Solaris Saison from the 2012 bottling that has been aging for another year in French Oak. During the last months of aging fresh apricots were added to the barrels and then packaged into what you’re holding today. Expect big brettanomyces nose and profile finished with soft tones of apricot as it warms.

Pours a woody golden, hazy, with a little bit of a white head. Aroma is offers some apricot, a touch of some fruitiness, a little spiciness which I assume is from the yeast, a touch of funk, woody, and a little vanilla like essense from the barrel. Aroma is held back by a touch of some ethyl butyrate, which introduces what i can only describe as a slight sense of gluelike aroma. Flavor is sweet with a touch of tart thrown in (but quite very mild); apricot, a little peppery, woody and some following vanilla essence, and maybe some hint of spiciness. A medium bodied, creamy mouthfeel. Not too much activity, does a nice job sitting there in my mouth. Overall, solid beer Crabtree here but held back slightly due to the aroma. Would drink again if found on tap.

a superior product to their peach offering. it pours a hazy rusty orange color with a vibrant inch of just off white soap suds. the nose is fruit forward, with the brett making the apricots appear fresh and in season, polleny, succulent, and a little tart to go with the sugary flesh of a good apricot. the yeast here is robust, the funk is mild, and the mouthwatering factor is very high. fruit forward in the taste too, but authentic and balanced with a malt body that must surely contain quite a bit of wheat. the tart bretty finish is nice. the peach version was dominated by fruit, but this has it in better harmony with the other elements, and it isn't sweet, which I love. carbonated like champagne, this is one of the best crabtree brews to date, save of course the epic syzygy, which I really hope gets released again. this is a treat and worth the price. also cool with good indian food, for a total palate takeover.
