Notes/Commercial Description:
When we set out to make Two More Weeks our dream was to bring you our version of a straight Belgian-style lambic beer. We have been aging this beer since May of 2012 in some of the best wine barrels in our warehouse. The name's an homage to the brewers keeping the marketing and sales folks at bay while the biology and chemistry of the beer did it's thing.

On-tap at Revel Room, and then again at Jake Melnick's. Served in a tulip.

A - Loads of white foam settles to a collar, but minimal lacing. Transparent golden body.

S - A bizarre mix of urea, dirty, sulfurous funk, buttery Chardonnay, and crackery malt. Not a ton of wood, but a fair bit of vinous quality to this. There's some mild lactic elements too. Evocative of the generic wild strains available from Wyeast that are used in umpteen American wild ales.

T - The taste is similarly buttery, but with a popcorn flavor rather than a cracker one. The dirtier funk flavors are more restrained, which is a positive. Some vinous and lactic acidity is present, with a touch of lemon and underripe peach. The buttery character dissipates as it warms up, but it never totally vanishes.

M - The texture is quite dry, and the finish quite clean and crisp. Medium bodied, with zesty carbonation. Seems a bit heftier than the listed 5.3% actually. Doesn't get overly acidic.

D - Not very impressed. Seems like a brewery's first attempt at an American Wild rather than a product from a well-respected sour producer like Goose Island. The running joke was that it still needs Two More Weeks; to be fair I think it improved a bit between early September and late November as the dirtier elements weren't as present.

Had this on draft. Pretty light yellow body with a finger width head of tiny bubbles. Really aggressively tart on the nose with lemons and earthy notes. Front taste is pretty darn sour, but the finish is all butter. Nothing but butter after a few drinks. I couldn't finish this. 4 different tasters all said either butter or buttered popcorn jelly belly flavor. If that isn't an off taste, then I'm not sure why that would be the goal.

Had this on draft a second time yesterday at a different location. Bready on the front end and all buttered popcorn on the finish. Confirmed by a room full of folks that appreciate sour beer and wild ales as well. Shouldn't have left the brewery in this state in my opinion.

Appearance is cloudy orange with a thin white head and spotty lacing. Nose stats with a slightly musty acidity, notes of vinegar, tart berries, and bready grain notes. The taste features moderate to high tartness up front which quickly subsides and is overtaken by a graham cracker flavor. The cracker notes come as a surprise, and are paired with notes of wheat and lemon zest. Mouthfeel is light and well carbonated. Overall, some decent flavors, just which the wild in the ale was a little more bold and not taken over by cracker.
