A collaboration with Local Cantina & Gallo’s Taproom, this beast is a blend of Bourbon Barrel Dark Apparition, Bourbon Barrel Matriarch, Bourbon Barrel Brick Kiln, Bourbon Barrel Imperial Amber & Cognac Barrel Dark Apparition.
These beers were then blended and aged in Rémy Martin, Russell's Reserve, Woodford, Willet, and Weller barrels.

As instructed by Brad, this was served room temp at Greenhouse Tavern for the Jackie O's Soigne beer dinner. Spirit Beast displays dark brown with burnt red edges and no head.
Smell is brandy, oak, almond, walnut, with a little caramel, chocolate, and marshmallow. Overall it smells pretty spirit driven.
Right up front on the palate, it's chocolate covered marshmallow with nuts--much smoother than expected and not as boozy as the nose would suggest, but obviously it's still quite hot. There's also a little toasted coconut, leather, and tobacco once you get comfortable with it.
Lightly fizzy, wet, yet wine-like, finishing semi-dry.

Aged for almost a year now.
Pours out a black color with a deep tan looking head to it that fades quickly.
Aroma starts off with sweet bourbon, vanilla, toasted coconut, barrel oak notes, and a decent bit of sweetness. Everything from chocolate to caramel, toffee and molasses along with a bit of roast too. Smells really complex. Some cognac type of sweetness on the end too.
Taste is very bourbon forward (but smooth) along with vanilla, oak a bit of cognac sweetness and some subtle dark fruit notes. Definitely caramel/toffee, burnt sugar, molasses, some oak, some milk/dark chocolate along with roasted notes and even a bit of citrus too. Tastes so damn good! Lots going on.
Full bodied, creamy, rich and chewy mouthfeel. Bit of warmth, but super smooth.
Jackie O's does it again! This is some next level shit! They know barrel aging and blending so well!
