Modern American brewers will always go the distance to please, wow or simply pique interest. Sometimes unconventional ingredients come into play rather than just a different name. Knot Stock is a Pale Ale brewed with an addition of black pepper, so there we are.
Head lays a bit thin but with enough retention and stickage to get by. Deep rusty-hued reddish color with a bright clarity. Orange-lemony hops meld well with the hint of black pepper and the toasted bready tone in the aroma. Sturdy moderate body with a decent crispness that pulls the flavors in quickly. Bready maltiness sets in with an enticing warmth from the spicy black pepper. This black pepper flavor grows quicker with each sip; the first few find it sitting in the back, but after a few more it pushes right to the front--leaving the taste buds to try and recover from each wave.
While this is not your Joe six-pack craft beer of the day, it's a damn impressive and interesting brew. We are now imagining a thick cut of pan-seared prime rib to enjoy along with a bottle of this beer, with plenty more fresh-cracked black pepper, of course. Cheers to the brewers to have the courage to go this far and for making such a flavorful beer!

Appearance - Medium-dark amber. Clear. Short off-white head with good retention.
Smell - Mostly sweet light malts. Bready with a little caramel. Just a little citrus.
Taste - Flavor is a little more roasted than the aroma suggests. Light toast and caramel. Hoppier and grassier than I was expecting from the aroma. A little spiciness and a little heat in the finish.
Mouthfeel - Light-medium. Dry.
Overall - I like it fine, but this beer isn't as distinctive as I thought it would be. An entirely decent APA.
