Bolt Cutter is a cellarable barley wine with an ABV of 15%. Dry-hopped with a mountain of Cascade hops, it’s balanced by a malty sweetness and spicy complexity, resulting from barrel aging some of it in bourbon barrels, some in maple syrup-bourbon barrels and some not at all (standard fermentation only). We’ve allowed the beer to mature in bottles and kegs since July so that it would be perfect for its release next month. Bolt Cutter pours a deep copper color and is best sampled at different temperatures to allow the flavors to unfold.

750mL bottle. No bottling date but this was a late 2012 release. Served in a Founders snifter.

Pours a surprisingly clear, vibrant amber with about a one and a half finger cap of pale, sandy head. A thin film rests on the surface with a small halo that leaves just a few dots of lace.

Aromas are sweet, malty and vaguely earthy with a good deal of aged hops. Vanilla, oak, maple, caramel, faint pine, toffee, old citrus, autumn leaves and sugar. Despite the fact that hop aromas seem past their prime I keep coming back for more of the inviting sweetness.

The flavors quickly overcome any negative vibes left from the smell of fading hops. Thick, sweet caramel is the predominant taste. Earthen oak, cereal, toffee, grainy malt, mild pine, sweet maple glaze, vanilla, orange peels, brown sugar, leather, faint barrel char and just a little boozey heat. I can't detect any bourbon but the combination of malts, maple and barrel is outstanding. On top of the masterful blend of flavors the 15% abv goes down like a brew with less about half of that. Delicious.

Syrupy, heavy, full feel with moderately low carbonation. Completely coats the tongue, creating a long, sweet aftertaste that is full of maple, caramel and cereal grains.

I sat on this bottle of Bolt Cutter for over two years to let the high alcohol mellow out and I must say that my plan worked beautifully. Both hops and heat have long since faded, leaving behind a fantastically sweet and complex barleywine. Excellent work by Founders creating an enduring and evolving brew that, based on this experience, I suspect could go several more years with favorable results.

L - Pours a red mahogany body with a one finger light tan head.

S - Malty aroma with caramel, toffee and candied sugars.

T - Rich malts along with brown sugar and maple syrup. I can definitely pick up some of the bourbon barreling on the back of the taste. Just straight forward and a delight to drink.

F - Full bodied, low carbonation. Smooth body with low abv heat.

O - A very unique barleywine to drink that has held its own overtime. I think this one still has some legs on it.

A clear amber liquid, a couple bubbles, thin film leaves a few polka dots, wide legs down the side

S still lots of pine and citrus, this would've been a palate wrecker fresh, faint bourbon, pancake syrup, orange peel, hard toffee, lots of booze

T more booze, heaps of brown sugar and caramel, faint wood, sweet bourbon, more citrus then the nose, a little sweet and boozy but enjoyable

M thank and syrupy, my lips are stuck together, heat hits the chest and throat, rind and brown sugar on the finish

O I liked it but I didn't love it, still hoppy, very sweet and boozy, I'm glad I didn't try to take this one down solo

Fruet was a hard act to follow and perhaps didn't help this ones cause, its good beer with a little barrel, lots of sugar and booze, one of those beers I want to try fresh and with 5+ years on it

Great to get this beer,one of my favorite breweries from the home state.Poured into an imperial nonic a deep burnt orange with a thinner but tightley formed off white head atop.A mix of alcohol dipped dark fruits and cake in the nose,not much hop presence,almost like a CHRISTmas fruit cake to me.Sweet with alot of fruitiness on the palate,raisin/prue to go along with alcohol dipped cherries with a decent earthy dryness and leafy hops in the finish.It's big and chewey and the drying hops seem to come more into play as I drink more,this is all of the 15% it says it is.Iam going to bed early tonight.

Pours an amber-copper color, sort of cloudy and hazy with an off-white head that settles quickly after a hard pour, no real lacing to mention. Aroma is heavy and thick; sweet toffee, burnt sugar, rosey fruits, plums, figs, juicy dates soaked in booze, light vanilla, oak, a touch of wood. Taste hits hard up front with sweet, burnt brown sugar, booze drenched raisins, figs, plums, some backwards woodiness. Creme brulee comes to mind with the burnt sugar and slight vanilla hints. Butterscotch in the background maybe, too. Hop profile is a bit ashy and dry with a light perfume aroma to them, adding a reasonable amount of bitterness to make sure the sweetness isn't cloying (which it's not). The booze profile is mostly reminiscent of bourbon-whiskey; it's warming and relevant and noticeable, slightly warm and a little more so as the beer approaches room temp, but it's never too hot to drink. I would imagine this would mellow out a bit and become excellent with some more time on it. Thick, sticky, heavy body, low carbonation.

