12 ounce bottle poured into DFH glass
A: Dark brown pour that when held to light, only allows brown hues through on the outer-most edges of the glass. 1 finger cream head rises then recedes, leaving nice frothing across the top of the beer.
S: Smell is excellent. Bourbon presence is strong, more so than the bottles of BA Siberian Night that were released at the same time. Notes of caramel, toffee, and brown sugar mix nicely with the vanilla from the barrel.
T: Wow. For me, this is the best barrel treatment Thirsty Dog has done. Caramel and toffee hit the tongue first, then leave a nice molasses like sweetness. The barrel presence then asserts itself, with an exceptional balance of bourbon and oak. Unlike some barrel treated beers that tend to lean toward either bourbon or wood, this one presents both in a nice and balanced way that really enhances the drinking experience.
M: This is the one area where I think the beer could stand to improve. I could use a bit more thickness to support the complexities in this beer. This should not be taken to suggest this is a thin beer; it isn't. However, as a personal preference, I like more viscosity in barrel aged brews.
O: Exceptional brew and a really good example of what Thirsty Dog can do. If you are a fan of Backwoods Bastard and similar beers, this is one to seek out.

12oz brown bottle with foil wrapped neck poured chilled in a stout glass.
The color is dark cocoa brown with thick rapidly falling head with fine bead with spots of lace that sticks and clarity is translucent. The smell has intense bourbon in the nose with some vanilla elements and light custard-like sweet caramel creamy scent with light toasted grain and yeast with bready quality and mild alcohol and sweet woody accent. The feel has a thick body up front with moderate carbonation and light wooody texture with gentle sweet feel in the middle and gentle alcohol w/ slightly thick body and spice element as it finishes.
The flavor brings a lot of malt with moderately woody flavor and light caramel with buttery toffee-like taste with slight toasted character and mild warming flavor from bourbon in the background. The taste has a good cohesive sweetness with barrel blended well into the base and nicely balanced malt with scotch ale flavor smooth yet still strong as it finishes more on the sweet side. Overall this is a great mix of scotch ale with bourbon in an almost seamless combo -this is like a match made in heaven with malt complexity enhanced nicely by the woody barrel aging.
