heat makes you realize your not putting down a glass of bourbon. A sweet malt, light smokiness and peat, which is a classic flavor for Scottish style brews. The hops are subtle but come out even more as the brew warms with a light bitter, herbal earthiness that provides at least, a bit of balance to the oak and malt.

I'm amazed at how long the mouth feel stays solid with a malt-heavy and aged stout, making this easy to drink for the duration of the session.

Pours black with a large fading off-white head.
Nose shows vanilla, bourbon, woody oak and caramel. Very sweet-smelling.
Overly sweet flavours, pretty cloying. Lots of vanilla, toffee and bourbon. Barely any of the roast malt shows.
Body feels watery.

The beer that introduced me to Innes & Gunn. Black appearance but actually deep mahoghany with red hues when backlit with a lasting but frothy tan head, leaves some lacing on glass. Aroma of bourbon, vanilla, and charred oak. Tastes of malt and chocolate with lingering bourbon flavor. Mouth feel has slight carbonation bite but not heavily carbonated., not as smooth as many stouts.

A: clear brown ale on the pour creates a dark brown-black body with reddish highlights where light slips through the edges; you can kick up as much beige foam as you want, and it'll leave some lacing down the glass

S: candied fruits and nuts; herbal aromas as well; chewy sweet candy, warm brown bread

T: fruits like dates mashed with raisin, carob and cocoa, sweet vanilla tones; toasted nuts, some bitter nut; light coffee; cola

M: smooth and sinuous, medium bodied, slick; slight stickiness in the corners of the mouth; faint tingle of spice and fizz

O: very interesting ale - a "red stout" whose malts are lighter and toastier; bourbon aging effects a honeyed vanilla character of sweetness. Not like any stouts I can recall - one of a kind and absolutely worth the 8 or 9 bucks it might go for. Recommended.
