Opened this bottle at Winking Lizard. Poured into an Ovila chalice.
The pour produces a shorter head of cream color. The beer is dark, nearly black. Though I suppose in better lighting it would be a deep mahogany color. The head recedes slightly, but I am left with a nice perpetual cap of foam. No lacing though.
The aroma is of cocoa powder and fresh figs/dates. There's a hint of brown sugar and the kiss of molasses as well.
The flavor is very dark and malty for a quad. There's a little less sweetness and fruit flavor than in many other examples. Cocoa and molasses are as prominent here as in the aroma. Rich old leather and mild toffee notes also help set Ovila Quad above most of its American brethren. There are also some sweet maple esters on the finish.
Smooth and easy to drink. Soft carbonation. Full bodied with well-hidden alcohol.
Overall this is easily the best American Quad I have ever had, and what a great value to boot. Sierra Nevada has promised to re-release some of the series again in 2012 - I sincerely hope that Quad is on that list.

This pours a ruddy raisin brown color with light foam. There’s a bit of stone fruit and plums on the aroma, with an earthy estery profile. I find the flavor to be sweetish but not cloying, with some plums and figgy notes. Comes off smooth and almost velvety.
