This beer was served from the cask at Tap and Mallet in Rochester, NY at their Goose Island vs. Founders Split Tap Takeover. It arrived in a snifter glowing the deepest brown, giving no light around the edges. It held a one finger head of coffee colored foam, leaving thick lacing in sheets and rings around the glass. The beer was syrupy, and the light carbonation rose slowly. No haze or sediment was noted. The aroma was thick with chalky coffee and raw cocoa flakes, with a massive raw coffee to the malts. This had huge roast, with smoke and leathers. With time, chalky yeast, booze, and a milder bite of chilies came through. Our first impression was that this beer gave a great Breakfast Stout base, with a nicely robust chili poke, and nice soured woodiness of the cask. The beginning opened with strong woodiness of that cask, biting heat of chilies, chalky chocolates, soured yeast, and the aromatic bite of scallions. The peak came with earthy bite, sweeter vanilla coolness, and clovey, herbal spiciness. The finish came with raw hot pepper oils, bittered roast of raw coffee, and muddy chocolate malts amongst a hot boozy background. The aftertaste breathed of oily heat from the hot chilies, chalky grain of coffee and raw cocoa malts, booze, baker’s yeast, and big roast and smoke. The body was full, and the carbonation was medium, with nice slurp, sip, cream, and froth. There was a big drying pop following a creamy, syrupy coating all around the mouth. The big coffeeness and the booze gave a final bite of astringency. The abv was fine, and the beer drank nicely as a sipper.

Overall, the best thing about this beer was how much of a “variant” it was, as we lost little of that glorious Founders Breakfast Stout base through the spicy, oiliness that was the hot peppers. With every sip this heat became more and more prominent and coating across the tongue, giving an eventual legitimate sting to it. This is quite hard to do, without sacrificing a lot of the other flavors and focusing on that raw spice. This worked well with the big roasty, smoky qualities of the base. If we had any complaint, it would be the feel, which lightened up a bit by the end. This might be the cask aging that gives it that smoother, flatter feel, so it is not much to worry about.
