600ml bottle, 5.5% ABV. The term "Sang d'encre" seems to have both literal and metaphoric meanings - both of which are displayed on the label, i.e. being worried sick about an octopus' ink sac? (How crossword puzzle-esque) A bit weird - good thing that there's beer to go along with it. Not sure about the Irish connection here.

This beer pours a solid sooty black, with slight basal cola highlights, and three fingers of dense, finely foamy, and puffy beige head, which leaves a solid wall of pock-marked painted lace around the glass as it slowly bleeds (hah!) away.

It smells of bitter-sweet cocoa, grainy caramel and pale malt, an underlying brininess, toasted oily nuts, and earthy, leafy hops. The taste is more middling dark chocolate, a hint of spicy spice, ethereal nuts, some middling toffee-tinted caramel malt, a wee bit of ashy smoke, some dry coffee notes, and more earthy, musty hops.

The carbonation is quite laid-back, but with a supportive fizziness, the body on the wan side of medium weight, and mostly smooth, a bit of ash seeming to pick at it all. It finishes off-dry, the cocoa, graininess, and even coffee barely keeping things ahead of the drying embers of smoke, spice, and hop.

Not really a traditional interpretation of an Irish Dry Stout, but this is good all the same - roasted, sure, but with those spice and coffee adjuncts, which make for a more complex and interesting affair all around. I'm hardly worried about any inherent sickness I might have for these increasingly interesting Quebecois offerings.

Another dry stout, black with big head. Roast malt, chocolate malt. Lighter mouthfeel, light alcohol, with C hop in there. A tad of coffee, it all is OK but mediocre rep of the style.Nitro may have added creaminess but which may have impaired flavour.

Appearence: Perfect darkness, the thick compact head looked like insulating foam.

Smell: Subtle notes of coffe that mellows out into milk chocolate with a hazelnut finish. Not bad.

Taste: Mocha flavors with little cocoa sprinkles, body is quite light and the bitter finish is coffee-like and mild. A sessionable if not spectacular stout that Guinness lovers will dig, I tend to like mine with a little more substance.

Appearance. Pours a deep dark brown with over a finger of thick, light tan head that leaves some nice lace.

Smell. Chocolate, roasted nuts, and dark malts. A little briny as well.

Taste. Cocoa powder and dry roasty malts, a little hop bitterness and a little roasted nuts.

Mouthfeel. On the low side of medium body with medium carbonation.

Overall. Nothing fancy here but a well made beer. Seems a little thin but that my only real complaint.

Draft: Poured a black color ale with a nice off-white foamy head with good retention and some lacing. Aroma of dry roasted malt with nice aromatic coffee notes. Taste is also dominated by dry malt roasted notes with some aromatic coffee which is surprising considering there is no coffee in here and those roasted malt do make a wonder. Body is about average for style with OK carbonation. Very well brewed for style.

600ml Bottle from Marche Omni QC for $6

Appearance - Dark brown colour with a large size fizzy/frothy beige head. I can't make out the amount of carbonation showing and there is some good lacing. The head lasted for 3-4 minutes before it was gone.

Smell - Malts, chocolate, grains

Taste & Mouth - There is an average amount of carbonation and I can taste malts, chocolate, and coffee. There is also some burnt/smokey notes and a bit of a dry/spiciness.

Overall - Pretty solid stuff, as are most of the beers from this brewer. Price point might keep me away when 6 packs of St Ambroise Stouts are $7.99 at the same store.. but it was worth a try.

Of all of the Québec microbrasserie stouts, this is my favorite. It has a dry punchy taste to start off with and offers cacao and coffee flavours with a hopsy spice to it. The feel is creamy and it isn't too sweet but not too bitter either. The aftertaste seems to be indecisive in the sense that it borders on bitter while leaving a little sweetness. In a nutshell, this is one of the more complex Québec micro brewery stouts and the boys in Shawinigan are on to something with this little pearl. It goes down great on its own but also accompanies strong cheeses very well.

Appearance: It has a nice dark brown color to it with some amber hues shining through. It has a nice beige head that dies down moderately/slow and leaves great lacing.

Smell: The aromas definitely give out hints of chocolate, coffee, roasted malts and some nutiness.

Taste: Like the aromas, it has a some chocolate, coffee, roasted malts, faint nuts and an earthy bitterness.

Mouthfeel: It has a low carbonation with a nice overall balance and feel.

Drinkability: It's a very smooth drinkable beer accompanied with good flavors and aromas.

A-pour is cola brown from the bottle to a near black in the glass with a hint of ruby red peeking thru a big frothey tan head leaving a spotty lace along the pint

S-hints of roasted barley

T-ok tasting Irish dry stout

MF-ok/good carbonation , medium body

Ov-ok beer , glad I started Trou Du Diable with a somewhat inexpensive beer first , hmm
