750 mL bottle from the LCBO; packaged on Jun. 26 2014 which makes this exceedingly fresh by my standards. Served well-chilled, poured into a tulip.

Pours a cloudy golden-blonde colour, generating two fingers of sparkling, pillowy white head at the surface. Excellent retention; it takes quite a while for the head to seep away into a frothy cap and collar, with a sponge-print pattern of lace left to decorate the perimeter of the glass. The aroma is rather fruity and fresh-feeling, with lots of orange and lemon peel, in addition to wheaty sweetness, apricot and banana.

Grainy pale malt/wheat sweetness comprises the backbone here, while the more citrus-focused notes of the hops grab the bulk of my palate's attention. Lemon and white grapefruit come to mind, with a floral, herbal feel toward the finish; quite spicy and peppery, with a drying, astringent effect on the tongue after each sip followed by a lingering pithiness. On the lighter side of medium-bodied, with lively carbonation of the sort you'd expect from a saison, providing a pleasant bite which complements the spiciness of the tail end.

Final Grade: 3.83, a B+. Nickel Brook's Le Paysan Saison makes for a nice summer diversion, particularly if you'll be drinking it outside (as opposed to inside an air conditioned room, like my lame ass). While I'm sure it'd taste fine in either situation, its crisp, refreshing, and highly quaffable nature will undoubtedly shine brighter on a hot patio. While there are either saisons I would rank higher, there's nothing wrong with this brew at all and I'm sure I'll be back for more before stock runs out. Worth a try.

On tap at Wellington Gastropub. From notes.

A - Poured light golden with a mild haze. Light carbonation and one finger of fluffy white head. Bright with good lace rings and a film of retention.

S - Orange, yeast, citrus.

T - More citrus, orange, yeast, some sweet spice.

M - Good carbonation, medium body and a sweet fruity finish.

O/D - This was a pretty good saison. I expected more hop character for something with the name amarillo in it, but it played nicely. Balanced between good saison elements. No complaints.

On tap at Bryden's. Another incarnation of their saisons. Passable not great but not bad. Light golden with a Caesar head. Malty aroma, malty taste with yeast. A lace sheet. Some hop bitterness at 25 IBU helps. Kind of flat carbonation. A bit light mouthfeel.
