The concept of Morality is perhaps a subjective one, as the history of alcohol in Quebec may demonstrate. This IPA is brewed with a dare-we-say excessive quantity of Simcoe, Citra and Centennial hops. The dry finish is highly aromatic and slightly resinous, invoking tropical fruits atop dominant hop bitterness.
Moralité was crafted at our Montreal location in 2012 in collaboration with John Kimmich of The Alchemist brewery in Vermont, USA.

Good starting head that settles slowly to a single layer of bubbles. Good blanket to spotty lace. Cloudy gold color.
Initially, I detected some earthy smells, but I no longer can detect them. The aroma is fresh and has a grapefruit element to it.
Astringent finish to this beer--just straight bitterness. Light malt up front but it succumbs quickly. Good body and carbonation.

When choosing what type of IPA is more of a personal choice for any brewer, for the ones at Dieu du Ciel its perhaps a moral one. Chocked full of Simcoe, Citra and Centennial hops, the brewery steers clear of the haze for a bitter and tropical hop bomb.
Pale chrome and dullish amber in color, Moralite releases a creamy eggshell froth to carry a host of tropical, citrus, sprucy and herbal aromas onto the nose. As a sweeter coat of malt crosses the early palate, suggestions of caramel, toastiness and nuttiness apply a buffer of sweetness in anticipation of the hops to come.
And as the hop flavors join the grain sweetness, a bold taste of orange, grapefruit, pineapple and apricot create a cocktail of fruitiness that pull from the honey-like sweetness and carry the taste into a drying late palate with a more bitter backdrop. As the session closes, the resinous flavors of pine, grass clippings, hemp and tea ensures a snappy and refreshing finish.
Medium bodied and trending dry, Moralite finishes both bitter and dry with a crisp, drinkable and refreshing mouthfeel. A long aftertaste of piney bitterness and citrus peels keep the hop focus alive in a long and gripping bite.

Clear amber brew with plenty of foam in the Stella Artois goblet. Spritzy on the tongue with a substantial mouthfeel. Aromatic with peach and pine. Resiny and citrus flavored. Piney with a mderate bitter aftertaste. From the pint can.

Sample on tap at What’s Brewing BF, Stavanger. A standard American IPA with its notes of pine and grapefruit. Good beer, but not so different from other IPAs.

From a 16oz can, dated 01/18/22. Purchased at Bières Dépôt 02/09/22. Served in a spiegelau IPA glass.
Pours a lightly hazed and glowing honey-gold with two fingers of soft suds. Retention is very good, leaving a heavy, merengue-like cap and a tattered curtain of sticky lacing.
Nose is malty, floral, earthy. Aromas of tropical fruit, flowers and fresh cake.
Taste is balanced and full, fruity and cake-like. Tasting apricot, pineapple, orange juice, white cake. Caramel sweetness. Mild grapefruit juice-type bitterness and a smidge of resinous pine at the end, finishing with vaporous vanilla and flowers in the sinuses.
Feel is smooth and creamy, medium-full bodied with just-adequate carbonation - it might have benefited from a smidge more carbonation.
Overall, a full bodied, full flavored beverage. It’s hard to find any substantial fault with the complex and layered flavour profile other than that it was maybe a little sweet to my tastes.

16oz can from Halftime. Golden pour, light cloudiness, thick fluffy head. Hoppy, dusty aroma. Taste is dry, malty, bread, light citrus. Subtle, but tasty AF. Nice creamy feel. Excellent.