Surprised by how good this was, reviews were pretty mixed so I didn't know what to expect. While it was pretty tasty, I think it might mellow out a bit more with some age. Unfortunately, the price tag on this one is a little much for what you're getting.

On tap at When Pigs Fly. The first time I had it, I was overwhelmed. I went back on four consecutive days just to make sure I liked it as much as the first time. I did; a wonderful beer!

To begin with, it's a very pretty beer. In a snifter it was a beautiful chery amber color, very vibrant. The rather small tan head left a good deal of lace.

The aroma was some sweet fruit and citrus. Pretty boozy.

Lots of figs in the taste, other dark fruits noted. A bit of orange. Nicely hopped.

I expected it to be boozy, with an ABV of 15%, but I thought the alcohol was well-hidden, and didn't think the alcohol was too intrusive.

Loved this beer. Wonder how it would age.

Bottle courtesy of @heatwave33. Amber brown in color with hints of deep red. Cream colored head, faded into thin wisps and a craggy medium collar. Aroma is of molasses, earthy burnt wood, tobacco, and some earthy spices. Taste is spiced and tobacco up front, faded earthy hops, woody and a touch boozey at the very end. Nice toffee/molasses flavor running throughout too. Nice full body and low to medium carbonation.

We have to stop comparing the backstage series beers to each other.

Smells like cotton candy, maple syrup and an enjoyable booziness.

Very limited barrel flavor, and limited maple.

Great mouthfeel.

Hint of Belgian trip yeast flavors. Doesn't mesh well.

Not worth the price. Too much going on in the wrong departments, too little going on in the right departments. Still a good beer. not great.

22oz bottle.

A: Pours a slightly hazy dark orange/golden color with a big, creamy looking tan head.
S: Hoppy citrus aroma, sweet malts, caramel, brown sugar, woody scent. There's a sweet, almost bubblegum-like aroma at the end. Strange, but not bad.
T: Smooth malty flavor, followed by maple and a ton of citrusy/earthy hops bitterness. Fruity flavors (pineapple and citrus) mixed with caramel, maple, oak and booze. A hint of vanilla as well, but the hoppy bitterness dominates. It's ok, but I'd definitely let it mellow a bit if I had another bottle.
M: Surprisingly drinkable for a barleywine this huge. Full bodied with a sticky mouthfeel. Great carbonation for the style.
O: Glad I got to try this beer but I wouldn't buy it again. If I had another bottle I'd let it hang out for another year or two to let the hops mellow more.

A: Ruby red with some shades of brown haze. Small cap of foam that disappeared quickly leaving just a ring around the edge. Significant alcohol legs.

S: Big aroma! Malty sweetness, some boozy alcohol, and a solid dose of pine/citrus hops.

T: Big flavor too! Super sweet, lots of oak, pretty boozy and a high dose of hop bitterness for a BA barleywine.

M: Thick and syrupy. Too sweet and boozy to be drinkable. Some alcohol burn in the finish.

O: Not enjoying this. The hops characteristics remind me of FFF Behemoth but overall it’s not nearly as good.

Bolt Cutter opens to an intensely sweet, hoppy aroma that is instantly reminiscent of syrupy pink grapefruit juice with a dash of pine resin, lemon, and dandelion stem, and below that, a thick sugary base of Candi sugar, brown sugar, and a heaping spoonful of fruit esters, including orange, berry, and cherry, as well as light touches of fig, raisin, and plum. Smatterings of biscuit, whole wheat dough, and light toast crust add an earthy base. As a whole, the nose is very nice, geared toward the sugars as is typical in Barleywines, but nicely balanced and heavily aromatic, the interplay between brown sugar and fruit ester especially nice.

On the tongue, the beer proves darker than the sugary nose let on, the initial flavors being full of dark, rich fruits, including fig, prune, plum, black cherry, and raisin, with touches of berry and blood orange adding slightly lighter notes. These are joined by a heavy alcoholic overtone, the 15% ABV coming in strong, but blending nicely with the massive fruits in a dessert-like fashion. The combination of alcohol and fruits is reminiscent of wild ports or cognacs, with a touch of bourbon thrown in for good measure. The hops add a nice thick layer of syrupy pink grapefruit, as well as lighter lemon and faint pine notes, which help keep the sugars in check. Brown breads, yeasty rising whole wheat dough, toast crust, and biscuit form an earthy base, and the entire beverage is threaded with strong vanilla bean, and lighter caramel and toffee, with even some molasses and black pepper. The aftertaste is a continuation of the main mouthful, but here the booze becomes overly obvious, and the late stages of the aftertaste take on a vodka-like overtone that somewhat mars the presentation. Mouthfeel is a syrupy, viscous heaviness that is reminiscent of agave nectar in feel, and carbonation is light.

