Drank on-tap at Cambridge Brewing Company, Cambridge, MA
Served in a cervoise

The beer poured a gorgeous, dark burgundy and was topped by a one-plus finger tall, bubbly and foamy, bright white crown. There might have been a bit of pink in the head, but it was tough to see in the bar. Spotty, drippy lacing trickled down the glass. The head fell to a thin yet resilient film.

Intense, fresh, dark cherry notes dominated the nose. Super jammy. Sweet yet balanced. There was a strong raisin presence as well. Good dose of brown sugar. Hint of balsamic. All in all, the aroma was rather straight forward, but so fragrant and enticing.

The flavor profile was also heavy on cherry, but it contained a lot more oak and sourness as well. Good dose of balsamic vinegar. Slight lactic acid presence. Touch of brown sugar. The beer tasted a lot more like a Flemish sour ale than a typical wild ale. Some lemony tartness appeared in the center. Crisp and slightly acidic. Lots of oak and vinegar on the off-dry finish. Nice overall balance of sweet/tart flavors.

The mouthfeel may have been the only less than stellar aspect of this beer. It was medium bodied with a crisp, almost soda-like effervescence. Fairly non-descript.

Cerise Cassée is an outstanding sour ale from the Cambridge Brewing Company that I will be happy to revisit. This is a fantastically flavorful, complex and refreshing offering from Will and Co.

some of this blend is 9 years old! thats impressive. a wonderful tart cherry sour that has more depth of flavor than just about any other on the market. is this even on the market? if it is, i need more! pink tinted burgundy colored sour, with not a ton of head but some slowly rising bubbles through the hazy and patchy foam. the nose is really pucker and tart, with cherries being evident, but also a red wine like fruitiness that must come from the fermenting cherries. funky yeast as there along with the bacterial presence as well, and a real heavy oak presence brings it all together in both aroma and flavor. super smooth flavor, with the fruit all the way through but moving from sweet to sour and back again over and over. it gets more sour and acidic as it goes, but never caustic or sharp. it dried me out, but i wet up right away for more. one of the best sours I've had in awhile, and I've had some good ones. i would put this again almost any other sour cherry beer thats out there. world class all the way through, and the best I've had from cambridge, who now fully has my attention.
