Canadian Breakfast Stout (CBS) is the epitome of why we launched the Backstage Series: to bring some of our most sought-after beers, which have been available primarily at the taproom or at a few select events, to a much larger audience.

Canadian Breakfast Stout is an Imperial Stout brewed with a blend of coffees and imported chocolates, then aged in spent bourbon barrels that have most recently been aging pure Michigan maple syrup.

Big boy bottle enjoyed over a few hours of crapulence while the year winds down into oblivion.

Into my Darkness snifter: very dark, big mocha puff, steady and sticky lacing.

Nose is marshmallow, caramel, bourbon, vanilla, spot of hots, and maple.

Taste is smooth and rich maple, medium roasted coffee, meld of chocolate, marshmallow, and a long fade of massive sweetness and alcohol. Bitterness lingers long after the finish.

Mouthfeel is pillow soft with spot on carbonation and persistent heat.

Overall, this is just too sweet and becomes cloying deeper into the bottle. My first experience with this beer was bitter disappointment: from a plastic cup out of questionable tap lines. My second was after running a marathon and turd soup may have hit the spot. I enjoyed it much more then. Tonight, this is a very solid stout but I'm not sure it's near as good as KBS if you're even making comparisons from the same brewery. Not quite the world class stout that many pimp it as, but worth the opportunity to try.

Poured from a 750ml bottle into a Founders CBS snifter

Dark as night pour with a fluffy caramel head, 1 finger that dissipates rather quickly.

Sweet milk chocolate smell blended perfectly with espresso notes. The maple and bourbon ties it all together perfectly.

So incredibly smooth tasting. Roasted caramel and coffee notes. Slight sweetness from the maple, but it's not overpowering. It blends so well with the bourbon. The alcohol is so well-hidden with just a slight warming sensation on the back end. Everything a world-class stout should taste like. Wow.

Luxurious mouthfeel. Thick, luscious velvet-like texture. I could almost eat this with a spoon.

Epic beer! This is truly a masterpiece - a real luxury. The perfect stout in my estimation. This is the gold standard by which all imperial stouts should be judged.

Poured from a 750ml bottle into a Founders Balloon Tulip. 2011 Vintage.

Pours midnight black with an inviting fluffy tan head. Looks perfect.

Nose is incredible. Decidedly, but not overwhelmingly, sweet. The chocolate and maple/bourbon come together like a lovely Ménage à trois. The coffee plays a supporting role, lending just enough roasted notes to smooth it all out.

Taste is everything I want in a stout. All the flavors work together in balance - sweetness with a touch of alcohol heat up front, and a light but noticeable bitter bite on the finish.

Mouth is full, but not viscous. It actually comes across as a bit fluffy to me, almost mousse-like.

Founders has a true gem with CBS. I really hope that their current expansion can help them get more of this beer into distribution at a reasonable price. Fantastic brew, as close to a perfect stout as I've had.

Nice small light mocha head from an aggressive pour. Very dark body, hues of brown in the light. Also brown comes through where the beer touches the sides of the glass. Lots of nice sticky lacing.

Rich, robust, and very sugary sweet coffee aroma. Coffee grinds, cocoa powder, dark semi-sweet chocolate. A bit of oak and molasses.

Molasses, bitter sweet chocolate, burnt roasted malts, and coffee/espresso taste. Faint bourbon flavor sits on the back of the tounge. Sweet syrupy goodness coats the palate. Smooth and silky mouthfeel, not getting any heat from the alcohol. Carbonation is just right here. The sweetness is strong but never becomes cloying. Sweetness is very light in the finish and a bit of dryness at the end...which I wasn't expecting.

Founders once again proves that they know how to make an absolutely fantastic stout! Add this to the list I've had from them which are great stouts...KBS, FBS, Imperial Stout, and now CBS. I do like KBS more than this one, but CBS certainly delivers. A big stout that is able to mask its alcohol very well...maybe at the expense of some sweetness, but the fact that it is so well balanced is quite impressive.

A: This poured pitch black with a little tan head.
S: It smelled like super rich cocoa powder and oak, with some fresh coffee and chipotle (?), and a little molasses and vanilla and either cinnamon or chili powder.
T: It tasted like rich cocoa powder and fresh coffee and cinnamon and oak, with some vanilla and molasses and chili powder. It had a sweet and clean aftertaste. Phenomenal.
M: It was watery with a little carbonation. Surprisingly thin.
D: This beer lived up to the hype. It didn't have any noticeable maple flavor, which was surprising, but the scent and taste were still super complex and exceptionally delicious. Reminiscent of Huna, actually. Very balanced with little noticeable alcohol, so super easy to drink but worth sipping. The body was weak, but this is otherwise a top beer. Not sure how it would age, fresh was a delight. Highly recommended.

Wednesday 28th of December 2011 I had a brilliant tasting session at my uncle Peter place . This was the beer Thijs brought to compare it with the KBS I would bring. So thanks for the opportunity Thijs. And yes every one, I have a beautiful family in which good beer is highly appreciated.

A - This is a pitch brown oil. With a brown/beige head that stays strongly alive, there is hardly a retraction.

S - Chocolate bourbon, mixed with oak wood my absolute favorite.

T - A sweet chocolate, vanilla, caramel liquid, mixed with bourbon and oak wood. Besides the taste there was a sweet- and bitterness to be discovered. What a perfect blend, so smooth.

M - A soft carbonation that is a joy for my mouth, it leaves a nice chocolate bourbon coating. The balance in this beer is absolutely amazing. It even feels subtle.

O - A superb RIS. I will marry anyone who will give me a crate!

A - Pours a thick dark black with a brown, bubbly head and thick lacing.

S - Maple, bourbon, roasted malts, and coffee. Very strong and very pleasant.

T - Very smooth, a lot like FBS (roasted malts, chocolate, coffee flavor, complexity) but with the enhancements that maple and bourbon bring. Utterly delightful.

M - Full bodied. Extremely smooth. A little syrupy too. For a beer this strong in abv, there is no heat whatsoever.

O - CBS lives up to the hype. It may very well be the best beer I've ever had. I didn't think FBS could be improved upon, but the maple and bourbon do it. If you can find this, get it. It would get a 6/5 in my book.
