Sofie, as you have come to know and love her, is a saison brewed with orange peel and aged in wine barrels. Keep citrus in the family, Paradisi uses grapefruit. 60% ale aged in barrels with grapefruit, 40% ale.

On draft at Congregation Ales in Long Beach.

Appearance: Pours a light, clear straw color with light to moderate carbonation. About 1" of white head forms and has very nice retention and lacing.

Smell: Lush citrus and some florals hit immediately. Some definite brett funk as well as a bit of wine barrel show as well. The brett doesn't seem to add any sour component, just purely funk. The added citrus component to the base Sofie just about knocks this out of the park for me.

Taste: Huge juicy grapefruit and orange rind hit first. These are mostly sweet, but add a slightly bitter component as well on the back end. Some funk comes out in the middle and back end. I don't get much barrel if any. Super impressed with this beer.

Mouthfeel/Overall: Mouthfeel is light with ample carbonation, and the finish is semi dry with some brett funk flavors. Just about right. Overall, this is one of the best beers I've had in a while. Definitely a non-traditional saison, but the added citrus component really makes it drinkable and delicious. Had 3 glasses and would have had more if time allowed. Very good beer, and a nice improvement on the base beer.

Cloudy golden. Creamy, large, near-white head. Fairly sticky.

Sweet and juicy grapefruit aroma with some mild grass and yeast. The aroma comes together nicely.

Nice combination of grapefruit and mild funk, earth, and grass. Nice.

Medium bodied, creamy carbonation.

Very tasty.

From a growler pour filled this afternoon-

Appearance- Bright, golden yellow, completely clear, with a thin white head that fizzled away very quickly, not leaving any lace or rings around the edges of the glass.

Smell- Sweet grapefruit and fruity yeast dominate, with maybe just a touch of vinous character.

Taste- Very similar to the nose, huge grapefruit and citrus, a slight lemon tang, big fruity yeast esters. Slightly earthy to balance out the huge fruit presence.

Mouthfeel- Medium body and carbonation, incredibly easy to drink

Overall- Very happy I came across this. Of course Sofie is good, but Paradisi is just on the next level.

Enjoyed on tap at the Hopleaf in a 12oz tupil in Chicago, IL.

A - Translucent, pale golden, soft white head - dissipates quickly leaving some just around the rim, constant carbonation rising.

S - Tropical fruit, floral, sour cherry, lemon, grapefruit, cranberry, raspberry

T - Sour cherry/cranberry/raspberry, funky brett, belgian yeast, tart white grape.

M - Crisp champagne taste. VERY highly carbonated, bubbly on the tongue & stomach - very light but not very frothy.

O - Much different that original sofie. was not expecting the strong sour cherry/cranberry/raspberry/funky brett. almost a berliner weisbeir. a shade darker but similar carbonation and crispness/sharpness. But mostly didn't get enough of the belgian yeast which was really nice in sofie. Certainly enjoyed tho- but not as good as the Original.
