12 oz bottle poured into Duvel glass...
Should note that I have had this beer many times and acknowledge that it is an evolving product. Vintage varies and have had bottles within a 4-pack that are deviations apart. I like this!
A: Nothing special here. Golden orange - translucent. Modest head.
S: I would love to talk about the olives and cloves and doughy qualities but I must lead with this beers forefront aroma - BRETT FUNK!!! Its among the best of all american beers i've had the pleasure of inhaling via nares...
T: This is complex. Leads with sweet bready maltiness in a great way! There's again the olive quality mentioned earlier, with a HEAVY palate of Brett yeast and candy sugar! As previously mentioned, this beer evolves and changes. Have had bottles that were rather dry -I liked this! Have had bottles where I would have sworn I was drinking a belgian style abbey dubbel - I liked this! Often and usually is outstanding in the taste category!
M: Medium bodied and well carbonated despite modest head...
O: This brewery has left me disappointed - there staples are mediocre - but this one is a keeper... A wild, funky, unleashed version of Sophie. Not quite as good as the Ommegang products but for an American style Belgian wild ale with Brett - Pretty much best of breed...she's a doll... I heart Matilda!

Poured from 12 oz bottle into tulip glass.
Appearance: pours a 2" frothy cream colored head which slowly falls with some mild lacing. Color is a amber-orange, cloudy with sediment in suspension. Extreme amounts of champagne-like streaming carbonation.
Aroma: banana and coriander, caramel, Belgian yeast.
Mouthfeel: medium bodied and slightly astringent. Finish is dry with a bit of lingering alcohol burn.
Flavor: sweet caramel and spices, raisins, a hint of pineapple, yeast rolls, strong earthy hop presence.
Overall: nicely done and a pleasant brew for sipping and contemplation.
