Not sure of the goal here but it didn't work for me. It did smell wonderful, very close to a sweet tart, but that's about all the was good.

Pale golden orange, alittle murky on the second pour, one finger of white head with a bit of lace. Smell is full of fruit, big tropical fruits, pineapple is the most noteable, hoppy nose, the base beer still seems largely undistubed, wine and oak presence is minimal but is still lingering especially at warmer temps. Taste is also fruity and tropical, orange and pineapple, oaky with a light vinious aspect, moderate bitternes, very fruity with a bit of a yeasty aftertaste. Medium carbonation, medium body, nice feel. Really good and much prefered to the base beer, another good offering from DDC.

A - opaque hazy bright yellow colour with a thin layer of cream colored head.

S - Oak, Belgian yeast, clove, light vinous aroma.

T - Belgian yeast, oak, vinous presence, light spice, bitterness still present. Some honey sweetness.

M - Medium, dry. Light.

341ml Bottle from Brouhaha QC for $6 - 2011 Edition

Appearance - Slightly hazy golden colour with an average size white coloured head. There is an average amount of carbonation showing and there is some fair lacing. The head lasted for around 2-3 minutes before it was gone.

Smell - Apples, breads/grains, yeast, wine

Taste & Mouth - There is an above average amount of carbonation and I can taste malts, breads/grains, and apples. There is also a clove/coriander/yeasty spiciness, some tart citric flavour, and I can taste the wine quite a bit.

Overall - Another winner from DDC. Very complex and and interesting to drink throughout the glass. I'll buy more if I see it again.

2013 Edition 9 month in "pinot noir"

A: Cloudy orange, with white head that still on top, leaving some very nice lacing on the glass

S: Belgian yeast, wine, fruity and wood.

T: At first taste like the original Derniere volonté followed by wine character, woody and minimal funky note, look like brett??

M: Medium body, ok carbonation, smooth in the mouth .. look like perfect
sensation on my tongue

O: Pretty impressive very nice beer (expensive in a christmas gift package) 341ml is not enough

11.5oz bottle into a tulip. no bottling date apparent and nothing checked on side.

6.5 % ABV stated on label.

Pours a crisp copper color with a nice inch thick white head with amazing lacing. The smell is very pronounced and big on spices and fruitiness and a lot of malts. The taste is out of this world for the style. Great amounts of funk and spices. I get peppercorns and lemon zest as well as some white grapes. Very enjoyable and unlike any other beer of this style that ive encountered. Medium bodied, medium carbonation. A bombardment of flavors on your palate sip after sip.

Overall picked this up randomly at Bestway in Greensboro never having heard of it, and it probably having been on the shelf for a good while. SO glad i did because this was a real gem.

On tap at the Zwanze Day/DDC 15th anniversary party at DDC. From notes.

A - Great cloudy golden pour with a one finger white head that left a film of retention and really great walls of lace.

S - Grassy with noble hops and an element that added a ton of complexity but was very difficult to pin down.

T - Barrel added a subtle vinous character that was complimentary. Honey, noble hops, grass.

M - Dry finish with a nice medium body and good carbonation.

O/D - A nice beer. Not too aggressive, but complex and tasty. Hard to nail all the elements down. Barrel added a nice touch without overpowering the base beer.

'09 bottle big thanks to Kegatron for the share. Poured into a snifter, the brew appears a clear golden color with a white froth that sits atop about a finger strong. As the cap fades, it leaves webby strings of lace sticking to the glass. A swirl revives a creamy topping.

The aroma is quite vinous with lots of white grape essence. It has a very mild yeast note that is slightly phenolic with spice that comes out more as it warms up. The alcohol gets progressively more solvent as it goes beyond ideal temperature.

The flavor is vinous and warming with alcohol. Minorbyeast indications of clove blend into a strong dry white wine character. It starts off mildly solvent and blends into a more harsh character that is tannic and astringent. By the time my glass is finished, this borders on feeling fusel.

This is a light bodied brew with a light level of carbonation. It is smooth and interesting at first but gets progressively more challenging to drink through the experience. Admittedly, I thought the aroma was a masterpiece at first sniff but as it breathed it started to get unbalanced. I really enjoy what the barrel brought to this beer but it was pehaps just a bit over the top. Big thanks for the share Heath.

