We love the piney, fruity flavors of Simcoe hops. This is a classic pale ale, single-hopped and dry-hopped with Simcoe. We cold condition this beer and give it a restrained malt profile, so the hops really pop, like flora in spring. Our friends Patrick, Jason and Brad grow these luscious hops and we hope you enjoy them as much as we do.

simcoe can be an extremely intense varietal, so its nice to see it used in a rather reserved fashion here, while still showcasing its unique properties of pine and resins. i like that its a pale base, not an ipa, so the abv is a little lower, the balance is a little more in line, and the hops dont over dominate the beer. its got a nice light copper color to it, and has that crystal malt base going on, but its not sweet at all. the aromatic of the hops is true to fresh simcoe, and i like that a lot, although i think its an odd choice for a spring beer, given the pine forward nature of it, seems more wintery to me, but its something different from the norm, and i appreciate that greatly. cool that its organic, i admire these guys for that, its not easy. this beer on the whole is a pretty solid pint, but it cant really hold my attention much beyond that. a little samey with other simcoe beers, but its well enough made, and deliciously fresh on tap.

Nose pine, grapefruit, grass, biscuit malt, faint earthiness. Taste pine, citrus, crackers, herbal hop finish.

Pours hazy golden with good head. Nice aroma, and upfront taste, but bitterness lingers a bit too long and too astringent for my taste. Beautiful lacing on the glass as you drink. Pine, grapefruit and grass notes.

Would drink again, but not going out of my way for it.

I mean this is the perfectly average beer really. It has a good malt balance but not overly hoppy, but isn't drinking beer subjective? Someone may love the malt, while others may be put off by the hops. I myself enjoy the balance, would I order again, maybe? I like hoppier beers but this one is better than a lot but not as good as a lot of them either. It is what it its, but hey its organic so that should give it some points anyway.
