“A Most Particular Pale” – An American Pale Ale with Black Pepper contracted brewed for Furthermore by Sand Creek in Black River Falls, WI.

Presentation: 12 oz brown bottle with a fabulous art deco logo of a tree stump and bird. A heart carved into the stump has the letters “FMB” inscribed within it.

Appearance: Poured into a swanky plastic cup at the Parlor Saloon in Spring Green, WI a golden orange-copper with a voracious thick off white head, sticky with above average lacing.

Aroma: I wouldn’t have picked up on the pepper without being told about it on the bottle but knowing what I’m looking for helps. I think I sense a pinch of it. Otherwise, this beer smells remarkably similar your typical American Pale Ale. A light caramel malt base with strong leafy and citric hops. Plenty of pine.

Taste/Mouthfeel: Light caramel malt front with a strong hop resin presence, creamy center, well hopped, moderately bitter finish with a dry black pepper bite that hits the back of the throat and belly more than the palate. Pepper is much more noticeable in the feel than it is in the flavor. Medium body. Really a nice tasting APA with only a subtle amount of pepper. A difficult beer to classify.

Drinkability: Not bad, flavor and body wise I could drink this all day. The pepper could be a heart burn problem though.

Note: Better on tap, primarily because of a smoother mouthfeel but not different enough to warrant a second review.

Picked up this 12oz bottle on a make a six rampage at Steve's Liquors on my last trip to Madison.

A: A slightly murky, mysterious looking dark amber. Off-white fluffy one finger head. Nice spotty lacing and good head retention throughout.

S: There a distinct hoppiness but before I detected what type of hop, the black pepper comes through loud and clear. It's like you just sprinkled it on the head. Crazy!

T: Wow. Interesting. It really is what it promises to be. On first taste, it's a Pale Ale loaded up with cracked black pepper. Again, the hop is there but the flavor of pepper comes through and stops you from reading it that well - not a bad thing necessarily. The finish goes to more of a maltiness which is pleasant with the pepper hanging around well into the aftertaste. I'd like to try an IPA version of this. I think the aggressiveness would pair well with the pepper.

M: Pretty clean. More medium bodied than I expected. Pepper gives a crispness. A little more carbonation might have livened things up a bit but not a big deal.

D: I really enjoyed this. It's nice to have something that's a little different from straight up styles once in a while. I would definitely recommend giving it a try. I have to admit that I couldn't decide if I wanted the pepper to allow the beer to come through or I wanted the pepper turned up more. Either way, I am going to have to make do with what exists. Thanks to Furthermore for expanding my horizons. Happy to support their brewery.

Modern American brewers will always go the distance to please, wow or simply pique interest. Sometimes unconventional ingredients come into play rather than just a different name. Knot Stock is a Pale Ale brewed with an addition of black pepper, so there we are.

Head lays a bit thin but with enough retention and stickage to get by. Deep rusty-hued reddish color with a bright clarity. Orange-lemony hops meld well with the hint of black pepper and the toasted bready tone in the aroma. Sturdy moderate body with a decent crispness that pulls the flavors in quickly. Bready maltiness sets in with an enticing warmth from the spicy black pepper. This black pepper flavor grows quicker with each sip; the first few find it sitting in the back, but after a few more it pushes right to the front--leaving the taste buds to try and recover from each wave.

While this is not your Joe six-pack craft beer of the day, it's a damn impressive and interesting brew. We are now imagining a thick cut of pan-seared prime rib to enjoy along with a bottle of this beer, with plenty more fresh-cracked black pepper, of course. Cheers to the brewers to have the courage to go this far and for making such a flavorful beer!

The second Furthermore beer I'm trying...this one is brewed with black pepper. Pours into my glass a deep cloudy amber with a nice half inch of creamy head on top. Aromas start off with some spiciness including black pepper and some caramel. Herbal, citrusy hops are there as well. Slightly bready. Interesting.