Overall, this is fantastic beer, and while the nose was good, the flavors are excellent, and paired with a perfect mouthfeel. Only the strong alcoholic aftertaste proves jarring; the rest of the beer is sweet, sugary heaven.

750ml bottle at about fridge temp poured into a snifter. only a few months old.

pours out a nice, fairly clear, deep orange/ light copper color with a wonderful off white, tight head with great head retention. lots of sticky lacing and a good bit of legs are left on the glass. i maybe expected just a slightly darker color, but it still looks pretty nice.

initially i get some earthy, somewhat floral hops and lots of caramel malt sweetness. as it warms, the hops and malt are still there, but lots of booze seems to take center stage. not as complex of an aroma as i thought it would be.

tastes like a DIPA, and almost like SN- bigfoot a little bit. earthy, floral hops with enough bitterness to support an IPA. fairly thick deep caramel malt sweetness. lots of warming booze, but no real evidence that this was at all barrel aged. hints of toffee slightly charred sugars. finishes warming with lots of hop bitterness.

big, fairly heavy bodied, good carb for the style.

pretty much what it is, an american BW. but for such i highly anticipated anniversary beer from my favorite brewery, i expected a bit more. i was really hoping for more of the barrel aging to show through, which it hardly did at all. not really worth the price tag. hopefully some age can turn this beer around in the future.

Poured from 750 ml bottle into a Surly Darkness chalice glass.

Appearance: Pours a deep and hazy copper amber orange with a moderate amount of carbonation. About one finger of off white head that recedes into a thin patchy layer. Leaves a good amount of lacing around the glass.

Smell: A big kick of sweet malts, hops, and booze. Sharp citrus hop aroma up front with hints of orange, grapefruit, pineapple, lemon, and mango. Some earthy hops and pine spice. Sweet malts with big hints of burnt caramel, toffee, biscuit, and yeast. Some brown sugar, honey, and maple syrup add to the sweetness. Barrel presence is pretty laid back with only slight hints of bourbon and vanilla. Alcohol scent is pretty noticeable as expected. A very big and good aroma.

Taste: Tastes as big and strong as it smells. Big presence of bitter and spicy hops up front. Notes of citrus grapefruit, orange, pineapple, mango, and lemon. Earthy hops and a sharp spice from pine resin. Fairly grassy. Big malt presence that adds some balancing sweetness. Notes of burnt caramel, toffee, yeast, and biscuit. Also some brown sugar and maple syrup along with a little taste of honey and vanilla. Slight taste of bourbon and wood although its pretty subtle compared to the other flavors. Alcohol heat rounds out the taste. Big and pretty good taste.

Mouthfeel: Heavy full body with a moderate amount of carbonation. Chewy, slightly syrupy, and pretty visceral. Finishes fairly dry. Lots of alcohol warmth is felt as expected.

Overall: A very good take on a American Barleywine. A slow sipper for sure and not for the faint of heart. Big hop presence that is very sharp. It will be interesting to see how this one ages.

Super-surprised to pull this off the shelf! It's redemption for me; I left this on the shelf back before I knew what it was, and have been kicking myself ever since I found out what I passed over.
Poured into fluted snifter; deep, rich brown-ruby with a fluffy off-white head that fades quickly leaving sticky lacing everywhere.
Smells great; nutty toasted caramel malt, lighter notes of candied fruit. Barely any alcohol in the nose, the age has mellowed this well I'm sure (granted it aged on a shelf rather than a proper cellar)
Taste is perfect for a barleywine. As soon as it enters your mouth, it is everywhere. Sweet hearty nutty caramel malt, like thick sweet bread, candied fruit and warming alcohol. This beer is modest in its perfection; it does what it does well, without being over-the-top about it.
Mouthfeel is big, thick and sticky, although the finish isn't cloying
Overall, this is the best barleywine I have had to date. I'm so glad I managed to find one of these sitting on a shelf. It is perfect for the style, while also being a massive beer, while still being modest. Perfection.

Came out much lighter than expected at 15% non barrel aged, it was an amber color, even light amber for that matter with just hints of red throughout it. Thin off white head, 1/2" in size. Pretty impressive appearance.

