When we set out to make Two More Weeks our dream was to bring you our version of a straight Belgian-style lambic beer. We have been aging this beer since May of 2012 in some of the best wine barrels in our warehouse. The name's an homage to the brewers keeping the marketing and sales folks at bay while the biology and chemistry of the beer did it's thing.

Three drafts at Revel Room, served in a tall stemmed flute.
This was described as a wild ale mimicking a Belgian-style Lambic by the brewers.

Hazy golden color, thin layer of frothy white foam on the surface, flecks of spotty foam in the glass. When backlit there were champagne streamers of carbonation visible.

Aroma was minimally funky, light urea and acidic sharpness, there was also a slight buttery diacetyl note but it wasn't distracting.

Tart crabapple and crisp lacto sourness, moderate acidity, some grainy wheat and a generally light crisp feel. Brett Brux was mentioned by the brewer, it seemed subdued, and possibly a later addition. More dryness and oak would have been welcome, there was a slight sharpness and tang of acetic acid as it warmed. Overall it was pretty drinkable, though 3 drafts was my limit. Hopefully there's still a barrel of this aging for blending down the road...
