Time to review another Founders - Founders: My mouth salivates when I hear the name like some sort of human Pavlovian test subject. And this a big one, their IPA, for an American craft brewer the IPA is the style that sets them apart from the competition, forget APAs, DIPAs, ISs and the rest; the IPA is the defining style of the US craft brew scene. Well Centennial IPA, let's see if you can live up to the hype that is currently salivating my tongue.

Poured from a 355ml bottle into a nonic pint.

A: A murky deep amber body and off-white half centimetre head awaits the first sip obligingly.

S: Earthy dirty hops (you know the ones that loiter in alleyways trying to be cool) greet my nose on first whiff, then slap it with a wet hop pine/grapefruit note. There is a caramel malt base beneath it all but the hops are doing their best to outshine it (as in any great IPA).

T: Superb balance on the hops! Less assertive pine/grapefruit hops allow the caramel malt base to do its "thing". The finish is a balanced fresh herbal hop bitterness, and the palate from front to back is awaiting the next sip like an impatient Labrador waits for its dinner.

M: Mid to heavy "founders body" (as I now call it) with a creamy but borderline flat carbonation.

D: Super drinkable for a heavy IPA - I could drink this all day, my tongue might get sick of the hops but it goes down so easy and is so damn tasty I would simply tell my tongue to "shove it!" if it dared complain. Once again Founders delivers another stellar brew. The only disappointing thing about this beer is that Grand Rapids, Michigan is in the US and not Australia dammit. Is it as good as the Sierra Nevada Torpedo Extra IPA though? This has to be the toughest call I've ever made but I'm giving the trophy to Founders, you Pavlovian mouth salivating bastards.

Food match: Downed this brew with a spicy hot soft taco and it was delightful.
