A Black Saison (with black peppercorns) aged in a lactic bourbon barrel for 1 month where more black peppercorns were added.

Supposedly the only growler of Batch 3000 in existence. Many thanks to a good friend with even better connections in getting this to me.
Notes from iPhone (9/27/11). Growler poured into a pair of Unibroue tulips. Pitch-black with a tiny touch of light brown head that did not dissipate until the glass was nearly empty. Very sticky lacing.
Nose is full of black pepper. Slight vanilla aroma and a hint of cocoa. Roasted malts and as it warms, a very sour funk comes out.
Flavor is smoked wood, bourbon, and of course, black pepper. Vanilla and dark roasted malts with a slight hint of sweet caramel and chocolate. Very warm dark malty and spicy finish, which as it warms up becomes challenged by a huge taste of wild yeast.
This is definitely a chewy, full-bodied beer. Medium carbonation and very thick.
Saison? Really? Honestly, over the huge malts, the yeast, and the pepper....among the rest of this flavor profile, not much of the saison is even left to be noticed.
This is one of the most complex beers I have ever tasted. Every sip and sniff would give me more and more flavors. This thing sounded kind of silly, but definitely a solid thumbs-up to Fitger's for their 3000th batch.

bourbon barreled black saison into a 10 oz glass
A- pours an off black color with a small wispy but staying khaki head a fresh collar stays on til finish
S- a touch of sour funk and black peppercorns wet hay some lemon with vinegar with belgian yeast,spices and.a hint of creamy smooth bourbon
T- is well great.... it follows the nose with subtle sourness mixed with lemongrass funk with peppercorns and bourbon a creamy overall texture on the finish
M- was low/medium carbonation with a very smooth tartness full with belgian yeast and a touch of funk
O-smooth tasty,a pleasure to drink
