With a dedicated focus on the Simcoe hop, the team of Mikkeller formulates a beer that showcases its scent, its taste and its bitterness to its utmost glory.
Pouring a rich winter's honey amber, the beer builds an off white lather that hosts a botaical array of grass, leaf, citrus and pine. Earthy and bright at once, its scent carries over to a caramelized sweetness laced with pastry, honey and light toast.
As the ale unfolds on the middle palate, its sweetens drifts but its starthcy substrate persists and supports the hops with a pillowy toast and rounded floral herb. Gripping bitterness reads grassy, pungent and geranium-like with an agressive, peppery bitterness to boot.
Medium bodied but trending lighter, the ale celebrates hop bitterness in a most "west coast" style. But its juicy upstart isn't enough to balance the malts or to give roundness to the hop bitterness. A late floral grassy bite come in a late afterpalate and a semi clean sub palate.

Pours a murky and rustic bronze color with two fingers of off-white head. Head formation is quick, with great retention. Plenty of foam and lacing left behind after each sip. Aroma is balanced hops, with notes of citrus, resin, grapefruit, caramel, and biscuit malts. Citrus, grapefruit, and pine hops mash well with biscuit malts and a hint of sweet caramel to generate a hoppy, but balanced flavor profile. Mouth feel is medium-thick, with a filling, graininess to it. Overall, this beer certainly makes its presence known, all the while showcasing the Simcoe hop well. With it's smoothness and approach-ability, this is a wonderful IPA for just about any drinking situation.

A: Pours a cloudy medium honey orange in color with moderate amounts of active visible carbonation rising along the edges of the glass and moderate golden yellow highlights. The beer has a three finger tall dense foamy light beige head that slowly reduces to a medium sized finger thick cap in the center of the glass with a large patch of very thin film covering the majority of the remainder of the surface of the beer and a medium thick ring at the edges of the glass. Significant amounts of lacing are observed.
S: Slightly stronger than moderate aromas of citrus/grapefruit pith, tropical/passionfruit, herbal, and pine hops with a moderate aroma of caramel + bready malts with a touch of honey sweetness.
T: Upfront there is a moderate flavor of caramel + bready malts with a light to moderate amount of honey sweetness. That is followed by moderate to strong flavors of hops - citrus/grapefruit pith, tropical/passionfruit, herbal, and pine. The hops contribute a moderate amount of assertive bitterness which slowly fades away.
M: Medium bodied with moderate amounts of carbonation. Crisp upfront with a little slickness in the middle and a touch of dryness in the finish.
O: Enjoyable and easy to drink with well hidden alcohol. The simcoe hops are quite aggressive in this beer but it is still a well constructed IPA.

12 ounce can into tulip glass, no can dating. Pours moderately hazy/cloudy golden orange color with a 1-2 finger fairly dense off white head with good retention, that reduces to a nice cap that lingers. Nice dense soapy lacing clings around the glass. Aromas of big grapefruit, tangerine, pineapple, peach, passion fruit, mango, papaya, lemon/orange peel, pine, light honey, toasted bread, herbal, and floral/grassy earthiness. Damn nice aromas with great balance and complexity of dank citrus/tropical/pine hops and moderate bready malt notes; with great strength. Taste of big grapefruit, tangerine, pineapple, peach, passion fruit, mango, papaya, lemon/orange peel, pine, light honey, toasted bread, herbal, and floral/grassy earthiness. Moderate pine/herbal/citrus peel bitterness on the finish; with lingering notes of grapefruit, tangerine, pineapple, peach, passion fruit, mango, papaya, lemon/orange peel, pine, toasted bread, and herbal/floral/grassy earthiness on the finish for a while. Damn nice complexity, robustness, and balance of dank citrus/tropical/pine hops and moderate bready malt flavors; with a great malt/bitterness balance, and zero lingering hop astringency after the finish. Light-moderate dryness from bitterness, increasing through the glass. Medium carbonation and body; with a very smooth, moderately sticky/resinous, and creamy/grainy balanced mouthfeel that is great. Minimal warming alcohol for 7.3%. Overall this is a great IPA. All around great complexity, robustness, and balance of dank citrus/tropical/pine hops and moderate bready malt flavors; very smooth and easy to drink. A very enjoyable offering.