First sip brings a smooth caramel malt upfront that segues into a slight breadiness. Herbal, citrusy hops follow with a touch a grapefruit. Peppery spiciness plays off the hops with each subsequent sip and leaves just a touch of heat on the way down. The hops and pepper are really an interesting mix, making for a tasty brew that's quite unlike any other I have tried.

Mouthfeel is medium bodied with a nice creaminess and steady carbonation. Goes down easily. I could see myself having a few of these. There's an interesting mix of flavors between the hops and the pepper, with the pepper never going overboard. I'm looking forward to trying even more Furthermore beers. Worth seeking out if you're around Wisconsin!

Furthermore Knot Stock, 2010

Very interesting beer indeed. It has a nice clean poor with a white head. Initial smell is very very peppery. Considering that the beer is a cracked pepper beer, there's no question that there's pepper in there.

Taste is pepper and caramel malts. There is a subtle hint of hops, but it seems that it just cleans off the tounge for the next sip of pepper.

All in all, an interesting twist. I could drink a few, but it wouldn't do for a case night.

Beautiful amber brick red color nice head forms and stays is dence and white

Its initial nose is sweet a pepper taste breaks through with a hoppyness it is well done but the pepper is almost offputting but better then I expected

The taste to start is sweet and smooth as a slight earth hoppyness hits the carbonation builds. There is a slight sweet flowery taste that breaks through before the pepper taste presents itself. The pepper taste comes through as the carbonation leaves a slight numb feel on the tongue. The aftertase is like the sroma pepper is potent. This would be a great beer for cooking and the taste is good but pepper is difficult in the drinkability

Serving glass: Poured from bottle into Nonic Imperial Pint.

Appearance: Somewhat dark amber with thick off-white head and very nice lacing.

Smell: Cracked black pepper, caramel, cherry, and light citrus.

Taste: The black pepper overwhelms the caramel malt base. Ends with strong pine, some citrus and the pepper still carries through.

Feel: Moderate carbonation, medium body, dry finish.

Overall: Very unique, but the black pepper is simply too much. Points for innovation.

Poured from the bottle.

Cloudy and copper in colour. Slightly fruity nose with pepper and citrus-hops. The taste is on par with the smell; citrus-hops upfront with a mellow pepper flavour and a very clean finish.

Would I buy it again? Yes.

Deep caramel amber hue almost a crimson color with a light tan head forms nice thick head, with scant speckled lacing. Aroma has citric layers/mild pine with a noticeable pepper as in black pepper kick. Somewhat mild breadiness hints of caramel malt as well to balance things out. By far my favorite offering from the Furthermore gang so far, this beer uses the peppecorns assertively but it intermingles with this style of APA extremely well. Gives somewhat of a cookie cutter style beer some real character. Caramel toasted malt presence, citri/pine and finishes with a nice black pepper kick that livens up the palate and sticks around with each sip. Mouthfeel was medium bodied, carbonation was mellow but fit for the style. That lingering spice of the peppercorn may offend some but it works for me in this particular beer. Drinkability was solid sessionable with moderat alcohol, and mucho flavor I will keep trying whatever Furthermore churns out.;

A: Dark red, almost amber lager-like. Decent head and lacing.

S: The pepper is apparent even on the nose, lending it a woodsy aroma that leads you to expect it to be rather malty.

T: Very immediate, almost smoky dryness from the pepper. Some hoppiness on the back end, but it's drowned out by the pepper.

M: Bland and boring.

O: Black pepper in beer is an interesting experiment, but ultimately the taste is too overwhelming for me. Thanks but no thanks, Furthermore.

Try it again? 2 - Probably not.

(Served in an American pint glass)

A- This beer has a hazelnut brown body with a thin bubbly light tan head that fades to a ring pretty quickly. There is a strong carbonation of tiny bubbles that glide to the surface.

S- This beer has a soft caramel malt note with some green herbal hop notes that balance each other very well. They are not really strong smells but very fresh.