Dernière Volonté Réserve Spéciale was pouring bright and golden... until chunks of sediment jumped out the bottle. The resulting murky (and flat) complexion is much closer to what you'd expect a barrel-aged beer to look like (though the beer's hardly absorbed any of the red wine colour). Whatever beauty this once had is long gone.

The beer has an aroma that would make the health inspector faint: wild yeasts (and probably countless bacterial critters in the wood) have bred heavily soured scents highlighted by festering peaches, moldy passionfruit and infected apples. Pinot Noirs are often described as having a 'barnyard' quality but here, in this example, the term is truly justified.

One year in pinot noir barrels was enough time for not only the aroma but the taste also to become impregnated with the flavours of red cherry, beetroot and stewed plums. These are contrasted against more tropical fruit flavours that include pineapple, peach, green grape and gooseberry. The flavours are unique but seem to be fading or falling apart.

The mouthfeel has pricking tartness and piercing acidity, at least until one becomes accustomed to it or is able to locate the bready-sweet maltiness and vanilla notes of the oak. There is an unexpected amount of citrus acidity (absent in the original beer) that saturates the palate in a sugary pineapple-like aftertaste. It's easy, though not necessarily enjoyable, to drink.

Most brewers that barrel-age/spontaneously ferment their beers refute the allegation that they produce some of the world's most complex ales; they claim they merely provide a vehicle for the yeasts. This is an instance where a brewer might want to absolve himself of all accountability. Wine makers scorn Brettanomyces and given their influence in this ale it's understandable why.

Dernière Volonté Réserve Spéciale is neither like one of Burgundy's better reds nor is it close to Montreal's best ales. Apparently Pinot Noir barrels, like Pinot Noir grapes, can also lead to capricious and variable results. Like EZ Squirt coloured ketchup or the McDonalds Hulaburger, this may be intellectually intriguing but, really, it's an experiment that just didn't work.

Appearance. Pours a hazy orange-straw with barely a skim of white head.

Smell. Nice sweet and fruity yeast with some lactic sourness, very woody red wine, green grapes, lemons and oranges, and some light malts. Pretty nice stuff here.

Taste. Caramel malts, woody red wine, more wood in the form of lightly tannic oaky vanilla, apples, oranges and lemons, maybe some green grapes and pears, and a little fruity belgian yeast. Not as nice as the smell.

Mouthfeel. Medium+ body with very low carbonation.

Overall. This one missed the mark a little but has a really nice smell going for it. Some tart sourness could have really helped things out.

2011 vintage, bottled Feb 2012.

Beer is cloudy orange/caramel in colour. No head, just a few white bubbles.

Smell is very nice. Lots of oak, a big juicy berry scent and some yeast. Pretty full and complex.

Taste is not as good. Oak is very strong, particularly at first, almost overwhelming. As I drink, more comes out. The pinot influence is clear, with vinous berry flavours coming into play. The base beer is pretty subdued in comparison to the barrel effect. There are some light fruit flavours from the original, and the yeast is there, but there certainly aren't any hop flavours, which I suppose is not surprising.

Medium bodied, strongly carbonated.

Overall, very good. Smell is better than the taste, but both are good. Nice beer for sure.

Navare Res.

A- Slightly hazy golden orange pour into tulip. Big creamy white head with good retention. Huge coat of lace all around the glass.

S- Smells like a big citrus forward Saison with nice hints of fresh oak, white grapes, bread, hint of funk and coriander.

T- This is very refreshing and flavorful. Has a saison feel with that nice Belgian spice and fruity yeast profile. Some tart lemon citrus, wine grapes, peppercorns and barrels of oak. Some floral hop bitterness.

MF- Dried out lighter body with a silky consistency. Carbonation is lower but supports the flavors nicely.

Damn good in my opinion. Love the way the yeast and barrels interplay.

Tap at Armsby Abbey

Big creamy head fades at a med pace tons of messy lacing that literally coats the glass, super hazy carrot orange color.

Nose has a very vinous grape aroma, red wine aroma but can't distinguish which, light musty, etc. a malty aroma underneath, some light spicy floral hops, and a light tartness, bit of toasty oak.

Taste mild sweetness with light creamy malts, plenty of vinous musty red wine, with a light tartness, and reddish wine flavors. lots of hops kick in with earthy slight spicy and grassy with a fairly decent bitterness. There is also light toasty buttery barrel, and a grainy rustic earthy fermented with wildish yeast like flavor with a light tartness. Finish is dry and long, fairly bitter, with some earthy hops, light vinous wine.

