Had this at the brewpub in Montréal.

A: Coppery-amber with 1 and half fingers of head. Leaves great lacing on the pint.

S: Clean smelling for an IPA. A bit disappointing. A bit of hops and slightly fruity.

T: Well-balanced, more so than the Corne du diable, their other IPA. Nice hoppiness without being assertive. Has a generic citrus taste.

M: Med-bodied with mild carbonation. Feels very smooth.

D: I could've had a few of these. Easy to drink and doesn't have much bite to it, at least less than I expected.

Overall, a decent IPA, albeit a bit tame for personal taste. I have a feeling that I was just expecting something else since I got so used to drinking some Corne du diable on tap on a weekly basis lately.

Special offering brought in to Bar Volo as a charitable offering. Very full flavoured English IPA. More bitter than others I have had in the style, and yet restrained and balanced in a way the American IPA is not, with flavorful non-C hopping and British malting. Simple and satisfying and a good choice by Jean-Francoise and Stephane to bring.

Appearance: Amber, almost like a dark honey golden colour. A cloudy, clingy white head who held on tight from start to finish. Served a bit cooler than I expected, but was just right after a few sips.

Smell: You could tell just by smelling it that it was cask-conditionned. I definately picked up oak, and mild hop aromas.

Taste/Mouthfeel: A good English style IPA, very discreet hop presence, in fact I almost didn't detect any of the usual "American IPA" hop-bite in the taste itself. I found it more in the aftertaste, with that feeling that sticks to the side of your tongue that only hops can give you. Great stuff.

Drinkability: When I drop by DDC and this Beer is available I always start my session with this one, and sometimes go back to it later on to wash down some of the more burly offerings.

Another great beer on tap at Dieu Du Ciel! Vaisseau Des Songes has a small off white head, good retention and brussels. Has an amber color.

Smells of grassy/floral hops (English and American), oranges and a good malt presences (caramel and golden grain bread comes to mind).

The malt is the first thing I noticed on the palate then the grassy hops as well as faint citrus and oranges.

It was my first beer at Dieu du Ciel, actually I selected it because of the cask. Served at moderated temperature,it has a strong feel.
You can taste the malt, actually it might be the strongest IPA I had for a while, you could feel all the aspects of an IPA.

On draft at the brewpub, Montreal.

Poured a medium copper hue with a one finger foamy white head. There was good retention and very good lacing.

The smell featured a resinous citrus hop and doughy malts.

The taste consisted of upfront piney and citric hops and moderately doughy malts.

The mouthfeel was of average fullness for the style.

Overall a tasty ale and one of the few American hopped beers available in Montreal.

Draft

Appearance – Mostly clear copper/amber colour with an average size fizzy white coloured head. There is an average amount of carbonation visible and there is a fairly good amount of lacing. The head lasted for around 5 minutes before it was gone.

Smell - Malts, hops, caramel, oranges/grapefruits

Taste & Mouth - The beer has an average amount of carbonation and I can taste malts, caramel, and some dry hops and pine. There is also some very light citrus notes - oranges and grapefruits. It finishes with a malty/caramel sweet aftertaste with a bit of lingering hop bitterness.

Overall – While I much prefer the American IPA's this was still a very tasty brew. It had some good balance and would be great to session. Fans of the style should give this one a try for sure.

sampled as part of the volo cask days 2006. thanks to ralph and all involved for putting together an awesome fest. even this non-cask beer was great.

pours a slightly cloudy orange colour with a very thin layer of head.

aroma is interesting. smells like a lager to me. very fresh, with a hint of cinnamon or nutmeg. great malt beneath this.

taste is great. biscuity malt with a nice bitterness level. spicy hops. very good.

mouthfeel is good. nice body and good carbonation level.

drinkability is great. interesting and enjoyable.

Here is an earthy (and very English) IPA. It pours golden and slightly hazy. It started with a good head that deteriorated to bubbles along the edge. Even so, this left a decent amount of lace.

The nose is hoppy and earthy. The flavor matches the smell but is fuller (in body as well). Lots of hop in the swallow and the aftertaste lasts a very long time.

Served on-cask at the brewery in a true pint, the beer is a bright orange-gold coloring with a foamy, frothy, big bubbled, white head standing a solid inch and a half. Aromas of tangering and grapefruit flood the nose. Smells delicious. Smooth, subtle flavors of citrus in the background to support the pepper and basil spicing of the hops. Light, creamy body that is supersmooth. The aftertaste is citrus and spicy hops once again, with a clean, light finish. Amazingly tasty and easy to drink.

Beer is caramel brown with a small white head. Good lacing.

English hops in the nose. Grassy. Lightly toasted malt, a bit of a biscuit scent.

Taste is similar. Grassy, earthy hops, moderately bitter. A bready, biscuit malt beneath, slightly toasty. A bit soapy.

Medium bodied, with moderate to high carbonation. Carbonation is too much.

Overall, a pretty good English IPA.

Served cool for a cask beer. A pale red amber face with a bit of that ole casky head on top. Mouthfeel is superb. Hops are very much there as one would expect from an IPA, but they are not in your face at all. Malts are also full bodied. This is more of an English IPA, and a very good one at that. Another wonderful brew by Dieu Du Ciel!

On tap at Volo Cask Days 2006.

Pours a hazy amber, small white head forms, some lace and okay retention. Smell is citrus, caramel, some pine and fruits, not as expected. Taste is malty, bready, wheat, citrusy kick in the finish, nice clean bitterness. Mouthfeel is medium to light bodied with medium carbonation. Thought this was more of an ESB than IPA, but a very enjoyable beer and definately a treat to sample.

Slightly hazy dark amber with a rocky, dark cream coloured head. Excellent retention and some lacing. The aroma was full of grassy, floral, green hops, just like opening a bag of hop pellets (except a little mellower). Assertive bitterness, especially in the finish, with lots of floral hop flavour and moderate malty sweetness. It ends with plenty of hop flavour and a slightly resinous dryness. Fair body, but it seems a little lifeless with the low carbonation on cask. Texture was quite smooth and close to silky. This is a hoppy brew, a little much for a session, but quite refreshing.

A surprise treat courtesy of Ralph and the Dieu Du Ciel crew at Volo Cask Days 2006.
Poured off tap a toasty golden colour. The nose offers a modest amount of crisp hops. Mouthfeel quite smooth, medium bitterness with a splash of malt. Taste has some dimension of resiny hoppy bitterness, perhaps a little too much for the soft malt choices that underly it. Perhaps not, but I would argue so. Enjoyable, but at times seemed lost/confused between styles. All in all, a fairly average drinking beer, but of slightly higher than average quality.

Amber/Red with a small whisp of an off-white head. The aroma is awesome! Fresh hops (cascade) and sweet creamy malts intermingle in the nose. The taste is quite good as well. This is malty and sweet up front, hoppy in the middle, and dry in the finish. The mouthfeel is creamy cask goodness and the drinkability is awesome as well. A nice cask-conditioned version of a classic English IPA!
