Consumed at the brewery on June 30th, 2012. Reviewed from notes.

Opaque, deep brown with mahogany highlights. Smallish tan head.

Coffee and chocolate aroma.

Moderate coffee up front that turns ashy and burned by the end of the sip. Low bitterness. No real malt base or hop character.

Medium bodied with hints of carbonation tingle.

Not a great stout; not much going on. At least it's tolerably better than most of their other offerings.

Big pssst, when we popped the cap … a lively one here. From the first sniff there was something amiss, overly robust for its size and the yeast character was way too prevalent. Less yeast in the finished product and tone back the roasted character and this would have been a good stout, unfortunately this one is hardly drinkable to say the least.

Bomber. Pours watery black with a bubbly brown head. Aroma is nice, full of roasted malts, cocoa, toffee, and some hops. The taste is completely unbalanced. Tons of burnt coffee with a flavor that I can only describe as a custard/wood/charcoal mixture. Must be the organic part of the beer. Astringent and watery, both not good for a stout. Got better as it warmed, but never got good.

Pours almost black with a half finger of loose tan bubbles after an aggressive pour. Head melts quickly to a film of sticky lacing.
Aromas are typical dark chocolate, roasted malts, and dark coffee.
Flavor is dark chocolate and sweet dark espresso with a finish that I can only describe as ether. Everything is fine until the finish and fortunately the ether taste doesn't linger long.
Aftertaste becomes chocolate and dark coffee.
Light hops dry the mouth afterwards and prepare you for another sip.
Ether seems to disappear as beer 'breathes'...not warms...just 'breathes' like wine.
Still a slight vinegar taste on the end.
Strange.

A: The head had swiss cheese like holes and craters. The caps color is yellow tinged brown sugar with plenty of bubbles remaining after it melted away. The pour consisted of ruby colors with mahogany browns and dark walnut, close to pitch black. The lacing was few and far between with just a sprinkling about the glass

S: exhumes dark roasted malts with fudge like accents and a waft of bitter coffee. Has a slight tangy pop in it as well. Otherwise, full of roasted goodness

T: whoops...this is not good. What looked and smelled promising tastes a bit awry. The sour mash flavors steal the show and cover up what good, if any, is in this brew. Strangely enough, the flavors do not linger that much. The lemon 'n' cherry sourness blasts the tongue up front and faintly hangs at the back with the rest of the flavors. I can gather some bitter nutty coffee notes with dry cocoa powder and flakes of roasted barley

M: the mouthfeel leaves room to be desired, not bad though. Medium plus body and it does not have the dimensions that I like in a stout (this might have to do more with the flavors contributing to a low score). In any event, it is drinkable and slides down good

D: glad I tried it. I will reach for something else next time. If you like stouts tart and sour this is your bag!

Bomber. Pours black with a diminishing thumb thick head that is a dark mocha and nice looking, but bubbly. The aroma is roast/brunt malt, chocolate, coffee and some mild dusty notes.

Fore is light and tart with some watery acidic coffee and a bit of gamy umami in the finish. It really doesn’t taste very good and some strong cola elelments don’t help it earn any flavor points. The brown ale this company does is much better.

Appearance- This stuff is BLACK!. No light shines through at all. As a toffee colored head with little staying power and practically no lcae.

Aroma- Smells a lot like coffee grounds from a quality, roasted coffe. Some roasted malt. No hops or malt sweetness at all.

Taste- Dark and roasty with hints of charocol. Good level of bitterness. Little malt sweetness or flavoring hops. Has a really nice after-taste. Got something going on on the back of the tounge

Mouthfeel- Body is just a tad thin for a stout. The carbonation is okay. Lingers in the mouth and palate, which contributes to that fine after-taste.

Drinkability- If you're a stout drinker, give this stuff a try. It's not fantastic, but a worthy effort.

22 oz bottle into a pint glass. Dark brown in color, opaque everywhere but the edges. A light tan head forms but disappears somewhat quickly.

Smell: Roasted barley with coffee overtones. Light sweetness from the malt. Simple but wholesome smelling stuff.

