341 mL bottled on 3/14 at 40 degrees into snifter
Aroma citrusy
Head small (2 cm), white, frothy, rapidly diminishing to 2 mm layer
Lacing excellent – covers entire inside of glass with very tiny bubbles
Body medium yellow, cloudy
Flavor citrusy and herbal – more medicinal than pleasant; no malt, no alcohol, no diacetyl
Palate medium, creamy, soft carbonation

Appearance 3.25, Aroma 3.25, Flavor 3, Palate 3.5, Overall 3.25. Final weighted score: 3.1625
Well, what to say… The palate is the highlight of this ale with the medicinal flavor holding it back, although (quaff), the flavor is intriguing (quaff). This ale is growing on me (quaff). The lacing is excellent and very appealing, the nose citrusy but weak. The 10.2% ethanol is well hidden which could be dangerous (if one is inclined to drink more than one), but then if one is good, two should be better. We need a sixth judging variable – addiction potential. This one would get a 5.

Appearance: It has a beautiful hazy golden/orange color to it. It has a nice thick off-white head that dies down very slowly and leaves nice fluffy lacing.

Smell: The aromas definitely give out hints of Belgian yeast, grapefruit, oranges, lemon zest, peppery spices and some breadiness. Smells great!

Taste: Like the aromas, it's very citrus forward (grapefruit, orange & lemon zest), a touch of grass, yeast, some peppery spices and some breadiness.

Mouthfeel: It has a low/medium carbonation with a very nice overall balance and feel.

Drinkability: It's a very smooth drinkable beer accompanied by great flavors and aromas. Wow, what an outstanding Tripel! Dieu du ciel never ceases to amaze me.

Its body is a rich shade of apricot orange and partially hazed. A healthy two fingers of frothy white head waits patiently to fall. After a few swirls, alcohol film coats the sides of the glass.

Overly ripe, juicy, saliva-inducing pineapple flesh slowly oozes out of the glass. At the edges of this syrupy sweet center are more unrefined green and leafy hop notes. Sweet alcohol pulls through but its weight is masked by its tropical sweetness. Its got that classic Belgian dusty character to the nose with some spice and phenols thrown in as well.

The kick of booziness that hits the back of the palate coincides with long, sweet notes of pineapple and mango skin. The alcohol is warming everywhere it goes but is not overpowering. As it continues into the finish, it becomes more dry, spicy, and phenollic. A hint of warm biscuit closes things out.

With such a full body and high ABV, it's incredible how drinkable this is. Slightly under carbonated with some syrupy stickiness. The alcohol has a great drying effect that gives this a concise close; one of my favorite features of this beer.

Another home run for DDC. I had the privilege of having this on tap at the brewpub last summer and my eyes lit up when I saw this on the shelf. The big syrupy tropical character the citra hops impart plays so well off of the staple characteristics of the Tripel that DDC renders. It's dangerously good.

Poured from a 341ml bottle into a stemmed tulip glass.
Bottle 2014/03; Poured 2014/04/03

A: Pours a hazy copper color up to 2-3 fingers of creamy, persistent head slowly falling to a thick color and curtains of lace.

S: Big hop nose: tangerines, grapefruit, lemon and spice. Some nice biscuit malt notes. Nice yeast presence. Very floral/herbal. Very intriguing!

T: Very tropical with lots of tangerine, mango, papaya; big malt presence with caramel and toffee. There is lots of yeast dancing around highlighting banana and spice. Floral on the palate as well. Some warm alcohol.

M: Medium + body and nice carbonation yields a creamy, velvety and crisp beer.

O: Just a really interesting beer! There is a lot going on; Herbe highlights the the hops, malts and yeast all i the same beer. I always look forward to this release.