Mouth is med bodied, lighter carb, gritty.

Overall nice, the pinot helped the beer quite a bit, nice beer underneath with good wine, barrel, tartness and earthiness added.

This is an amazing beer. It was not at all what i expected and in fact superceded my expectations. I had never had derniere volonte; i liked the aged so much i had to taste the non-aged; see my review of Derniere volonte regular later that day, it was awesome!

A - Generous white foam settles to a thin cap, thicker collar, and spotty lacework. Hazy dark orange body.

S - Very vinous, with sharp oak. There's a slightly sour note, but I'm not sure if it's just the wine or some sort of mild lactobaccilus character. Hint of alcohol, as well as some spicy Belgian yeast flavor.

T - Taste is a little less exciting - mostly smoothed out Belgian Strong Pale Ale, with stone fruits, Belgian yeast, and bread. Surprisingly little oak in the flavor as well. Please, just a bit boring after the amazing aroma.

M - Smooth, medium-full body, creamy texture, lower carbonation, and no alcohol heat.

D - Really easy drinking stuff. The smell is fantastic, but the taste is a letdown in comparison. That being said, it's a quality barrel-aged offering from Dieu Cu Ciel - not sure why there isn't any buzz about these.

First semester is over, let's pop something I've been anticipating! Thanks papat444 for this well anticipated bottle.

12 oz bottle, poured into a Duvel tulip around 7C

A: Pours a nice orange with a little bit of flocc'ed yeast that made it out. Nice white haead, with solid lacing.

S: The aroma makes this beer into something truly special. A bit of fruitiness from the belgian yeasts play with the fruit bouquet coming from the berries. This clearly has played with wine, although if I were hard pressed to describe the aroma, it may by 'apricot' of all fruits. I love this.

T: Initially I was absolutely whalloped by the oak. Much too oakey would be my only taste, yet as time passes and I get acclimatized to the oak, I start to find a bit of black pepper and spice in the background, with an enjoyably vinous and fruity aftertaste.

M: Crisp, finishes drier than I had expected, almost saison-like at times... Nice, although I felt the tannins building in my mouth.

D: Not exactly what I was expecting (although that is hard to describe what I wanted), but still a nice beer (good, not great), that I would drink again given the opportunity.

Presentation: 12 oz. bottle, vintage 2009, poured into my Portsmouth Brewery tulip. Served at room temperature. 6.5% ABV listed on the label.

Appearance: Two finger frothy white head on a straw yellow body. Pretty good retention.

Aroma: Currants, tart green apple, clove, some barnyard funk and a touch of an herbal note. Some light undertones of pinot noir as well. Really well integrated and surprisingly fruity.

Taste: The funk and fruit are not as noticeable as they are in the aroma. Some tart green apple and clove notes rounded out with a pretty strong herbal note to balance out the sweetness. The barnyard notes and the currants are now in the background. A touch of the pinot noir is there as well. Nice balance.

Mouthfeel: Medium bodied with a light effervescence.

Drinkability: At 6.5%, there is a subtle heat, but nothing too strong at all. The flavors really have great balance. I could drink this all night.

Overall, a surprisingly nice belgian style beer. One of my new favorites to Brasserie Dieu du Ciel. There's just enough fruit and funk to satisfy but not overpower the base beer. Definitely worth seeking out.

my night cap last night after a heavy day of indulging in a ton of new beer. this was a lighter then normal last beer of the night after a heavier then normal session of drinking. served cold and allowed to warm in a tulip, this one was consumed on 10/02/2010.

really a nice pour here with a ton of light head that reaches a height of nearly three inches before settling back own with a ton of lacing down the sides. a rich hazy golden body that was riddled with carbonation.

aroma is a mix of light sour funk, grapes, oak, light spices and hints of bright lemony citrus. really alot going on here. as it warms light touches of oak and a small hint of raw vanilla start to present themselves into the fold. then i take the first sip and the evolution of the flavor is wonderful. a light lemon starts the show and quickly mixes with a light sour yeast and lots of grape and wine flavors. really quite nicely done. again warming starts to bring out the deeper oak notes and sweeter touches of vanilla that play well against the sour notes of wine. dry finish is highlighted by a deep and resonant grape flavor.

overall i really liked this, but then again i love anything in wine barrels as it really imparts a wonderful mixture if donw right. highly recommend.