Taste & mouthfeel: Light malty sweetness up front, perhaps a touch of dark chocolate. The texture's good, plenty smooth, though a bit more viscosity wouldn't hurt. This one dries up quite a bit in the finish, mixing dark roast coffee flavors with moderate bittering hops. Good stuff here, very solid and drinkable, and I'll give it bonus points for being organic.

22oz bomber poured into shaker pint glasses. No date on bottle.

Appearance: Black on the table with some hints of very dark cola brown at the edges when held up to the light. 1/4" tan head poured initially with a vigorous pour, but this died down to a thin ring across the top with no persistent lacing. Some sediment noted in the bottom of the bottle which did not come along.

Smell: Some hints of chocolate and burnt sweet BBQ sauce. No, I'm not kidding on that last one - definitely the smell of a brown sugar based sauce that has been burnt on the grill. A bit odd.

Taste: When first poured and still cold, some chocolate and coffee notes up front, but then this bitter and sharp finish. Sour and tangy finish even - again, like that BBQ sauce. I swear it's like they were grilling when they made this stout. Maybe it's the hops in the end giving it this flavor?

Mouthfeel: A little bit oily and sticky, some carbonation on the tongue. Not great.

Overall: Not a great stout, and not sure about the organic tag here or if it brings anything of value. I don't mind a bitter stout, but this one is too tangy and unbalanced. Even when fully warmed up it's still not much better. More of the classic stout flavors when the beer is quite cold, but the odd taste at the end is still a taste-killer for me. Oh well. Not all beers can be good or great.

picked up at the Bottle Barn Santa Rosa, CA back in May...
Appears a dark brown, near black with a tan head that fades into a small cap. Scattered lacing is left around the glass.
Smell is of cocoa, peanut skins, and some tartness mixed with wet tin.
Taste is somewhat bland with highlights of nuts, cocoa, hazelnut, dirty herbs, and bitter chocolate.
Mouthfeel is full bodied, tart, bitter, roasty, with that metal flavor coming through again.

Well this is another beer with about perfect looks. Black beer impervious to light with a tall brown head that doesn't threaten to overflow the glass.

The smell is dark chocolate and coffee, this you can smell quite fragrantly from the moment you open the bottle. Sweet and a little smoky this smells like a fresh made mocha from a barista in an espresso shop. Lots of chocolate and lots of coffee without any acrid burned odor.

The taste begins a little sweet and bitter with the patent malt hitting reasonably hard at the beginning. Evens out a bit and coffee is clearly the dominant flavor in this beer. The promise of the smell doesn't make it to the taste; this is very much a coffee beer. I would have liked some more chocolate taste here but some do like a straight coffee tasting stout without the chocolate or anything else.

The mouthfeel is good.

This is a beer that looks and smells great but simply falls down in the taste department for me. It is a good coffee flavored stout. It is NOT a stout with chocolate flavor or any other subtleties. Loved the looks and smell wasn't crazy about the taste.

Paid $3.99 for a bomber from BevMo in Willow Glen, CA. Poured into a pint glass with 2 pours.

Pours thick as molasses. Head is the darkest shade of brown I've ever seen on a beer. Head is about an inch and a half which takes about a minute and a half to dissipate. Black in color. Some small streaks of lacing.

Sweet caramel roasted malts in the nose with hints of alcohol and chocolate. A very dry smelling brew.

I'm wondering where the taste is in comparison to the strong aroma of this beer. After drinking half of the bomber, the more moderate flavor is what started to grow on me (I usually am not a huge fan of stouts). The coffee with chocolate come out more in the taste thank the smell along with the heavy roasted malts which were more prevalent in the nose. Quality organic ingredients.

Rather watery and light for a stout. Little carbonation.

One of the easiest dark beers to drink for me.

I've had this on tap at the brewery and also from 22 once bottles. I noticed the flavor profile changes a little bit from batch to batch, so either they're tinkering with the recipe or there's something in their brewing process that isn't under control.

Interesting they call this Devout Stout since parts of this brew are certainly heavenly, and other parts seem to be from....well, let's just say another place.

The good stuff: Nice, slightly sweet milk chocolate roasted malt goodness in the brew, in both the nose and the taste. In previous tastings, I detected a more heavily roasted malt flavor, that really is best described as "burnt". It seems like they've improved their roasting process somewhat.

