This beer is retired; no longer brewed.

In this year’s edition we took our inspiration from two Belgian styles: Saisons and Golden Triples. As such, the Stone 07.07.07 Vertical Epic has a deep, deep golden hue and the flavor is spicy, fruity, complex and refreshing. We used four different malts, and a subtle, yet distinct, blend of Glacier and Crystal hops to get just the right balance. Then, for the complexity, we added in some exotic spices --- including ginger, cardamom, grapefruit peel, lemon peel and orange peel (the latter three acknowledging our Southern California home) --- and a special Belgian yeast strain. All in all this is yet another case of us drawing from classic Belgian influences and cavalierly making it our own...San Diego style!

Had this sometime at the end of 2012, as part of a 03.03.03 - 12.12.12 tasting. I had meant to enter these a while ago while they were fresh and add a few extra details, but that didn't happen. Review from notes. Anyway, here we go.

3.0 A: Murky, light orange color. Not much of a head formed.

3.5 S: A pineapple entered the fighting ring, got beat up, put on a bunch of band aids, and jumped into the fermenter. Super fruity with mango, orange, and papaya backing up the pineapple. Peppery spiciness. Despite the band aids, it's not bad. It smells like an old tripel.

3.5 T: Like the nose. Stale pineapple with all the other fruits mentioned. Peppery spiciness, light banana, and peach. Lots of fruits and quite spicy.

3.5 M: Medium body. Pleasant spritzy carbonation. Nice here.

3.0 D: Reasonably tasty. Not bad for an old beer.

poured into a Stone snifter

A- pours a pale golden color with some sediment floating around, small foamy white head reduces quickly eventually leaving nothing behind

S- spicy yeast aromas up front with some fruity berry and citrus notes, a hint of earthy must mixes with banana, clove, and ginger

T- spicy yeast with a kick of ginger up front, citrusy notes from the orange, lemon and grapefruit peel, banana and clove, with a hint of caramelized sugar on a sweet finish

M- medium body with spritzy moderate carbonation leads to a foamy mouthfeel and a smooth finish

O- very drinkable but the notable characteristics seemed to have faded

A: Deep amber orange color with a super thin head.

S: Rum raisin booze smell.

T: Apricot, molasses, clove, and honey flavors.

M: Sweet and slightly drying.

O: Nice tasting but the mouthfeel seemed out of whack.

Next in the series. Bottle says to age this one to at least 12/12/12. Well, I think I've got that covered.

A: A fairly odd shade of yellowish brown. Neither light nor dark. Neither yellow nor brown. I must say, it's not an overly appealing shade. Forms a small fizzy head that fizzes away quickly, leaving just a thin ring around the edge. No lacing.

S: Aroma is nearly non-existent. Swirling the glass, I am barely able to pick up anything beyond a fruity sweetness and some yeasty phenols.

T: Taste is much more pronounced. It is moderately sweet, with notes of ginger ale, candy sugar, herbs, fennel, citrus zest and some light spices. Bright floral notes. A bit alcoholic on the back end.

M: On the lighter side of medium in body. Low-medium carbonation levels. Spicy-prickly on the finish. Mild bitterness.

O: An okay beer. Not really sure it benefited from six years of aging.

Six year old Seven poured with a light caramel color and a fizzy head of lively bubbles.

The scent had a tinge of alcohol with a flowery perfume of lavender.

The flavors were sour with a flower, licorice, potpourri and carbonated water taste. The finish was genuinely tea like with a real herbal leaf flavor.

The feel was very carbonated but it had a good crispness.

Torn on this one as it had a natural perfumey flower and herbal tone but had little malt character to really round it out.

Huge cap of thick foam that I wasn't expecting from a beer over 5 years old. Cloudy, pale copper color. Slightly musty aroma, but underneath the yeast some hints of citrus and spice. Flavor is a bit subtle, but comes on stronger in the middle with a bitter finish at the back. Most of the flavor comes from digging in instead of sipping. I have no problem with that. Still plenty of carbonation that makes for a fairly light mouthfeel. I was kind if apprehensive with this one, expecting it to be past its prime, but was pleasantly surprised.

A: Light copper-red color with a thin ring of head. Some sediment floating in the glass.

N: Ginger comes through very clear. Orange is also present. Hints of lavender, peppercorn, some malt and whiskey, and cola.

T: Nicely sweetened with ample citrus flavor. Slight oxidation.

M: Light and well-carbonated.