T- The soft smooth pale malt flavor has a slight toasted note with a slight light fruit hint. There is a dry crisp malt flavor that is very light toasted but better than biscuit malt. There is a green bitter hop finish that has a soft dry spicy quality to the hops. There is a soft black pepper spice that hangs on the tongue after each sip.

M- This beer has a medium-full mouthfeel with a soft spice heat in the finish.

D- The soft toasted malt notes and the pepper heat are a very nice combo with the hops playing in there also. This is a excellent crafted beer and will be great session beer. I think this would be even more wonderful from a cask. This really reminds me of the soft yet complex British ale fresh from the cask.

Poured a dark amber color with quite a bit of big beige head with some great lacing as well. Smell is made up of faint hops with some floral notes. Wow the taste is filled with pepper. For a second I forgot that I had read that on the bottle and it surprised me. Fairly good tasting beer though, nice hop backbone and finish on it. Light to medium bodied beer that goes down pretty well. Not sure how many of these I could drink in succession but it's a pretty good tasting beer and they're doing something different.

A- Deep orange brown with a thick good lacing head.
S- Not too much here; bready malt, cracked pepper, and grapefruit.
T- Light grapefruit meets good bready slightly caramel malt. Huge pepper comes through!
M- Sweet and malty with quite the black pepper spiciness. Bold black pepper finishes this 1 off and leaves your mouth tingling?!

Overall- "brewed with black pepper"?! No sh!t. Spicy and leaves the mouth a bit hot. Just too much pepper for me! (Thanks Mike!)

Pours medium amber color, with a lasting 2 finger puffy beige head. As the head recedes, some faint lacing remains.

No aroma of hops, but both sweet malt, and strong black pepper scents rise up to meet me. Some yeast fruitiness as well?

Definitely peppery. Some hop flavor, and some malt flavor, but overwhelmingly, black pepper. At first. As I relax a bit, I let it warm, I'm reading some posts from another beer site, and it starts tasting pretty good. The malt is coming forward, sweet and bready, but restrained. The hops are showing up, good bitterness, and a floral flavor.

Mouthfeel is just what you would expect from any decent APA. Good zesty carbonation. A pretty full bodied beer in my estimation. And the pepper leaves a pleasant aftertaste as well.

Overall drinkability with me would probably be low, however, as I might have 1 or 2 of these with dinner, but not much beyond that. My only question would is would I pair this with a peppery dish, or just the opposite? I'll have to find out later. A decent beer, most likely something you've never tasted before. Worth a try just to experience some great experimentation.

Appearance: Typical golden color with appetizing layer of foam.

Smell: Hints of pepper with citrus and pine.

Taste/Mouthfeel: Taste is similar to smell. Crisp mouthfeel with a lager-like cleanlines in the finish.

Overall: A pretty tasty ale that I would try again.

Pours out a deep amber, almost brown. Thin head that dissipates quickly, leaving some lacing behind.

The pepper is present in the smell, but I'd say it's subtle. I get some citrus along with the hops and malts.

Taste reflects the pepper more. It's very interesting, it's definitely there but not quite overpowering. Kind of leaves a peppery taste in the back of my mouth.

Relatively smooth aside from the bitterness of the pepper. It's quite enjoyable, but I wouldn't drink more than one in a sitting.

A short head of ivory cream rises above the cloudy deep-amber body of Furthermore's Knot Stock as you pour it. Shortly thereafter the head receeds to a standard collar, but it leaves patches of spotty lace behind.

The nose is surprisingly, or maybe not so surprisingly, peppery over a solidly caramelish malt base. It's not bold, but it's there, and it's really quite interesting!

The flavor follows, with black pepper sprinkled roughshod over the blanket of softly sweet and caramelish malt. Beneath it a solid bitterness balances. As you progress through the glass the pepper starts to build on your lips with a delicate heat; and it becomes more and more noticeable in the flavor. I'd imagine that people who smoke might like this as it's got a little bit of a burn going on. It finishes dry and peppery, with the deeply caramelish malt fading quickly but the pepper hanging on.

