Aged for two months in bourbon barrels with two strains of Brettanomyces, our Sanus Spiritbus explores uncharted territory, bringing together the vanilla and maple character of the wood with the complex funk of wild yeast. This is a beer that will continue to develop in the bottle for several years, with Brettanomyces coming to dominate the aroma completely. Only 38 cases produced.

C&C 750ml (batch 128) into a Teku at fridge temp, allowed to warm over session.
Look: bright orange (SRM 6) with lots of carb and a huge head and killer lacing.
Smell: bitter orange, alcohol, a tiny bit of caramel, hint of blackberries, rum.
Taste: apple cider, chocolate-covered orange, hint of bourbon, chardonnay.
Feel: medium body, somehow a bit syrupy, finishes clean and light with a lingering bitterness.
Overall: a really enjoyable beer. Surprisingly uncomplex for a bourbon-barelled beer (Paul told me the base but I've forgotten) brewed with two strains of Brett, and further bottle conditioned for about two years. I wouldn't call this sour, and even wild seems a stretch. It's got strong fruity/wine notes, but there's no funk, barnyard, or tartness to be found. Still, a great beer.

This sour is a nice red-orange color, hazy and seemingly unfiltered to a miry kind of translucence. A small white head caps it. Its retention and form are strong, while lacing is mostly spotting and moderately deposited.
There's a pungent sourness in the aroma with a hint of sweet apple and something almost flowery. There's a hint of some malty sweetness along with a creamier, slightly more naturally sugary ghost of it with a slight touch of funk.
This beer offers great depth and more complexity in the flavor with lots of contrasts and mingling; sweet and sour, apple and cherry, tart and sour with a citrus that's not so much lemon as sour orange. The added slight sweetness to really balance the sour and tart just means more balance.
The feel is airy and fluffy on the tongue, giving an impression of lightness in a body that's actually medium strength. It has a strong crispness that helps to carry the tingling flavors a bit better.

A: Pours a light amber with a medium amount of off-white head. A solid film retains along with a ring around the edge of the glass, leaving reasonable lacing.
S: Medium-high dense fruity sweetness over a lightly floral background.
T: Medium sweetness, slightly dry, and some slightly hoppy notes.
M: Medium to full body, medium carbonation.
Overall, pleasant, and a bit different. A good one to try.

T: Didn't know what to expect, but it had a really good flavor. Pretty heavy on caramel. Bourbon is fairly subtle. Sour is present but not overpowering. Overall very nicely balanced.
M: Pretty high on carbonation, but nice mouthfeel. Definitely enjoyable to drink.
O: Would love to have this again. Unfortunately only 38 cases were brewed. I'd love to taste this after aging for a year.