O: Still very aromatic, and this was actually one of the favorites of the tasting amongst non beer geeks. Definitely would drink this one soon.

Head on this golden ale disappears almost instantly. Given its age, I am not too surprised. I tried to pour gently but still managed to land some of the yeast beasts into our Teku glasses.

Syrup, honey and white grape notes predominate. A bit of ginger and citrus pith. A bit of creaminess but maintains dryness in the finish. Carbonation is crisp and tight; it feels really good on the palate. I wish a bit more fruit character would come out and play with the delightful carbonation. Medium to medium-full body.

Overall this is an interesting beer that I held onto for almost six years. I'm guess a year younger might have actually been its prime time as there is a hint of oxidization. This maybe would have been best for a 08.08.08 or 09.09.09 release? Some of the fruit and spice notes have been mellowed out too much in the aging process without much else to give way.

Thanks to Jeff for cracking this - my first taste of any Vertical Epic ever. For some reason I've always passed them up on the shelves, but I was excited to try one that was 5+ years old. Vertical Epic 07 pours the murkiest and swampiest shade of trudgy brown with a yellow-ish tint that I've ever seen. Completely opaque to any and all light and capped with a foamy, big-bubbled, quickly settling eggshell head. Looks like swampy butt juice, seriously what the hell?

Oh gosh, the aroma is even more strange and nebulous than the appearance of this beast. Tomato juice, bubblegum, belgian yeast, vinegar, pounds of ginger, sour-ish cardamom, highly vegetal... Is this a beer or a spiced V-8 splash? Not sure how you blend a saison and tripel and end up with this, though perhaps some of the disarray is induced by the added (and unnecessary) spices. This surprisingly gets a little better as it warms, but it's still a pretty awful smelling beer.

The taste is just a bit better, maybe because at first, the flavors are kind of masked. It still has the weird, vegetal-ish, V-8 flavor happening with more green hints (celery, lettuce?) and that's really killing things for me. The ginger is kicked up about ten notches as well, and it's mildly sour and does not play well with the also-copious amounts of cardamom. This brew is a pretty tough one to stomach, though I think I can make it.

The back-end brings some slight reprieve as there's finally a hint of something I recognize and like in my beer - Belgian yeast. Some bready yeast, clove, and just a bit of citrus peel. Once the strange tartness (seriously, where does this tart note come from) finally fades and the vegetal flavors have a chance to leave your palate, you can finally taste the Belgian influence and all hope is not lost. Unfortunately, I think it's too little, too late.

No complains on the mouth feel, and the carbonation was pretty good considering nearly six years of age was placed on this sucker. But for real, this was pretty awful. I managed to choke all of it down, so it did not enter drainpour territory, although it was getting awfully close. I think it might be a good thing that this beer will never be made again, for the sake of beer drinkers everywhere.

Gold with an insta-vanish white head. Springtime-y light malt, lightly spicy aroma. Tastes delicate and fruity - peach and golden pear fruit with golden malt. Spicy like a Fuji apple.

From the reviews I've read this is better now than it was when it was released.

Opened June 2013.

A - Nice golden apricot body. Fine white head sits low with nice retention and lace.

S - Bright, floral nose. Great balance. Dandelion, honey, touch of tangerine, white grape, Chardonnay, macadamia nut.

T - Smooth apricot jam, honey, sour pear, white grape. Floral finish.

M - Silky, medium-light frame. Surprisingly creamy.

O - A floral take on the style with strong mead influences. Great integration and balance.

Served in 10 oz snifter at the 2013 Most Arrogant Bash.

Remarkable orange-amber color; crystal clear with a small but partially durable head. Very little lacing.
The aroma is not promising, with too much suggestion of vinegar. Otherwise, a wild mix of spices over a fruity base. The flavor also has a suggestion of vinegar but, thankfully, this is much more subdued.
M: Still lightly hot, the higher ABV is not well hidden. Low carbonation works well.

O: At 6 years, probably the oldest beer I've had, and probably past its prime, even if specially delivered by Stone. Still, interesting, fun and enjoyable, if flawed and slightly challenging.

A: 7/7/7 was a golden orange with a small white foamy head that lasted longer than most of the other VEs. Again, minimal lacing.

S: Lots of ginger, lavender and cardamom as well as a surprising amount of citrus.

T: Lots of citrus rind, orange, ginger, lavender, and flowers/grass.

M: Medium bodied with low to medium carbonation.

