Cellared properly, but drank about 5 months after purchase. First one I've yet to try in the series.

A: Hazy, straw-gold with a minimal white head that faded quickly, leaving behind very little lacing. S: Wow, I was expecting the watermelon to have faded, and it probably has. However, this is one is nicely funky. Oak, citrusy, but with some faint fruity notes as well. I wouldn't say watermelon at first, but after a few times with my nose buried in the glass, I moved it away a bit and, while it still is probably more due to a priori knowledge that the beer is brewed with watermelon, it seemed to be there and in conjunction with the funkiness, it gives it a super fresh and juicy aroma. T: Vinegar, sour green apples, rhubarb, finishing with what could be described as lightly salted watermelon. M: Typical of a nice Lambic: light body, good amount of carbonation, and puckering. O: Truer to style than expected. Looking forward to trying the other Spontans.

375 ml bottle into tulip glass, best before 8/20/2025. Pours slightly hazy deep golden yellow color with a 2 finger dense white head with good retention, that reduces to a thin cap that lingers. Light spotty soapy lacing clings on the glass, with a moderate amount of streaming carbonation retaining the cap. Aromas of juicy watermelon, tart lemon, lime, green apple, white grape, hay, straw, wheat, cracker, bread, light white wine vinegar/musty funk, light pepper, yeast earthiness. Nice and pleasant aromas with good balance and complexity of fruity/funky/acidic yeast, watermelon, and moderate pale malt notes; with solid strength. Taste of juicy watermelon, tart lemon, lime, green apple, white grape, hay, straw, wheat, cracker, bread, light white wine vinegar/musty funk, light pepper, yeast earthiness. Light-moderate fruity/acidic tartness and light yeast spiciness on the finish; with lingering notes of watermelon, lemon, lime, green apple, white grape, hay, straw, wheat, cracker, bread, light white wine vinegar/musty funk, light pepper, yeast earthiness on the finish for a good bit. Very nice complexity, robustness, and balance of fruity/funky/acidic yeast, watermelon, and moderate pale malt flavors; with a great malt/tartness balance and zero cloying flavors after the finish. Light-moderate dryness from acidity as well. Medium carbonation and light-medium body; with a very smooth, moderately acidic, and lightly creamy/bready/tannic balanced mouthfeel that is nice. Alcohol is very well hidden with minimal warming present after the finish. Overall this is a very good fruited lambic style. All around good complexity, robustness, and balance of fruity/funky/acidic yeast, watermelon, and moderate pale malt flavors; and very smooth and easy to drink with the balanced acidity. Not as complex, sour, or funky as I expected; but still had a good amount, all in nice balance with fruit/malt flavors. A very enjoyable offering.

Orange, hazy look with thin head. Citric, acetic acid aroma with no traces of watermelon. Medium acidity on the palate, acetic and citric acid primarily. Well pronounced watermelon. Mild grassy hop. Descent balance. Light to moderate body. High carbonation. Dry finish. A good sour beer overall. Watermelon seems a little out of place and doesn't blend well with the acid. Nevertheless, its drinkable and enjoyable.

just amazing stuff. who would have thought to put watermelon into a lambic, but mikkeller did, and it works supremely well. i was having a hard time envisioning how it would taste but this one is definitely worth buying! looks a little pink in the glass, but the color does not show nearly the intensity of the fruit in nose and taste. more clear than the others too, less of that yeasty haze than most. i smell pulpy fresh juiced watermelon right off the top. it takes me to a hot summer day. almost like watermelon lemonade in the nose, with the citrus acidity from the lacto in there too. i get the whole fruit too, especially in the taste. even rind and seeds, balancing bitter and earthy along with the real sweet and real authentic pink flesh. they must have used a ton of watermelon. the body seems lighter too, i wonder if its because so much liquid was introduced by the juicy watermelon, its lightened the wheat structure considerably. the flavor of ripe watermelon is scorched into the tongue from the biting acidity, and it lingers long in the finish. more sour than funk on this one, im sure that aspect will develop more over time. this is one of the newer beers in the series. very very impressive, so much more than a fruit beer.

This is probably the most disappointing beer in the Spontan series. It is still a nice tart beer, but falls flat when compared to the others. Very little watermelon comes through and it just drinks slightly tart with more funk.