The bad stuff: There's a sour, hay-like like harshness to this brew, which is more noticeable as it warms.

Looks good in my tulip, very dark brown liquid, with a foamy light brown head floating on top. Some sheeting action on the glass. A little thin in the mouth feel department, but level of carbonation OK.

I'd have this again, but expect to be reaching for plenty of other stouts before this one.

22oz bottle.

pours nearly opaque black with a small dense dark brown head. the head drops fast and leaves a bit of spotty lace.

aroma is nice. dark chocolate. caramel. roasty. bit of smoke. really nutty. hazelnut and almond initially, then peanut taking over. almost like a reese peanut butter cup. light alcohol. biscuit and bread malts.

taste is nice. dark chocolate. bit of coffee. almond and hazelnut. toasted bread. a bit of dark fruit - date and fig.

mouthfeel is good. medium-large body. medium carbonation level.

drinkability is nice. balanced and interesting. the peanut butter didn't quite do it for me personally, but it was still a good brew.

Pours a one finger light tan head that fades quickly to a thin ring leaving traces of lace. Light-medium carbonation and heavy bodied. Black color no highlights, ton of yeast left in bottle. Nose roasted coffee/chocolate. Flavor is same - roasted coffee/chocolate. $4.99 for a 22oz bottle from Liquorama Upland, CA.

Pours a dark flat black color, with a small thin head.

Aromas are nice, dark roasted malts, dark bakers chocolate, and a very coffee like nose.

Taste is bittersweet. There are chocolate flavors, coffee, and a bit of a hoppy and bitter finish as well. It is a nicely balanced stout.

Mouthfeel is good. This beer has a long lasting and full in the mouth flavor.

Drinkability is great. This is a session worthy stout. Comparable to something like Obsidian Stout... but at probably a step or two below... Still well worth a try.

22 ounce bottle, 5.4% ABV. I'm embarrased to admit that I don't remember where I bought this, or for how much. It's been tucked in the back of my beer fridge for a couple of months.

Pours deep brown/black, with minimal head, just as a stout should.

Aroma is roasty grain and chocolate: very nice.

Tastes of coffee, roast, chocolate, and toasty burnt grain (in a very good way.) As it warms, slightly sour, dry fruit (sour cherries?) taste comes out, but not necessarily a bad thing. Remains a chocolate and coffee delight.

Maybe this is where I need to focus my organic tasting: darker beers. My numerous forays into organic IPA have been, almost uniformly, a bust. But this is some damn tasty dry/sweet-ish stout. I like it a lot, and would absolutely buy it again for a basic stout. My ratings are for basic stout: it's not a high gravity, blow your lid off RIS, but it's absolutely excellent for what it is.

a: deep black crude oil with tan head that has decent staying power that never quite fades away

s: strong spicy coffee; light grassy hop overtones; light dark chocolate; the coffee is incredibly dark roasted and strong

t: dark roasted coffee; molasses; bitter and grassy hops; dark chocolate; spices

m: medium bode w/ a little too much carb and not creamy enough

d: the flavors here are amazingly strong with good coffee; the mouthfeel is a definite weakness

Presentation: 22 ounce Bomber. Labeled as “Organic Devout Stout” above a picture of an ‘irreverent nun’ receiving a pint of stout from the heavens. The label was specially designed by local artist, Janet Allinger. Listed at 5.4% ABV. Has a Date of 04.27.06 printed over the bar code.

No description but the Website lists:
“From the first appearance of the Devout Stout there is no question about the style of this beer. It is a stout in all its depth, darkness and flavor. Imagine an aroma of the darkest Italian roasted coffee, bittersweet chocolate and a hint of anise. Despite what people think, this stout is not made with coffee just organic barley, organic hops and water. Devout Stout has a thick, creamy head that settles lightly on an almost voluptuous body. The mouthfeel is rich and warming. The flavors of the Devout Stout, ebb and flow through sweet and bitter to create an intoxicating elixir that will leave you utterly devoted.”