O: Liked it, didn't love it, but was impressed by how well this one held up. Held up significantly better than any of the older VEs.

22oz. bottle poured into a taster glass. Thanks to Chris for sharing!

(A)- Pours a cloudy orange color with plenty of sediment floaters. Some white froth formed but dissipated quickly.

(S)- A zesty spice up front. The coriander and cardamon are obvious with bits of a grassy lemon and orange zest.

(T)- A zesty spicy orange and a clove/ginger kick. A yeasty profile overall just with an extra citrus and spice punch to it.

(M)- The carbonation level has held up nicely with still a crispness to it. The spices definitely liven things up. Does get a touch bitter for me as it warmed.

(O)- I like the play of spicy esters with the citrus. Perhaps the better of the "lighter" vertical epics at this point, but debatable.

Pours a brilliant deep golden copper, with frothy half inch cream head that dissipates into minimal lacing.

Ginger and citrus pith and sprite, of all things, form the aroma, with confectioners sugar pulling things together.

Almost herbal in character, lots of ginger, orange, and grapefruit pith complement the estery Belgian yeast character well. There's confectioners sugar sweetness and tea-like hops at the finish. Brown sugar sweetness dominates as it warms.

Body is moderate, with moderate to low carbonation and significant alcohol warmth.

Fairly spritzy and herbal. Lots of ginger and tea flavor. I'm not a ginger fan. A bit too herbal.

Probably got this at Discount Liquor, but who knows. Served in a tulip glass.

A - White foam settles to a collar, leaving behind spotty lace and wisps on top. Hazed golden body.

S - You can still smell the cardamom and citrus peel in this one, and there's a nice typical tripel-esque stone fruit malt backbone. This is the first of the series that doesn't seem crazy old.

T - The taste hasn't held up quite well unfortunately, as there are some fruity oxidized notes. Otherwise this is mostly caramel malts with a hefty citrus peel finish.

M - Medium body, medium-low carbonation, dry finish, with a surprising tannic character. Perhaps a hint of alcohol warmth in this one.

D - Not particularly well suited to my tastes, as I'm not a huge cardamom fan, but it's held up reasonably well. I'd be willing to give a keg or refrigerated bottle a chance down the road.

Crystal clear with a 1 finger white head that dissipates quickly leaving no lacing. Small carbonation buttles rise from the center of my oversized wine glass with the occasional larger bubble rising from offcenter. The second glass was a translucent murky orange-brown.

The aroma of bright citrus wafts from the bottle, and after a hard pour, a very yeasty start--like proofing yeast for bread. This was followed quickly by some light metallics, then bubblegum, before morphing into overripe citrus, and finally apple in the end. Spicy Belgian yeast carries throughout.

The taste is almost vinuous at first. Rather dry with some tart citrus. Cardomom is eviedent, and the bite of ginger as well. The second glass tasted much sweeter on the first swallow, but settled down immediately. The saisson parentage is indicated by a definite earthiness. The bitterness of citrus peel was present here also.

Rather light in the first glass, with a nice bite of carbonation/ginger. By the second glas, the carbonation was gone...the bite was all ginger, and the feel was thicker. Oddly, the first glass seemed to leave more of a syrupy feel on the tongue. Very warming.

The carbonation was a bit light, and not surprisingly. The beer is over 5 1/2 years old. Still, it's held up well. It's very tasty and satisfying. Worthy of another purchase. But alas, it was only brewed once. I'll have to resort to the homebrew version.

Pours a light fizzy head, murky hazy sediment, reddish orange color.

Nose earthy malts, sweet malts, Belgian like, light citrus and fruit, apple, hint hops, light booze esters.

Taste has aged malts, light oxidation, Belgian golden malts and esters, booze, light tea chamomile like, light spices, phenols, booze, light apple like fruit, raisin, etc.

Mouth is med bodied, dec carb for the age at least.

Overall decent Belgian beer, aging took it's toll but still a fairly decent beer overall.

Had this on tap for the VE tasting (beers 07.07.07-12.12.12) at Pacific Coast Brewing Co. during SF Beer Week. All reviews are from my notes. I liked this enough that I got it in an 8oz flute glass after the first tasting.

Pours a pale amber, perhaps even bronze-like color with literally no carbonation or bubbles to speak of. There was a slight ring upon it as it arrived, but that quickly vanished and left this behind. Not sure at all how this looked fresh, let alone on tap (2007?? I wasn't even into beer then!), yet I'm certain it must have modified over time to appear more hazed and darker. Very viscous liquid, almost to the point of appearing syrupy. Indeed, it looks a lot more like brandy than actual beer at this point. Definitely has held up well after nearly 6 years, with or without bubbles.

