On tap at the Goose Island Clybourn Restaurant and Pub. Poured into 12oz tulip

A: This pours out a clear orange amber color. Finger plus of slightly off white head. It's fairly fluffy. Leaving some bits of lacing.

S: Surprisingly smells of Belgian yeast spice more so than the fruity hop aromas I was expecting from the "CBC" hops.

T: lots of Belgian spice up front. Actually over powers the hop notes more than I expected. Very dry close.

M: medium bodied.

Enjoyed this at Bad Apple and forgot to post this review. Cleaning out my inbox and found these notes.

CBC stands for Cascase, Brava, Citra hops and this beer is brewed with Belgian yeast. Overall, I really enjoyed this beer. The freshness combined with the added complexity of the yeast strain made this a very interesting beer.

Served in a tulip glass with a finger plus of tight foamy head. Retention is decent and later some decent lacing forms in the glass. The color is where the color brass ends and copper begins along some bright metallic spectrum.

Aroma was very nice and a combination that you would expect given the featured ingredients. Certainly hop focused and floral. Bright and fresh up front, then you get a sense of the yeast with some light spice. As it warms you get some pepper which really makes itself evident in the flavor.

Flavor is very nice and a perfect blend of the American IPA notes with the Belgian spice/yeast features. Again, fresh comes to mind with the floral citrus hop flavors. The malt tones play a supporting role but provide needed balance and set the stage for the spice from the yeast. Black pepper makes itself evident and comes on as the beer warms. Nice complexity here.

Medium/Light body. Fresh bright mouth feel with spot on carbonation that brings the flavor to life.

Really liked this beer and would welcome having another.

I had this on tap at Bad Apple into a tulip...The beer pours a dark gold with hints of orange, pretty clear. The head is white and fluffy with good retention and lacing...The aroma is really nice, its mostly just smooth hops, not overpowering a little yeast on the finish...The taste is super nice. Its an easy to drink ipa that delivers very smooth hops. Easy to drink, could crush this all night long.

Served into a tulip (10 oz?) at Goose Island - Clybourn (April 12, 2010).

This is a special brew for the Craft Brewers Conference (ergo CBC), that just wrapped up. The pub beer menu states: "Belgian IPA brewed for the Craft Brewers Conference here in Chicago. Created with Matilda yeast hopped with Citra, Bravo and Cascade hops."

Eyes: Served in a fluted tulip with a half finger head. The liquid is a mildly murky, medium orange/copper.

Nose: A bit softer on the nose than I would expect, but very appetizing. It's got a decent but not overpowering floral hop profile, and an extremely mild musty funk. The Cascade hops are evident, but I can't say I could identify the other varieties even if they were more potent. It smells like an IPA.

Tongue: The citrus hop is a bit more pronounced than the nose. The floral, citrus character of the nose is present here, but appears a bit more on the bittering side. The off kilter yeasty taste appears and receded, and marries well with the overall flavor.

Mouth: Smooth, good carbonation with a moderate biter aftertaste.

Libation: I like this beer a whole lot. Though not as outlandish or funky as some Belgian IPAs, the Matilda yeast provides just enough character to be interesting. Probably what I like best is that the IPA aspect is paid full attention, the CBC IPA won't be confused with an America Wild Ale as some Belgian IPAs can. This is a very interesting beer with enough hops to satisfy most hop heads, and at 6.2% ABV you can have a couple with your meal and still drive home.
