A - poured a brilliantly clear pale color with orange accents. Three quarter finger loose large bubbled head dissipated quickly. Not much for lacing, which is a surprise for stone I always find their brews provide bountiful lacing.

S - aroma of fruity Belgian esque yeast esthers, citrus, peppery. Slight sourness.

T - taste is very complex, not overpowering in any sense but there is a lot going on. There's a nice biscuity malt flavor that is quickly swept up by mouth filling fruity yeast bouquet that lingers through the finish that ends In a quenching bitter. Smoked notes in the finish as well, the smokiness completes this brew. The whole experience lingers on the pallet for a while, makes me want more.

M - thick n syrupy, low carbonation for a Saison, but that's ok. This thing is smoothe and just damn good, the 10.5% is no where apparent. Would peg this at 7% tops if I haven't of read the bottle. Well done.

O - it is sad that they had to make this beer, I enjoyed it in partial silence as I sat in front of my fireplace. That being said, I do hope they make similar Saisons in the future. Or at least in the vein of this one. Maybe this is out of bounds, and not a good example sure... a little too hoppy and a little too much alcohol. But pioneer on stone, keep coming up with this stuff...it's delicous.

A cool story on the bottle, pours into a large tulip glass a clear medium golden with a amber tinge, man I love the color and the thick creamy shite head. After a few good swirls I pick up some overipe juicy citrus fruits along with some medicinal and spiced yeast notes.Yeasty and mildly phenolic with some clove spice standing out upfront on the palate, the some comes thru providing some meatiness and rich fruitiness, viney hops linger in the finish. This is a pretty complex and damn fine beer,RIP Matt.

Bottled 1/3/14.
In a snifter the beer was a perfectly clear gold color with just a tiny white head.

Aroma was smoky, fruity, and spicy. A little alcohol was noticeable.

Cherries in the taste. Smoke. A little peppery. A little funky. Still some alcohol.

Things combined well in this beer. Very pleasant.

A nice tribute.

Bomber bottle, bottled 12-20-13.

Pours pretty clear, orangy amber, off white moderate cap, leaves a tiny bubble sheen, thin collar and fine scattered lacing.

On the nose I'm getting some citrus, lite smoke, and some alcohol burn.

Full flavor, robust, complex, brash n bold. Not for newbies or the faint hearted. More lime and pineapple all over the palate. I get most of the smoke in the finish, buts its pretty faint. Mostly its more and more heavy citric fruit, phenols and a sort of burnt band aids under note.

A lot going on and I like it

Appearance: low carbonation, minimal head, clear, caramel in color

Smell: cedar, hay, and pepper

Taste: apple, lemon, tangerine, hay, light cedar and smoke towards the end

Mouthfeel: sweet and funky, light body, moderate carbonation

Overall: Very clean, complex, and fruity tasting. A nice sipper. I wish the cherry wood smoke was a bit more prominent, but this is still very tasty. I would get this again.