Aroma was a little bit of honey, substantial carapils type of malt, light melon and hop aromas.

Taste, plenty hoppy, lots of caramel, slight honey sweetness. Of course the booziness is there, this is a big ass beer. The hops seem to have more of a bittering/balancing effect moreso than flavoring hops. Sticky, but not syrupy. Can see why they call it Bolt Cutter, this definitely cuts through plenty of previously consumed beers during the Round of 32 during March Madness. The body always seems lighter than the flavor. That is impressive, even if this is not the greatest barleywine in the world. Some woody flavors in the mouthfeel downbottle. The biggest disappointment has to be that the alcohol is the most noticeable aspect tastewise. Not terrible, but it definitely stands out a little much for me. Wishing I sat on this another year or two. Sometimes drinking fresh isn't always best.

We drank this over at Layne & Courtney's because of the tactics of one David Hurley, beverage nerd at El Dorado Casino, who shut down our previously approved bottle share, because of the hurt feelings of the BMC distributor and special events area at the sports book bar. Pretty lame and disingenuous, we won't be taking our money, vacations or bottles to the El Dorado anymore.

Shared bottle. Very high ABV cannot be hidden. While I'm not hit in the face with the full 15%, this is, nonetheless, a bit too boozy for me. The high ABV comes in a very flavorful brew, which suggests various fruits and fruit brandy. Excellent hop/malt balance.

M: Rather full bodied, with excellent (low) carbonation.

Boltcutter was on tap at the Pub at UChicago this spring, somehow. This place gets way too many good beers for what it is. Awesome, dude. 10 oz. serving in a small tulip (and 10 oz. proved to be more than enough!).

Appearance (4/5): Dark red, ruby highlights when help up to the light, and small one finger bubbly off white head. This is a very good looking barleywine.

Smell (4.25/5): Some nice big, piney hop notes mingle with a caramel sweetness and a bit alcohol heat in nose. You can tell instantly that this one is a big American-style, hopped-up barleywine, since it has a lot of the typical characteristics of the style. Only a bit of barrel character is evident. Less than I was expecting.

Taste (4.25/5): Flavor follows the nose to a T. Very hoppy in the beginning with some piney, grapefruitiness going on. Big and sweet malt takes over in the middle, playing off the hop oils very nicely. Lingering bitterness in the aftertaste. Bourbon barrel character does come through in the taste: subtle flavors of vanilla work their way onto the palate. But this beer is dominated by massive hop and malt presence. Alcohol is well-masked and only a steadily increasing warmth in the chest tells you this is one fierce beer.

Mouthfeel (3.75/5): Sticky, resinous, and full-bodied. The lower carbonation is appropriate to the style. This beer is a true sipper–one to be nursed for a while and allowed to warm. You'll be rewarded in more ways than one if you take this one slow. Some may find this beer cloying. I think it's great, just not the most drinkable beer ever.

Overall (4/5): Another really solid beer by the amazing brew team at Founders. There aren't too many things to complain about, though I would like to see the ABV come down a little and more barrel character in the flavor. Definitely was well worth trying. Very good.

A- This beer pours a slightly dense but clear aged copper brown body with a bubbly light tan head that sticks to the glass and sluggishly slides back into the beer.

S- the nice sweet caramel malt aroma has some candy sugar notes that come through as the beer warms and a slight spicy character with some ether hints in the finish.

T- The smooth sweet caramel malt grows as the beer warms and takes on a brassy wheat malt flavor. The finish of pungent hops and alcohol gently round out each sip.

M- The medium mouthfeel has a thick texture in the finish that is thinned by an alcohol warmth that hangs in the mouth.

O- This is a big monster barleywine with a gentle alcohol heat for 15% ABV and I was surprised at how much hops presence was in there aswell. It was a nice beer to taste but I would have preferred it without as much alcohol. This beer was a night starter and night ender in one bottle.

750ml bottle poured into a snifter. For my good friend Tim Villard, may this bolt cutter open up the gates of heaven for you.

A: Pours a clear copper brown with a dense off white head. Hard to see any visible carbonation, either very small bubbles or none at all. Laces the sides of the glass nicely.

S: For being bottled around a year ago, the malts smell like they are still in the fermentation tank. Neither bready nor fruity, but still a serious malting. Hops are present with a hint in the background. Bourbon and maple syrup arent very distinguishable but do add a sweet oaky aroma.

T: Fantastic barley wine flavor with a compliment of oak. Real nice blend of malt and hops that really shines with its complexity. Very balanced mix of the bourbon and maple barrels that dont overwhelm but instead add depth. Touch of sweetness in the finish, lingering malt aftertaste.

