Strong brown ale inspired by the beer brewed by Belgian Trappist monks. Very little bitterness, this beer has intense malty and sweet flavours, mixed with the taste of chocolate and caramel. It presents complex red fruit and spice flavours due to the type of yeast that is used during the brewing process. This beer is at its best only after it has aged for six months. The Rigor Mortis are complex beers designed and brewed with patience and care in the tradition of the great Belgian Abbey beers.

Bottle purchased from Oliver's in Albany, NY.

Pours a murky dark brown, coca-cola like, into my St. Bernardus chalice. 1.5 inch head. A little bit of lacing but nothing significant.

Smells like a typical quad- the dark fruits (plums/raisins), some spicing, and yeast.

The taste is pretty similar. Very strong raisin flavor, cloves, along with the typical Belgian yeast flavors. There's some brown sugar and vanilla flavors I'm picking up as well, and some slightly grassy hop aromas.

Full bodied mouthfeel, low carbonation.

Another good entry from the Dieu de Ciel lineup.

Pours a hazy medium brown, dense cream colored head that coats the glass on the way down. Smell: brown sugar and brown bread note upfront, then pear, into caramelized sugar back. Taste: caramel, soft pear, sugary red plum, pecan-y note. Full-ish body, creamy feel, fair amount of alcohol cutting through.

A: A clear brick red that shines with a ruby red glint. A thin ring of sand beige bubble rims the glass in the glass. It does form a thin cap of foam when swirled but again settles out to a thin ring.

S: Big juicy red dry fruits with plums, raspberries,tart cherries, cassis, some warmth of the alcohol followed by sweet spices and slight yeasts buffer the end.

T: Caramel malts with notes of fried bananas & sweet spices and raisins, belgian yeast finished with warm alcohol esters.

M: Medium bodied with a tight hug to the tongue. Low carbonation supports the sweet malts and allows the flavours to shine.

O: Wonderful drinking beer that stands well on it's on and is suggestive of a low hopped barley wine. Would be terrific with a rich chocolate torte and a warm fireplace enjoyed slowly.

12oz. Bottle, medium pour Teku.

A: Reasonably clear pour, medium ruby-brown. Translucent, light tan head. Nice lace, small bubbles.
S: Big Belgian spice. Westmalle Dubbel comes to mind. Banana esters, bitter orange. Nice bouquet.
T: Sweetness, light caramel, toffee. Slight toasted notes. Mix of lighter stone fruits, apricot. Yeasty phenols, Some alcohol burn. Missing some complexity of classic quad examples.
M: A little clingy. Medium full body, reasonably drinkable, but missing a level of smoothness.
O: Somewhat underwhelming given previous experience with du Ciel. Good, but a little punchy up front and not a lot of follow through. Bottle says best after laying down for 6 months, probably true.

Very cloudy nut-brown pour, opaque despite not being too dark, and very thin head which quickly dissipated.

Walnuts come through the nose in advance of yeast, candi sugar, gingerbread, dates, and a little bit of alcohol. Complex and interesting.

Much sweeter taste than the aroma hinted, and more heavily favoring dark fruit. Prunes, plums, and sugar, with just a hint of tart plum peel. More gingerbread, and molasses. Slightly metallic.

Slightly boozy; medium overall feel re: viscosity, but a very complex and full beer to savor. Good amount of carbonation sting adds a very necessary bite to balance out the sweetness.

This is one of the sweeter quads I've tasted. It's also sufficiently complex and full. Good, but not quite in that echelon of great quads.

From 12 oz bottle to snifter

A: Mahogany in color, opaque. Not much of head to speak of, the suds that do exist speckle the glass with lacing.

S: The nose is ester-y, with banana and cherry notes prominent. The booze helps to dry the palate and it's volatiles propels a slight hop snap. Toffee-malts surround and envelop the bouquet, as a caramelly sweetness lingers.

T: Ester-y again, but there are distinct notes of carob and molasses that were undetected in the nose. The booze seems subdued on the palate as well, as malty sweetness dominates. Touches of oak, ripe cherry and phenols, but the flavor profile is fairly one-dimensional for a quad. Short finish for the style, sweet.

M: Chewy and viscous...fortunately th brew is more carbonated than it appeared.

A solid big Belgian beer, fairly easy to drink. But when you're reaching for a quad you're usually in the mood for something with layered complexity, which is lacking in this brew.

Picked up a single from Total Wine in mid-August for $4.99. I believe it was bottled in 2010 per the notches.