Appearance: Dark as night jet black body with a large cocoa brown head which rises quickly. Stiff head leaves some bubble-paint lacing which has a crusty appearance. Conditioning is above average and finely dissolved, though it takes a while to appear straight from the fridge. As the head rests, it leaves a ¼” dark tan cap, uniform in nature and dependable throughout the drink.

Nose: Lots of powdered cocoa, dark cooking chocolate, bitter roasted malts and a slight hint of espresso coffee, but not much. Depressed a first but much stronger as it warms.

Taste: Espresso coffee, which appeared in the back end of the nose, is front and square in the taste. The rich espresso balances the strong dark chocolate bitterness in the middle. Finish has roasted malts and the espresso coffee returns to wrap things up.

Mouthfeel: Has an expensive feel, but the dark chocolate bitterness adds a lovely angulated sharpness to the tastes. Texture is a composite of the smooth carbonation with a lovely roasted bitter bite in the finish.

Drinkability: Polished off the Bomber quite easily, but this is not one that I could drink all night, its quite rich with a good boost of malted bitterness and dark chocolate coffee. Tasty stuff.

Overall: Another enjoyable brew from Santa Cruz Mountain Brewing.

Bomber provided by biegaman from his Cali trip.

Pours an opaque black, some red in the edges, thin tan head forms, settles to a thin layer, leaves behind a bit of lace. Smell is chocolate, toffee, roast, oats, very nutty, some fruitiness is lurking as well. Taste is chocolate and roast, coffee, nuts especially peanuts, cocoa, bready malt, biscuity, lacto finish. Mouthfeel is light to medium bodied with low carbonation, pretty smooth. Neat stout, I like the nutty character, thanks Jan!

Poured a deep, opaque brown-black with a beautiful chocolate colored head. A real beauty in the glass.

Aroma was of roasted malts, coffee and hints of chocolate, but as others have noted, there was a citrusy-hoppy thing going on in there as well.

Smoky and smooth upon first sip, but somewhere at the back of the palate it gave way to a weird bitterness. Is this a stout? Is it an APA? What gives?

Not completely unpleasant, but a bit confusing with regard to style.

A - Pours jet black with little to no head formation despite a vigorous pour. What little head bubbles formed quickly disappear into a small loose ring around the edge of the glass. A gentle shake yields no additional bubbles below the headline...hmmmph

S - Smells like homebrew stout. Nothing that really holds or dominates. Some caramel, leather, and licorice notes.

T - Tastes like charcoal.

M - Lacking in body for what I prefer in a stout. Thin body and lack of bubbly make this rather dull.

D - Could drink it if if tasted good, but it doesn't. Must be the organic thing. Neat concept, stupid implementation. Seems to handicap beers more often than not. Not a fan.

On tap at the brewery. Black with a wet frothy tan head. Aroma consists of semisweet chocolate, ashy roast, and earth. Flavor has a decent chocolate/coffee base but there's a sourish charcoal note that may be due to a crappy boil or some organic off flavor. Mouthfeel is on the thin side. Drinkability is okay.

A: Dark black/brown coffee color with a little light penetration at the edges. It has a moderate creamy beige head, but it recedes too quickly to be impressive. The remaining ring leaves light lacing down the glass.

S: Roasted caramel malt with some coffee, nuts, and chocolate notes. A little alcohol heat.

T: The chocolate, coffee, and caramel malts hit hard at the front, blending into a sweeter mid-taste, where it gets a bit hot. The finish is a mildly roasted blend.

M: Medium bodied, medium carbonation. Kind of thin for a stout.

D: Not exceptional, but a decent showing. I'd love to see them make it thicker.

22oz bottle purchased from Whole Foods in Santa Cruz. I like the fact that this beer is certified organic with both organic malt and hops, and I also like how attractive the beer is. Unfortunately, it goes downhill from there. Pours an extremely dark brown with a very tan head that is somewhat thin, but very tightly beaded and there is some lacing as well. Smells a little like a fresh cow patty- slightly sour, grassy, strangely earthy, sulphurous, and sharp. Tastes slightly sour up front and then earthy and a little gamey followed by some smooth malt and light cocoa. The mouthfeel manages to be in turns slick and sticky. Thick and mouthcoating. Can't say I really enjoyed this.
