L: Poured from a bottle to a snifter glass. Had a brownish / yellow color and a mostly cloudy consistency. There was a massive creamy, fluffy, very long-lasting head. Excellent lacing.
S: A pretty good, but not brilliant, aroma of citrus fruit, barnyard funk, yeast, hops, spices, and wheat.
T: Tasted of a bit of yeast (a nice backbone), a decent amount of citrus fruit (lemon, in particular), a little hops (not a huge factor), some of the saison barnyard funk, a little wheat (mostly in the finish; not a big element), and some spices (pepper, especially). A decent enough flavor, but it doesn't jump out at you. Still, not bad.
F: A well-carbonated beer with a sharp finish. Medium-bodied.
O: A solid, if slightly uneven beer. Worth a look.

Lovely little Saison from the good folks at Dunham. The nose is clove and black pepper, but not overpowering on either. The brett adds a little musty funk, but, again, nothing too prominent. Very dry finish, in fact one of the driest finishes I've had on any Saison. This style is one of my favorites, and I shall return to this particular version whenever I return to Montreal during the year.

Peppery and spicy nose with apple and pear notes

Simple saison. Dry, slight funk, cracker malt, some mild orange and floral flavors. Smell and taste are identical, with taste drying up to crisp finish. Nothing too exciting, but well constructed.

Bought at Liquor Shed.
Pours a lightly hazed straw yellow, oodles of foam (served room temperature), fine lacing.
Smells flowery, yeasty, notes of coriander and light clove, earthy, with a pinch of lemon zest.
The taste lives up to the smell. Earthy, coriander and clove, yeasty, some lemon zest, very dry finish.
Medium bodied with lively carbonation.
A nice find at the local for me.

My first from Brasserie Dunham. I like their bi-cultural name, their bi-tradition offerings (B&B, Brits & Belgians) and their artistic label. Beyond the packaging, there is a good ale inside: pleasant start; dry finish. Let's analyze what's in-between.
Smells give me a fruit melange and a malt medley, mostly because Brasserie Dunham seems to have cultivated a full yeast... and then added a modest Brett. In unpacking the malt, I detect a little wheat that softens the barley. Fruit has mostly lemon, but lurking there is some apple or maybe pear. What pulls all together for me is the proper use of Brett. Too much Brett tries to steal the show; makes it too tart for most foods. Brasserie Dunham uses just enough Brett to make the rest of the ale perform distinctly.
One weakness is its dryness closes up the salavary glands and probably makes it harder for the food to work on them.
However A really good saison makes me salivate for more food... and, of course, more saison.
I probably will have another Rustique someday; but probably not until I've tried a few saisons from Dunham.

750ml bottle - so what exactly makes this Saison 'rustic'?
This beer pours a slightly hazy, yet bright medium golden yellow colour, with three chubby fingers of puffy, rocky, and somewhat creamy bone-white head, which leaves some decent misty London afternoon lace around the glass as it slowly recedes.
It smells of grainy and crackery wheat malt, an edgy and bordering on phenolic yeastiness, muddled pale orchard fruit (maybe some banana and citrus trying to stand out), ethereal black peppercorns, and some understated leafy and herbal green hop bitters. The taste is bready and doughy wheaten malt, a lesser cereal graininess, damp banana chips, an almost clove-like spiciness, faintly funky yeast, subtle lemon citrus zest notes, and more gentle leafy, weedy, and herbal verdant hoppiness.
The carbonation is fairly active in its palate-crashing frothiness, the body a solid middleweight, and sort of smooth, but for that hovering yeasty astringency. It finishes off-dry, the base wheaten malt holding things more or less steady.
Overall, this does seem rather rustic, or basic in its Saison qualifications - wheaty, yeasty, spicy, and just a wee bit hoppy. Sure, the yeast gets a little too handsy for me to want to drink very much of this, but I can still call Saison Rustique a generally well-made version of the style.
