A: pours out a dark-amber with almost no head.
S: I get a lot of cab aromas and vinous notes. there is caramel and some smoke, and hints of bread. there is a bit of acid and some sweet fruit aromas. there is also molasses and toffee.
T: i get carmel and toffee. some roasted malt and oak. There is definite vinous qualities. i get some smoke and a bit of leather from the cab. there is acid and some earthy qualities. there is some citrus flavors and then it finishes dry and bitter.
M: it is dry, but still has a nice medium body with decent carb.
O: a great beer. I wish we had more.

A: Opaque, extremely dark maroon body. Head is a light whitish-brown and stays around for a while after receding initially.
S: A kind of generic plain sour smell, but still pleasant. Beer specific sour smell is upfront followed by punchy fruity sourness. Pretty muted smell overall.
T: Caramel laced with the sour fruit up front is interesting. Tastes like a granny smith apple, and the caramel doesn't offer sweetness, just the burnt aspect of caramel. Briefly has a spell of hoppy bitterness, but it is shortlived, and a nice interlude.
M: Slightly fizzy, gets creamily foamy halfway through the sip. Leaves a nice sticky feel afterwards. Very pleasant feeling to savor sips with.
O: Solid sour, but unremarkable in terms of specific taste. It would have helped if I had a clearer handle on what quince tastes like, but the fruit aspect wasn't as forward as I would've liked. Still a good beer though.