Beer poured brown with a nice off white head on the initial pour.

Nose has hints of dark fruits and belgian yeasts.

Taste is dark fruits, nutmeg, slightly sweet.

Mouthfeel is near perfection, silky smooth with each sip.

Overall this is a very nice beer with 3 years on it. Not sure how it is fresh but definitely try this with some age on it!

A very murky medium brown. Almost no head - just enough to stick to the edge of the glass. No lacing at all.

Delicious smell. Fruity - prunes and apricot. The aroma of a fresh bear claw pastry.

A heavy taste that is sharper than the aroma. Spicy taste of the strange combination of nutmeg and thyme. Prunes and raisins. Then the taste of dark chocolate that resolves to licorice. Bitter hay aftertaste.

Medium slightly oily feel. Chalkiness in the aftertaste. Definitely needs more carbonation.

A well balanced quad with very complex, layered taste. More hops that most quads.

11.5oz bottle from Five Points Bottle Shop (Athens, GA). No clue what the 0 and 9 notches mean as far as bottle date. Served in a Microbrasserie Charlevoix goblet.

Pours an opaque dull brown with orange-ish highlights when held to the light and a half finger of sandy head. Head fades to a halo and small wisps that leave very little lace.

Smells of mildly fruity yeast, cherries, caramel and grape jelly. Sweet and rather inviting. The longer I smell it the more grape jelly I get.

Taste is a bit sharp overall with motes of cherries, grape jelly, cocoa, earthy, brown sugar, caramel malt and a decent amount of alcohol. Not too shabby.

Creamy medium body with just a hint too much carbonation. Sweet earthy stone fruit finish.

Another well made brew from Dieu du Ciel. While it's far from my favorite this is enjoyable. I actually like the grape jelly aspect. Worth a go for fans if the style or the brewery.

Poured from 11.5oz bottle into St. Bernardus goblet.

A - A dark rusty brown with a creamy laced head that dissipates quickly.

S - Wood along with the traditional toffee and dark fruit aromas. Warm spice follows, like gingerbread.

T - Lighter profile that a traditional quad. Smooth spice and malt. Alcohol is hidden well, leaving a subtle warmth.

M - Very smooth, has body without feeling heavy.

A restrained version of the style. It's smoother and gentler than you get from most beers in this category. A nice change of pace or a great way to introduce someone to a darker Belgian style beer.

Poured into a tulip glass from a 11.2oz bottle. I stored this in my back closet for about 6 months, as the bottle directs, but it was entirely by accident and by no means due to to following the bottle's directions. There's no freshness date, but given the style and the ABV, I'd imagine this doesn't need one.

Opens with no pop whatsoever, and pours a thinned, slightly lightened brown reddish color. Extremely cloudy. Hardly any carbonation to speak of on this thing - which is bizarre, as this is bottle conditioned. I had to resort to an aggressive pour (in a Duvel glass, no less!) to produce about 2 fingers worth of a frothy, bubbly head. Some lacing at first, but that soon goes away. With all said and done, it really looks like a poor man's quad to me.

The aromas are definitely as fruity and malty as any great quad, although not as much as you'd think. Plums, figs, raisins, maybe some vinous elements overall, as well as milk chocolate chips, caramel, and honey. Slightly bready in nature, with a cracked toasted barley flavor that serves as the backbone for these flavors. No hops to speak off, in spite of some earthiness. Not too yeasty either, otherwise. Alcohol is well hidden. Has the same earthy, pleasant texture that all of Dieu du Ciel's beers tend to have, and I enjoy it for that reason alone.

The first flavor definitely follows the aroma quite well, and dramatically more so as it warms up. There's immediate notes of dry red raisins, sweet prunes, and figs, and then notes of brown sugar, cocoa spice, bready baked barley, and dry soil. The yeast really does reveal its complexity here filled with funky dark fruity flavors, and the barley and chocolate chip flavor shine through quite well. Caramel is quite big on this one. Gets progressively nutty over time. Wet and not too dry, and only slightly sweet (the alcohol is scarily hidden), but only a bit too thin for a beer this robust. As a result, it's refreshing and never cloying, but it really lacks the creaminess to bring forth all of these rich flavors. Otherwise, really solid stuff.

I'm glad I let this sit for a bit so I could give it a chance. There's some wonderful flavors in here, and other than its unfortunate thinness, this is an excellent take on a style that does indeed require a complexity of flavors all balanced out the way this is. Given the hidden ABV, I'll be sipping this one all night, but there's nothing necessarily wrong with that. Not the strongest I've had from this brewery, but still an undeniable good offering.

