From BeerAdvocate magazine Issue #63 (Apr 2012):
LOOK: Bright golden; lovely lace
SMELL: Grassy, grapefruit pith, pine cone, catty, bready grain, yeast, clean esters, guava
TASTE: Citrus rind, mint, clean booze, pungent hop bitterness, aspirin, dried grass, nutty yeast, bread crust, ripe tropical fruit, piney; dry, bitter finish
Balance was not the intention here—the brewer was spot-on when they said “sensory overload.” If we had to gauge the IBUs, they would likely score past the human threshold in bitterness, but not enough to cloud out the flavor. Enjoy, hopheads! This one is for you!

Feeling bloated and buzzed from a big German meal and several different pints, I decided i couldn't leave without trying their flagship DIPA, what kind of hop head would i be if i didn't?
A - poured the bottle into a standard pint glass, very hazy golden orange, short head retained decent
S - Big citrus, mild pine, cracker graininess, hints of perfume at the back
T - big hop presence mostly of citrus and perfume, some pine and resiny flavours are more subtle, grainy malt tries to hold its own, and light boozy sweetness
M - realtively creamy with solid carbonation, an oily resiny feel, medium hop bitternesss, warming booziness late in the finish
O - while this was a bit of work to get through on a full stomach i am glad i savoured it last, great to see a small brewpub take on this style and come through with something worthy

My bottle was labelled RedRock Elephino Double IPA. Everything else was the same as the old label (and there is still a picture of an elephant). It was a very nice DIPA was grapefruit and pear characteristics. My first Utah beer was delicious!
A: Orange colour and a 1 cm head that fades pretty fast. 4
S: Citrus hops with a strong grapefruit-like character. There is also some pear aroma. Very interesting. 4.5
T: Malty with tangy grapefruit and some sweet pear. There is a slightly bitter aftertaste. I don't love the pear-like flavour. 4
M: Pretty thick. Not strongly carbonated. 4

appearance: Slightly hazy amber. pretty fat pillowy head on the pour that recedes quickly.
smell: Strong grapefruit up front. Some piney hints.
taste: Sweetness up front surprisingly, followed almost immediately by bitter grapefruit.
overall: Decent DIPA. Not a standout for me but decent enough.

500mL bottle from Sprayberry Bottle Shop (Marietta, GA). 5.99. No bottling info noted. Served in a Sweetwater snifter.
Pours a hazy yellow orange with one finger white head. Leaves nice spots of lacing.
A nice sharp aroma of citrus hops hit my nose as soon as I popped off the cap. Sweet blend of pine, mango, orange and fresh cut grass.
Taste delivers that nice blend of citrus hops I smelled. Mango, pineapple, grass and orange. A good touch of biscuity malt. Very little, if any, booze bite. Long sweet but dry citrus aftertaste.
Medium in body and carbonation. Oily slick on the tongue (in a good way). It could stand to be a bit heavier but it's light enough to go down smooth.
Glad I picked this up and I'll definately get more in the future. In a market saturated with IPAs, doubles and imperials, Red Rocks had created a great hoppy treat that, for my tastes, can stand up to many of the big boys. Worth at least one try if your a fan of the style.

Chill hazed amber colored ale with a small white colored head.
Smells strongly of northwestern hops with a strong fruit aroma. Pineapple is the strongest scent here. Passion fruit, and mango are in there with a much fainter grapefruit and orange aroma.
$tarts out malty with a woody pineapple taste. Flavor stays dry. Strong tea and tropical fruit. Bitterness is about medium for the style. Flavor just isn't as good as the scent with this one.
Mouthfeel is good.
Overall a good beer but not a great one. They just need to make it taste like it smells.
