Bottled July 17, 2009. Served in Goose Island white-wine glass.
A: Pours luminously clear straw with fluffy, mountainous head that has decent retention. Foam slips away leaving ribbon-like lacing festoooning sides of glass. Nice effervescence that is just a little more sedate than sparkling.
S: Citrus peels, citrus, and spicy white pepper take lead. Next, toasty and biscuity malts. Digging, I find a white wine quality.
T: A mellow sourness joins the above elements in taste. Herbal spiciness is also present. Low bitterness and sweetness. All characteristics are very well integrated and mature. Crisp, clean finish.
M: Lighter bodied and medium, yet soft, carbonation. Not overly dry.
O: I drank this vintage about a year ago, and I am positive the extra year in the bottle has served it well. Lovely, mature American interpretation of a Saison. I suspect the barrel-aging is asserting itself a bit more now. Super drinkable.
