Pours a deep maroon color with black highlights, very dark. Very good head with amazing lace on the side. Aromas of dark fruits (raisins and dates). Massive sweet malt sugary flavor with just a hint of bitterness on the back end. May be little bit too sweet for the style but very tasty. Hides the relatively high alcohol well.

(Sampled at the North Clybourne location)

This five ounce sample has a nice medium-sized foamy head with the fawn color and melted marshmallow sheen that I like so much, and it leaves behind lots of lacing. The beer is the color of very dark cola, with slight reddish-brown hints. The smell is thick, roasted, and malty with a bit of hay. After a few more sniffs I notice that there's an unusually strong hop scent for a doppelbock.

The taste is fantastic. It's quite carbonated and very complex, but well-balanced. The flavors change with each sip, too. In my first mouthfull the initial taste is one of crisp hoppiness. I take another, and the first thing I notice is a slightly medicinal cherry taste. In still another, I get a caramely cola taste. And that's just the beginning. It also has a wonderful roasted caramel flavor with a little molasses, which seems to go hand in hand with the pronounced carbonation and the sharp, hoppy tang in the middle. It has enough maltiness to be slightly chewy, and the finish carries a nicely restrained bitterness. I hope I can get my hands on this stuff in bottles.

This particular batch was 8.5%. Pours a deep dark brown, some orange highlights on the edges, small tan head, settles to a ring and then is nonexistant for the last half of the snifter, leaves no lace. Smell is sweet brown sugar, alcohol, vanilla, chocolate, and a little licorice, very malty. Taste is very roasty, vanilla, chocolate/coffee, caramel, licorice, nice clean bitterness in the finish. Mouthfeel is full bodied, with low carbonation, very creamy and smooth. This is a fucking fantastic doppelbock, I was really hungry when I got to the brewpub, right after the Hawks game, food wasn't being served anymore and I wasn't hungry after drinking this snifter, it was so filling. I guess thats the point of a doppelbock, as good as Celebrator.

Pours a bright and clear copper color crowned with a thin lacy white head. The aroma is light and malty with subtle vinous qualities. The beginning of the taste is mild, grainy, sweet, and well balanced. The body is light with moderately low carbonation and flows fast into the finish which continues the maltyness and gives a light kiss of warming alcohol at the end.

Pours a dark amber to brown in color, a medium sized tan head quickly recedes. Cola and sugary malty sweetness in the aroma along with some sweet ripe berries and ginger / root beer aromas. Bourbony like alcohol aroma as well. Taste is sweet malts, caramel and cola, with a nice zing of hoppiness. Mouthfeel is medium, slightly sticky from the sweetness, but small pepperiness and dryness in the finish help to balance. Very nice beer, highly drinkable, but dangerously well hidden alcohol. Thanks Joe!
