This is an extravagant, immoderate beer. We mixed together our three favorite things – beer, chocolate, and coffee. A rich stout serves as a backbone, with organic black malt and chocolate malt providing a luscious foundation. During the boil, we add artisan chocolate from your friends at Taza. During conditioning, we add coffee from our friends at Coffee by Design. Then, this concoction is oak-aged, resulting in soft vanilla notes. We hope you enjoy this beer as much as we do.

A: opaque; very dark brown with ruby highlights at the edges; 1+ finger dark brown head that receded to a wispy cap; light lacing;

S: oak, dark chocolate, vanilla, and mocha;

T: mostly mocha with vanilla, dark chocolate, and oak in the background; mild to moderate bitterness at the end;

M: medium to full bodied; moderate carbonation; dry finish; hides the ABV well;

O: nicely done;

On tap at churchville inn.

Look: thick black, medium beige head. I'll give some benefit of doubt since this is just a 5oz. Pour.

AROMA: a little coffee, a little whiskey like alcohol kick(even though this is just oak aged and only 8.4%), a little chocolate. Some breast aromas. Well balanced in the nose; none drown the others.
TASTE: smooth oak, slight char/smoke late. Coffee and chocolate fade in taste.
FEEL: a little thin, a little astringent, but still a pretty smooth stout.

Good beer.

Pours a dark brown color with almost a finger of head. The nose is nicely chocolatey. The flavor is wanting in terms of both roast and chocolate notes. There is nary a hint of the barrel. The body is thin for the style, especially for a big stout.

Appearance: A fairly pronounce darkness, border on black with some crimson-cassel earth hues. In artist's circles it would a slightly pulled back Mars Black. Good two fingers of camel hide head, fairly quick to dissipate leaving behind some spotty silky lace and small lily pads of errant foam but not much else clinging to the glass.

Aromas: Like many stouts it has its chocolate and coffee ensemble, the chocolate made up of a mild to dark cacao, and the coffee is a medium dark roast. Hints of vanilla and caramel and wet oak bark, and maybe a whisper of that 8.4% peeking through at the end.

Taste: A nice rich cafe mocha flavour. The balance between the coffee and chocolate bitters is amazing, keeping it rich and smooth with some toffee sweetness and a little bit of an anise tinge to round it all out.

Mouthfeel: Interestingly it has characteristics in its carbonation that give it a nitro'd effect, though I feel it would be awesome off a nitro'd tap it is still very stoutish in its feel though maybe not as creamy as I like, but extremely smooth and warming. The finish is clean and dry with an enjoyable feeling bitter linger that takes its time to leave.

Overall: One of these days I'm going to do a blind taste test between organic and non-organic brews just to see if I can single out the organic. Because I swear the organic beers I've had always seem to have something special in how they taste that just give them extra character - of course organic is only half the process, they'd have to be true craft, preferably barrel aged, and as authentic old-timey processes as possible. I.E. sans technology. This is actually one of my favorite stouts for sure, as close as you can get to nitro'd stout that is both a bit effervescent and creamy smooth.

Pairing: For me this ranks up there with a hot chocolate on a late autumn night. With winds gusting outside and leaves falling to the ground. I'd easily pair this as an after dinner digestif. Maybe with some like nut-based snack mix (not too much salt) - raw/roasted walnuts, almonds, pecans, and a few cashews just to pair up the sweet. I love the flavour of this beer on its own so I wouldn't want to complicate it too much.

L: Dark almost black with a nice brown head on it that stayed for a while and then left some nice lacing down the side , leaving a layer on top if the whole beer.

S: Dark roasted malts, expresso creamy, chocolate and coffee. Almost a slight fruity smell but defiantly an okay tone to it.

T: Dark black coffee, with a slight chocolate finish. Not a crazy lot else going on, a slight oakyness to it as well.

F: High carbination, with a full body mouth feel, it makes you want to drink more and more of it.

O: Actually a pretty good beer from these guys, very over priced though.
