Poured into a snifter on 5/1/11

Pours a deep, stained cherry/brown. About as close as you're getting to jet black once in the glass. I managed to pour a head just over one finger. However, the milk chocolate brown foam is not long for this world, leaving skimmed retention and a scatter shot of lace in its wake. After a while retention is shot. Swirling helps a bit but doesn't hold.
Even at nearly three months old the hops have held up pretty well in the aroma. Though perhaps not entirely as potent or vibrant as fresh, there is nevertheless a nice showing of pine and some citric nips on the edges. Booze acts as a mortar between the hops and roasted dark malts. Unsweetened chocolate and hints of coffee beans. Still, this is the hops' show.
Nightstalker strikes the tongue with a strong hoppiness, at least for the style, though it isn't overly bitter. Instead, pine and citric tones work in conjunction with the oh-so-appreciable heat of the alcohol. Further still are smooth layers of chocolate; roasted and at times near burnt. Sugary overtones but not overly sweet; enough hops to offset it. Hints of roasted grains. Notions of dark berries are is warms.
Full bodied and quite viscous. Still slick with booze, there are beginnings of granular underpinnings which, if held true to form, should make for a nice, rolling feel after aging for a spell. Just enough carbonation too keep things moving along. Finishes surprisingly dry with lingerings of cocoa powder and booze.
All around a pretty righteous imperial stout. While fresh, it's spot-on for a hopped-up take on the style and it smooths over well with some age. The only downside is the sheer alcohol heat which is strong even for 11.7% abv.
