Damn. May have let this one warm too much again. It isn't warm by any means, but I felt like I was getting a lot more overall flavor on the first few sips straight from the fridge. It smells sweet, apples, some Scotch-like smokiness, bit of banana, some alcohol, little clove. Pretty sweet taste, some bitterness, maybe almost tartness. Apple juice, maybe a bit if peach. Think I got the smoke more overall when it was colder, but it is definitely still lingering in the aftertaste.

22oz bottle into snifter.

A: Pours a clear glowing amber with a finger of dense off-white head that faded into a bubbly collar.
S: Mild smoke is dominant but not potent, and it is definitely woody as opposed to char, bbq or campfire. Peppery spicy and earthy yeast poke through the smoke, as well as a hint of lemon. Mild overall, definitely a smoked beer but not a smoke bomb. I get a hint of sugary malt and alcohol as well; perhaps even a touch of sweet fruit.
T: Not as smoky as the nose. Saison yeast and earthy spices come through nicely and are accentuated by light notes of woody smoke, sweet sugary golden fruits and stone fruits, candied fruit, and mild booze. The finish has hints of cantaloupe and spice, and the aftertaste is sweet, boozy and lingering. Definitely a strong take on a saision.
M: Full body, soft and fluffy carbonation is airy and froths up on my palate, with a thick, slightly boozy mouthfeel. A bit tingly as well.
O: Pretty good. Good use of smoke to add complexity rather than dominate. I liked it as is but it’s a bit boozy and heavy. A few alcohol points lighter would probably be slightly more enjoyable.

- Cherry wood smoked saison.

A: Glowing orange with a hazy, translucent quality and a strong carbonation factor within. Creamy, ivory head retains beyond several minutes with hardly a budge.

S: Sweet smoked grains with some apple-citrus. Lightly smoked orange, pear fruitiness and canteloupe. Finishes with some musky citrus-lemon.

T: Smoky flavor, sweet marzen smoked grains and toasted caramel with some pear and star-fruit citrus. Floral hops, orchard like, grapefruit peel and some dry orange grinds. Mid-level smokiness of cherry wood with a solid level of flavor. Warming toasted flowery hops.

M: Creamy mouthful, spicy, dry, tingly (could of used more snap and sharpness) with a moderate warmth of alcohol.

O: Overall like this, the alcohol and dry fruitiness overtakes the initial smoky appeal mid-drink but still maintains enough presence to give this a well rounded, crisp, and bold flavor.

22 ounce bottle into tulip glass, bottled on 12/20/2013. Pours lightly hazy/cloudy golden orange color with a 1-2 finger dense white head with good retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of lemon zest, orange peel, pear, apple, banana, pepper, clove, honey, wheat, bread, herbal, grass, light wood smoke, and herbal/yeast earthiness. Very nice aromas with good balance and complexity of fruity/spicy yeast ester, malt, and light-moderate smoke notes; with good strength. Taste of lemon zest, orange peel, pear, apple, banana, pepper, clove, honey, wheat, bread, wood smoke, herbal, grass, and yeast earthiness. Good amount of earthy peppery yeast spiciness on the finish; with lingering notes of lemon zest, pear, apple, banana, pepper, clove, honey, wheat, bread, herbal, grass, wood smoke, and yeast earthiness on the finish for a while. Very nice robustness and complexity of fruity/spicy yeast ester and pale/smoked malt sweetness; with a great malt/yeast flavor balance and zero cloying sweetness after the finish. Medium carbonation and medium-full bodied; with a smooth and lightly slick/crisp/bready mouthfeel that is nice. Alcohol is well hidden with only a light warming present after the finish. Overall this is a damn nice smoked saision style. All around good robustness, complexity, and balance of fruity/spicy yeast ester and bready/smoked malt sweetness; and very smooth to sip on for the ABV. A very enjoyable offering.
