We love the piney, fruity flavors of Simcoe hops. This is a classic pale ale, single-hopped and dry-hopped with Simcoe. We cold condition this beer and give it a restrained malt profile, so the hops really pop, like flora in spring. Our friends Patrick, Jason and Brad grow these luscious hops and we hope you enjoy them as much as we do.

I have a number of Peak Organic beers, both bottle & CAN, awaiting drinking & review & I have decided to run through as many of them as possible today.
From the bottle: "Pure ingredients, delicious beer".
I Pop!ped the cap only to be disappointed in the revelation that it was a screw-top. Boo! A bottle in and of itself is bad enough, but these screw-tops are the ones that they should do away with first. I gave it a very gentle pour followed by a vigorous swirl which raised a finger of dense, French Vanilla-colored head with good retention. Color was solid Amber (SRM = > 7, < 9) with NE-quality clarity. Nose had a slight cattiness along with a pine mintiness, underlain by a caramel maltiness. Mouthfeel was medium. The taste was definitely of pine hops, but more restrained than they might be in an AIPA. The malt had more of a biscuit quality than the sweetness that the nose had led me to expect. Finish had a very flowery, honey-like taste, reminiscent of honeysuckle in a meadow, along with the biscuity malt flavor that I noted earlier. It landed somewhere between semi-sweet & semi-dry, putting me in mind of biscuits drizzled with honey.

Poured from a bottle into pint glass in June 2015.
Appearance: Golden with light tan head. Head is thick and sticks to the glass.
Smell: Strong aroma of hops, pine, and citrus, like grapefruits, with a little peppery spices as well. Overall the citrus aroma dominate the others.
Taste: Interesting taste. There is a strong citrus flavor but with some pepper and hops flavors as well. There is some sweetness too.
Mouthfeel: Medium bodied.
This is an interesting ale. It has a nice mix of grapefruit, hops, and other flavors, which makes it interesting. I like the overall balance, and that the hops do not dominate the flavor.

Pours a finger of head on a clear straw body.
The aroma is bright flowers, pine and honey. Nice.
The taste has dry bitterness throughout, a touch of sweetness in the middle.
The texture is crisp.
Great aroma and a good flavor.

Pours a hazy light copper color. Nice hoppy nose. Pretty flat in the flavor department but the hoppy finish is decent.
This is akin to a session IPA.
