The dominant sourness of Solstice D’été is a result of letting the un-boiled mash do its thing for a few days. The interesting sour character this develops is further complemented by the addition of a heaping pile of whole fruit shortly thereafter. The result is an incredibly refreshing sour ale where the fruit is allowed to carry through without restraint.

Bottle (Bottled on 2020-09-23)
Appearance: bright pinkish red
Smell: very yeasty – smells of overproofed dough with slight alcohol notes. Faint sweet black cherry notes.
Taste: high tartness with barely any cherry flavour and no complexity.
Mouthfeel: tart, medium carbonation.
Overall: The smell was unpleasant initially, however the yeasty smell dissipated as I drank it. The taste was dominated by tartness with not much else happening. Would be a good summer beer when drank very cold, otherwise I found it lacking in aroma and taste.

On tap at Beavertown Extravaganza. Aroma has sweet macerated cherries and cherry preserve notes. Taste is mostly tart, dry and fruity. It's decent but quite simple.

12 ounce pour at the Montreal brew pub. Crystal clear cherry juice. Smells like sweet, dark cherries. Tastes like tart yet sweet, dark cherry juice. Really delicious.

Looks like a really red gamay with a stable pinkish head. Aroma - cherries of course, but not sour cherry but really ripe black cherry. The black cherry lingers in throughout flavour where it is balanced by the funky sourness of the style.

This is a good beer, and really nice to have it back to back with the raspberry, just to highlight how great the raspberry is.
Light sour cherry in the aroma, a bit more in the flavour, but the base Berlinerweisse really shines through.

Bright cherry red with very little head and next to no lacing. Cherry on the nose, mild funk. Tart cherry with crispy, spritzy carbonation. Very nice and better than the raspberry to my taste.