Hazy brown body with a decent head. Rich malt aroma coupled with some caramel and slightly hinting of alcohol strength; figs and dates. Thick, chewy body; cloyingly sweet texture that dissolves into a bright, biting fizziness. Caramel-like malt flavors with a strong, boozy aftertaste.

Well, the beer looks okay and tastes okay, but it's difficult to get really fired up about this one. Oh, it has it's malt-like presence and definitely exudes its big booze character without getting out of hand, but nothing quite gels to make this one stand out.

Taken in 'La Trappe' San Fransisco on 6 Feb 2013. The basement is very dark (where we sat anyway), so I had trouble seeing the true colour of the beer: it looked dark brown though. The bottle label being dark also was almost unseeable too, which is a shame because the art work is lovely.

The smell told me however I had a great beer in front of me, even if I couldn't see it too well. Malty molasses and rich fruit esters filled my nose and I couldn't wait to taste it.

The richness of the flavours exploded in my mouth, sweet malty molasses (like the aroma) with hints of toffee, caramel and chocolate. Add dark fruit and yeastiness into the mix and you have a very tasty beer indeed.

Full bodied and rich from the first sip, overall an excellent beer.

A: First of all, perfect beer art. Dieu du Ciel makes, IMHO, the most beautiful beer labels ever! Pours a dark amber to brown color forming a small beige beige head which dissipates quickly leaving a tons of lacings in the glass. A thin layer remains for a long time on the top

S: Strong notes of toffee, roasted malts, caramel malts. Candy sugar, vanilla and dark fruits, mainly raisins and plums

T: Sweet upfront. Strong toffee and candy sugar. Dark fruits, notes of vanilla, Belgian-like earthy and bready yeasts. End is light bitter

M: Heavy and creamy body. A little bit molasses. Roasted malts, biscuity aftertaste

O: Very drinkable. One more great beer from Dieu du Ciel

Appearance. Pours a deep hazy brown with a little orange and a thin off-white head.

Smell. Caramel malts and prunes, some spicy belgian yeast, brown sugar and spices.

Taste. Caramel malts, some belgian yeast and raisins, interesting spices, and a little brown sugar.

Mouthfeel. Full body, maybe on the lower side. Medium-low(ish) carbonation.

Overall. A good beer. Nothing stands out as amazing, but a solid quad with some interesting spices and that DDC house flavour (which is not a bad thing).

Poured into a Chimay chalice. The beer pours cloudy toffee brown with a thin, off-white head that doesn't last very long. There are some visible tiny bubbles along the side of the glass and alcohol legs. The beer smells of bread, toffee, and chocolate. I get an aroma of dark fruits as well. The taste follows the nose. The beer has a nice bready flavor as well as some toffee that brings some sweetness to the flavor. I get some light flavor of raisin and some hop bitterness that mildly lingers on the back end. I also taste the alcohol. The beer is full bodied with moderate carbonation. The finish is slightly dry. This is a very good beer.

A - Brown almost a deep burgundy, light cream finger thick head, dissipates after a few moments, completely opaque

S - Carmel, chocolate, raspberry, aged fruit, rum

T - initial: Sweet aged fruit- really complex flavors, chocolate, carmel. finish: a hint of booze, almost a roast, fruit/carmel is a linger-er

M - Full, thick, creamy, velvet, silky - amazing.

O - This is really really good. Sweet aged fruit, complex flavors. Mouth is Rochefort-like, do wish there was a stronger nose. Flavors are really nice but slightly mellow. 10.5ABV is hidden so well. One of the best non-trappist Quads I've ever had.

Poured into a Tulip. Bottled Feb 2013.

A: Medium brown, hazy with amber undertones, light, bright white head on pour disappearing to a few bubbles around the edge, and lacing on top.

S: Dark red fruit (plum, dark cherries), yeasty and some sweet spice.

T: Black slightly sour cherries, plums again, burnt sugar/caramel malts in the middle, then finishing with a bit of spice, funky Belgium yeasts, and alcohol...

M: Bright and sparkling with med carbonation, sticky on the finish. Pretty refreshing and overall well balanced in the flavours, except a the body is a bit boozy.

O: DDC says this is ideal with at least 6 months of age on it, so consider this a "fresh" review... I would say this is a quite nice quad for a beer out of Belgium. Nice flavours, interesting yeast profile, just not quite as refined as the 400+ year old Belgium's :P ... Overall, not the most complex, perhaps a bit sweet, but still worth snagging if you happen to feel like a triple during its once a year release or ones kicking around in your basement.