Distinctive to say the least, Knot Stock is unlike any other beer I've ever had. There's just enough black pepper there to give it flavor and aroma without it becoming a spice-bomb. Very nicely done, and remarkably unique, I have to give it points for originality but I doubt I'd have more than two of these in a row. Still, it's absolutely worth trying just for the experience.

Beer Made with fresh ground pepper, hmm...I love beer, I love fresh ground pepper

12oz single, Rileys I believe

appearance: pours into imperial pint glass...dark copper body, frothy white head with solid lacing

smell: wow...I had figured this beer for an absolute flop, but it doesnt smell so. nice bold aroma that combines a fresh APA hop style and a distinct ground pepper spice...these two aromas collide and the result is actually quite nice

taste: again, I like this. The pepper lingers hard in the aftertaste but the initial taste is a nice APA base with a strong pepper kick, moderately spicy going down. Hopping adds a very nice touch with noticeable citrus and pine. I initially thought this would be a disaster, but its extremely well done and I might even want to buy another bottle

mouthfeel: spicy pepper follow through, medium pale ale body that is quite nice

drinkability: hindered only by the spice

A sun tea colored liquid with a creamy finger of off white head that leaves some decent lacing.

The nose is crushed black pepper, cinnamon sugar, caramel, faded hops, bready malts, maybe a little butterscotch.

The first gulp is sweet upfront with those cinnamon sugar notes. It's followed by the crushed pepper, malts and butter. It's a little bitter in the finish and the pepper really comes out as it warms.

Mouthfeel is medium bodied with medium carbonation.

An interesting pale ale to say the least, but I'm afraid I could drink more that one bottle. I'm glad I tried it, but will not reach for it again.

12 oz. bottle poured into a tulip glass.

Appearance-Amber-copper in color with slight chill haze which fades to moderately clear as it warms. Thin beige/cream head has fair retention.

Aroma-Fruity, spicy black peppercorns up front dominate the profile. Slight green pepper character, also from the peppercorns I believe. A bit of what seems like minty hops and a touch of bready malt, but it's really hard to pick out anything aside from the peppercorn notes.

Flavor-Slightly fruity and then black pepper all the way. Fortunately, the pepper flavors are varied and complex, with light pepper spice, an earthy fruitiness, and a dull burn on the palate. Finishes with moderate bitterness from hops and spice, with low minty, herbal, and lightly citrusy hop flavors.

Mouthfeel-Medium body, with moderate carbonation. Smooth burn on the palate from the peppercorn notes.

For what it is, this is good. That said, I could never make this an everyday drinking beer-it's a bit too exotic. This beer would probably be best paired with some very specific food offerings-perhaps a pepper-crusted steak or a hefty arugula salad. Otherwise, I think it's a bit too powerful.

Edit: It's a bit powerful on it's own, but it's actually really good with a wide variety of foods. This finds harmonies and flavor hooks with so many dishes, it's almost silly. Definitely a beer I'll be experimenting with in the future.

Medium amber, clear, with a large fizzy, frothy head that laves very nice lacing.

The intesne aroma of fresh;y cracked black pepper leaps out of the glass, which is, of course, extremely unusual. It's a great smell, remarkably fresh. Underneath is a nice floral hoppiness. Drinking the beer, the pepper flavor is subtle at first, the major impression isa nicly balanced hoppy ale with a clean bitter finish. But the pepper effect accumulates in its spiciness, smokiness, and eventually almost tongue-numbing pepperiness. This is an interesting and unusual beer, also a study in a new way to experience the many effects that black papper has on the palate--a celebration in beer of one of the world's great spices. As a beer, it is nicely done, interesting and pretty drinkable, although I am not sure about drinking more than one at a time. But this brew deserves some recognition for showcasing black pepper in a unique format.
