The Oxford Dictionary defines Stout as brave, strong, and resolute, qualities which also defined M.I.T. Police Officer Sean Allen Collier.... Collier Stout is brewed in the manner of a true Irish Dry stout. The mash is made up only of pale malt, flaked barley and oats, and roasted barley. It has a full, rich body dominated by complex tones of roasted grains, with a very dry finish.
Requires two pours to allow the head to settle. The foam rises above the rim. The head is deep beige color. The bubbles are extremely small and tight. Looks like a nitro pour but it's not. The liquid is near black where no light shines through.
Strong long toasted biscuit smell. There's a touch whipped cream to the nose as well. Not sweet.
Nice blend of dark toast and burnt malt. It is curiously missing the coffee flavors I've come to expect from Anerican made Irish Stouts. This is closer to the real deal. Perhaps a bit thicker body than most Irish versions. Lasting dark toast aftertaste.