Poured a thick almost brownish body with minimal head on top of a heavy aroma that seemed to have some sugary malts along with touches of dark and tropical fruits as well as the typcial orange/citrusy yeast strain I find in these beers as well as a touch of medicalness/booze. Beer is more of the same as it is thick and full and definitely a sipper. A very good beer, I just found, for me at least, while there are strong notes of sweetness and breadiness (yeastiness) that make it sweet and go down easy and balance the hops and something akin to dark fruits like cherries or figs, the ABV gets into the beer a little and as my b eer warmed the alcohol took over and somewhat muted the rest of the beer's flavor profile. A nice beer and I would recommend it but just not my favorite of style.

Appearance: It has a nice hazy amber/brown color to it. It has a nice beige head that dies down moderately and leaves nice lacing.

Smell: The aromas definitely give out hints of Belgian yeast, dark fruit (raisins and cherries), caramel, brown sugar and a subtle spiciness.

Taste: Like the aromas, it has a some bready yeast, raisins, some cherries, caramel, brown sugar, cloves and a slight metallic aftertaste.

Mouthfeel: It has a medium carbonation with a nice overall balance and feel.

Drinkability: It's a very smooth drinkable beer accompanied with good flavors and aromas.

Poured into a "tulip style pint glass" from a 341 ml bottle. Bottled February 2013.

Pours a beautiful red-brown. Dark copper brown with hints of dark red. One and a half fingers of thick light tan/white head. A very inviting Quad.

Figs, strong dark malts, sugar, grapes, prunes, and a tiny hint of booze. Smells pretty nice, but not super complex. Also getting a little must.

Tastes very sweet, lots of nice maltiness and sugar, with a bunch of dark fruits coming through. Not a very prominent yeast profile. A bit of alcohol, but not very intense seeing as this beer is 10.5% ABV.

Very smooth with perfect carbonation levels. A little slippery as it goes down, and a little sticky afterwards. Nice and rich.

Overall- A really nice beer. Balanced, strong, delicious, enjoyable, and well made.

Murky, deep dark brown, dark white funk... Head was brief and white. Left nice lacing.

Funky, farmy, belgian nose. Banana, clove, metallic... smooth...

Creamy, high carbonation, nice palateable sweetness, lots of strong clove notes, biting typical Abbey flavors are strong and robust. Well pronounced bite followed quickly by corrupt smoothness.

Slightly all over the board. Don't get me wrong, it's good, just not great. At $5/12oz it's a good value and should be considered a "try". Cheers!!! Can't wait to see how it cellars.

341ml bottle poured into a snifter

Pours a nice burgundy color, hues of brown and garnet, fairly opaque texture with a thick soapy bone colored head that has decent retention and a fair amount of sticky lacing. The aroma is of candied fig, brown sugar, alcohol, plum, cherry and a bit of molasses. Fairly typical of a quad, but the alcohol is a bit dominant and mutes some of the more subtle notes. The flavors are quite similar, lots of stone fruit, plum and cherry, brown and candied sugar, with sweet and strong alcohol and rich dark grain. The flavors are very sweet and fall a bit short of what the nose lead on, the balance isn't quite there and compared to some of the more elite quads, this definitely falls short. The body is nice, carbonation is perfect, just enough to dance on the tongue, but avoids being prickly and abrasive and it has a nice silky finish.

Verdict: A decent quad from Dieu du Ciel! While it isn't as refined as many others and the alcohol takes over at times, it is definitely an enjoyable beer, but I'm not sure I'd buy this again with Rochefort 10 and St. Bernardus 12 so readily available.

12oz Bottle poured into a Duvel tulip.

Appearance: Light brown in color with hints of red. A head of about a 1/2" which quickly receded to a cap. Decent lacing.

Smell: Belgian yeast and sweetness, hints of dark fruit.

Taste: Pleasant dark fruit/raisin flavors. A bit on the sweeter side but not overwhelmingly so, still rather well balanced.

Mouthfeel: Very clean on the palate, not at all cloying.

Overall: A nice example of a Belgian definitely worth a try.

T - Crisp brown with a Belgian twist. Not overly complex but the flavors are refreshing due to the juicy fruit presence: apple, pear and citrus.

M - Medium body with average carbonation.

O - Great, well rounded brown. May I have another?!
