This one wound up hiding in my beer cellar and I wish I had tried it fresh, and kept a few more for now. Poured into my cognac snifter with a lovely pinkish golden hue. Decent head and a bit of lace. A touch of haze and carbonation in view. Nose is quite lovely with a great combination of bret sourness and pale malt bread and sweetness. Nice oak wafting in. Firm vinous notes and a delicate floral component. Taste is superb with a refreshing tartness that encourages quaffing. Solid oak underpinnings. Light malt core allows the funk and sourness to take center stage. Hibiscus and rose play lightly even at this age. Finish is dry and crisp, almost like a dry hard cider. Some bread crusts linger with faint hops and a touch of medicinal minerals. Feel is well carbonated and light with just enough girth to keep it from water. Just wonderful and delicious.

Poured from a 375ml bottle dated 5/12 (courtesy of cestlavie, as an extra) into a Prairie Teku glass.

Appearance: A sizable, bubbly, champagne-style head dissolves relatively quickly into a thick crown around the edge of the glass. The beer itself is particularly beautiful, at the base of the beer it starts a rosy pink, then fades to vermilion, and then to a rusty yellow toward the top. What a beautiful range of colors in here.

Smell: Tart, and barely acetic with some funk backing both up. I can get quite a few floral notes too as I stick my nose deep into the glass. As I stick it deeper, intense dried apricots come through as well. Very complex, but requires some work to truly appreciate the variety.

Taste: Sour but barely, with floral perfume mixing well with cracker malts. The perfume is barely bitter, and the hibiscus is the one flower I can pick out above the other two, although I'm not particularly familiar with elderflower. Lightly bitter, and just a bit watery. The funk on the nose is evident as well.

Mouthfeel: Prickly like cider at first, but quite smooth afterward. Just a bit dry.

Overall: Very interesting sour, and I enjoyed it. Definitely a solid beer worth picking up if you see it.
