750mL bottle thanks to aapp from Hill Farmstead brewery shop. Brown glass, fake cork, paper wrapped, no date.
"Belgian Ale brewed with wild yeast, aged in white wine barrels." on the wrapper, but "Belgian Ale aged in Sauvignon Blanc barrels" on the bottle. 9%.
Pours a solid amber with a little cloudiness and some thin white head. The bottle started to foam a little but not gush. Funk fills the room, I'm guessing brett (which was later confirmed on the internets). Nose smells like an aging, funked IPA...some of that plastic-y faded caramel hop/malt thing, plus woody, earthy funk.
Palate has lots of dissolved CO2, a bit of acidity and plenty of bitterness to make this a mouth-pucking ale. It kind of reminds me of Cava in that respect, and I think "Brut" is an apt name for this one. The brett plays a big role here, not so much the sauvignon blanc barrels. I get plenty of bitterness, but the hops have been reduced to a simple "earthy" character and the citrus is mostly gone. Pears and pine boards come to mind... (A few minutes after I completed this review I started to get some of the citrusy sauv. blanc flavors.)
Notes: A solid funky IPA, but it's still a style that doesn't really "work" if you follow. It's interesting, but not necessarily enjoyable to sit and drink. I do recommend it, however.