M: The beer hits the tongue with a creamy full body that has low carbonation. Finish leaves some stickiness as expected with the flavors this beer holds. Alcohol has settled down a good deal since I had it last year. Certainly something you want to sip on.

Overall a very well constructed brew that I feel is under-appreciated. Sure it has bourbon barrels and maple barrels and those flavors dont overwhelm your senses. Instead it is about a smooth complex blend that is; easy drinking yet serious, mild yet complex and strong but tame. Glad I set down this bottle, again Rest In Peace my good friend Tim Villard who thoroughly enjoyed strong barleywines.

Split a bottle at Duck Fat.

A: Gorgeous slightly murky golden amber. The dirty cream head looked like a beer that was 66% barrel aged - bit bubbles, spotty lacing, but substantial. Great looking beer

S: Prominent resinous grapefruit citrus and sticky caramel, very skunky and pungent, which is all very nice. However, lacks complexity in this category - no barrel character, no BW fruitiness. Still, though, good aroma

T: Great stuff. Incredibly rich, very sweet caramel and sticky resinous pine and grapefruit. There are slight vanilla and oak notes that I wish were more prominent - cannot detect any maple syrup in flavor, aside from assumed added sweetness. A delicious, messy, sweet caramel bomb.

P: Full. Sticky. Chewy. Syrupy. Just huge, but again, kind of messy

O: A really great beer! I wish they would have barrel aged the whole beer and did __ bourbon and ___ maple syrup bourbon. Have one sitting in the basement, really looking forward to what age will do.

It is kind of a mess, but works. Received a lot of negative feedback on the forums, which I don't think it deserves. A great beer if you are into huge, sweet, sticky onslaughts on the palate.

A: Poured a very nice orange color with a one finger off-white head with great retention, lasting for the majority of the time it took to drink it. Sticky lacing forms down the sides.

S: Wow, surprisingly hoppy, lots of pine and citrus upfront with some caramel, toffee, and oak that come forward. Lots of vanilla comes out in the middle. It was rather resiny with a little bit of alcohol at the end.

T: More hops upfront, very piney mixed with some grapefruit. The hops transition to some caramelized sugar, vanilla, bourbon, oak, and a little bit of maple.

M: Medium to full bodied with moderate carbonation. Slightly boozy, but it doesn't really impede the drinkability.

O: As someone that isn't a huge barleywine fan, I liked this beer quite a bit, probably because of the barrel aging. Surprised at how hop forward it was, but I am sure this will fade with time. Great beer to have for thanksgiving dinner.

3 year old bottle.

Surprisingly still amazingly hoppy reminded you of Double bastard and boozy as well. This beer was intends can not imagine what it was like fresh it still seemed to go down smooth for being 15% ABV.

A - murky orange with a big, off white head that has great retention

S - huge bready aroma with some sugary notes

T - bready, burnt sugar, caramel, sticky, alcohol, mild bitter finish

M - full bodied, warm, well carbonated

This in my opinion is a fantastic beer. The 15% is only slightly noticeable. The malt is big, sticky, and flavorful. The burnt sugar notes were fantastic throughout. This is one of the better beers that I have had recently. I definitely this is a beer that people should be checking out.

750ml bottle into a Cigar City snifter. Shared with schen9303.

Pours a 2 finger light cream colored head with moderate to low retention. Beer is a clear orange-amber. Lacing is spotty and stringy with nice stick and thick, oily legs that really linger. A nice looking beer.

Nose is pine, sap, resin, hop bitterness mixed with notes of brown sugar, molasses and honey. Sweet and hoppy with moderately boozy overtones.

I waited almost a year for this one to "simmer down" and its still hot as hell. Like I'm drinking acetone. Opens hot. Sap hop bitterness with notes of brown sugar, molasses, green raisins and pine. Hot as hell and very sweet throughout. End is bready and yeasty with sweet molasses and booze on the finish and aftertaste. Way too much.

Full bodied with low carbonation. Hot, boozy and slick in the mouth and goes down hot, dry and thick. Finishes messy with a unmercifully lingering aftertaste.

This is as close to an undrinkable beer as Founders has ever made. I don't know where they were aiming with Bolt Cutter but they certainly missed the mark here.

Poured from bottle 3/12/15. Smells like a barleywine - not a particularly good one. Not a lot of booze on the nose for a 15% beer. Getting a lot melon, old hops, and oxidization from the taste. Not very enjoyable - wouldn't pass on a pour but definitely not seeking this thing out at all.