12oz bottle. sampled sept 3/2010.

pours mostly clear orangey yellow growing more hazy as it approaches the bottom of the bottle. a small very fine white head forms, dropping quickly and leaving a bunch of spotty lace.

aroma is great. light alcohol. lemon and other light citrus. hint of sourness. raw oak and vanilla. caramel and toffee. nice belgian yeasty spice. bit of pepper. tropical fruit - mango and papaya. whole wheat bread and cracker. perhaps just a hint of toasty character.

taste is good. the barrel seems to show through a little less than in the aroma - but it's still no stranger. raw oak and vanilla. wine. bit of grape. big belgian spice and citrus. candied orange. caramel and honey. buttery oak. white bread and cracker. light alcohol.

mouthfeel is good. medium-large body with a nice dry finish. just under medium carbonation level.

drinkability is good. nice balance. interesting extra depth and complexity from the barrel. this may not be my favourite barrel-aged beer, but it's nice to see something different. good stuff!

Pours a cloudy golden, some light orange, very thick and chunky white head forms and settles down to a thick ring around the glass, a thin layer, some chunky lace spots stick.

Smell is neat, lots of light fruit, a touch of sourness, lots of citrus, ripe pineapple, a bit of mango, some red wine, the pinot really comes through, vanilla and some wood, caramel, light spice, mango, really nice.

Taste is similar, neat maltiness up front, very fruity, some spice, very wood, strong oak and lots of vanilla, a bit of grapiness, some pinot noir, apricot, biscuity finish, a bit of spice, slightly astringent woodiness, neat stuff.

Mouthfeel is medium bodied, pretty silky, with low to medium carbonation. Easy drinking, the oak might be a bit heavy handed but its real nice. Thanks Russ!

11.2oz brown glass "pry-top" bottle. No date, but a smeared Gold neck sticker that is illegible.

Quick review: Pours with sizable carbonation for a barrel-aged beer. Hazy yellow gold with some off-white head. Nose is dominated by new American oak aromas and some light fruity Belgian yeast notes. Palate is surprisingly spry and crisp. Fruity Belgian yeast is trumped by woody flavors of vanilla and a faint whisper of red berries and red fruit. The wood tannins come across and make this beer texturally difficult. It's rough and gritty for a mouthfeel.

Notes: An interesting experiment, but I don't think they used the "right" barrels. Love the idea of wine barrel-ageing, but whatever Pinot Noir barrels they used were not the right marriage for this brew.

Pours a crystal clear gold with a sparkling lustre and an off-white head that showed good retention and lace. The nose goes heavy on the grape, and has the character more of a fruity white wine than of your classic pinot noir (which preceded this beer in the barrel). The wood is certainly present, bringing some vanilla and peppery spice.

Huge fruity flavour, with a lot of grape, which again strikes me as more white in character than red. Reasonably sweet, but with a good balancing dose of hop bitterness. The oak is certainly stronger in the flavour, but isn't overpowering, bringing damp wood, vanilla and a dash of pepper to the mix. In fact, the againg works just as well as you could hope, and proves to be more complimentary than dominating. A medium body and carbonation round things off.

This was a great experiment from DDC, and I'm glad to see they've already built on this by barrel-aging the barleywine. The grape character that came out of this really surprised me, and it didn't taste remotely how I thought it would. Its nice to still be surprised by a beer!

Pours a slightly hazed golden hue with 2 fingers of creamy head (lacks the meringue of the original) which has nice retention and leaves gobs of lacing down the glass. Oh yeah.

The barrels make their appearance right off the bat, some wood and a hint of grapes, a touch of apple and citrus - juicy, esters, a light vinegar-y funk and just a whiff of alcohol. Inviting.

This is totally different than the original it seems but I am digging it. Lots of wood, pinot comes through, a restrained citrus hop profile, light vinegar, earth, a bit of bitterness and burn in the finish. Smooth and silky, easy down.

Really quite a unique offering from a Canadian brewer. The barrels are quite evident but feel integrated enough. They really change the base beer, give a touch of funk and a vinous quality, also emphasizing the Belgian influence which the original subverts with the copious amount of hops. Certainly worth trying. Thanks Pier-Luc!
