lots to like about this one, although it might be a stretch to call it lambic, no matter how its made. the fermentation profile isnt anything like traditional lambic, but i dont really mind, its a cool beer, somewhat less overtly acidic than a lot of others i have had from these guys have been, and thus quite a bit more drinkable. the color is gorgeous, like blueberry jelly, deep rich color, high refinement, and a big rising airy champagne head on it, just pink. aroma is tangy blueberries, very natural and very concentrated, although maybe somewhat lighter in taste than the color suggests, its neither sweet nor jammy, just tastes like blueberries with a little red wine in there too, things like plum and blackberry as nuances. lots of wood and some clean acidity, even the funky wild elements in here are quite tidy, tastes mature too, with very little sugar left over at the end, and a nice balance between the fruit, the oak, and the very distinctive yeast elements. its sour but i could drink the whole bottle without bubbly guts, and what really makes it for me is this insanely high carbonation, almost explosive, like hard to keep my mouth closed it creates so much pressure, which i think is cool in beer like this, keeps it so light. well made and distinctive, not as complex maybe as more authentic lambic, but its a really cool wild beer, one of the best i have had from these guys!