At the nose, there definitely is a spiced aroma as advertised, although it's huge on the grapefruit/citrus peel department. Explosive, in fact, to the point where the alcohol and candied sugar has pretty melded together to create a flavor that smells a lot like grapefruit/lemon hard candy. There's a lot of underlying lemon peel as well, which sets a zesty, grassy aroma all around. Other notes I picked up included woodiness, truffles, and wild yeast, to the point of being tarty.

The flavor consists of more dried yet sweetened candied grapefruit peel flavors, combined with big yeasty honey notes. Vetted green apple cider aromas meld with the grapefruit to create an interesting sensation, and the yeast and faded malts make it similar to a nicely spiced saison. However, with age, the sour astringency seems to have really faded with the yeast holding the fort between the zest and the spices. It's far tartier on the tongue than at the nose here, yet it seems to really work with all of the citrus peel flavors and candied sugar finish that this is offering. Aside from being thick, it's still crisp and bright, and contains a near succulent flavor overall.

At this point of aging, this is pretty much unclassifiable. Is it a saison/tripel hybrid? A citrus/candy sugar Belgian pale ale? Hard to say, but I do think that aging has done very nice things to this beer. I wish I could go back in time and buy a few bottles of this, as this VE worked pretty favorably with me. Not all are winners, but this one definitely has its notable characteristics, especially for fans of tripels, cider, and citrus focused drinks.

22 oz. bottle served in a CCB snifter.

A: Pours a hazy apricot color with a white head forming on the pour. Some splotches of lace are left down the glass.

S: A ton of cardamom and citrus zest. Some fruity alcohol notes as well with just a touch of sweet toffee malt.

T: Some candied grapefruits with a some spicy yeasty. A little bubblegum with some big cardamom notes. Light caramel malts. A ton of zest with bitter citrus peel.

M: Medium bodied with a medium carbonation level. Spicy and zesty on the finish.

O: Definitely one of the better ones of the nights, but I like cardamom and bitter zest. The beer was either liked or hated at the tasting mainly due to the cardamom.

Along with the 06, having this for the first time with quite a bit of age on it. This one is ~ 5 1/2 years old at this point. Thanks to Cam once again.

Pours copper orange with some haze. An off-white head retains well.

Very musty scent, oxidized caramel, ginger, light fruits.

Taste is luckily alot better. Big citrus flavor here sticks out the most, along with grapefruit and lemon, surprisingly bright fruit tastes here for how old it is. Some farmy saison notes, toffee and buttery malts, and hints of ginger. Some old caramel malts there as well but not too much age noticeable.

Well-carbonation with a pretty full body, not much booze presence at all.

Very fruity, doesn't come off as very Belgian, though it has held up pretty well, better than the 06 anyways.

I was fortunate to try this last night at an epic tasting held by my good friend Mike, thanks for the opportunity MrBarleywine! At this beer Jeff started picking on me about taking notes, he is mean and just made the list ;)
Pours a slightly hazy deep golden color with a smallish off white head that sticks for a bit. The aroma is spicy and fruity with a huge hit of ginger that seems to dominate the aroma. The flavor is sweet with light sugar with a twist of orange and citrus. Ginger, allspice, coriander and pepper round out the spice palette in this beer. Light body with a moderate level of carbonation and a sweet mouthfeel. I liked this one its a weird mix between triple and saison, but from my wrecked full flavored palette this is a pretty decent saison.

this one absolutely got better with age. although its certainly changed the mouthfeel. pours hazy golden in color, not much carbonation left in this guy, some yeast floating around in clumps. the nose is belgian yeast and more hops remaining than i anticipated. some spice, although the ginger is hard to pick out. taste is very cardamom forward, which i like and which i do not remember. the alcohol intensity has also been mellowed quite a lot. still the yeast flavors are bold. bready and dense, seeded, toasted. the finish is long and probably not as complex as it used to be, but still full of citrus notes and that belgian yeast. low low carbonation hurts the cause, but that can be attributed to age. fuller body for a beer this light in color, and a candy sort of sweetness that doesnt last long in the finish. overall sort of an anti-climax. after all this time the beer has improved, but im not sure this one was worth the hassle.

Consumed on January 20th, 2013 at a private Vertical Epic tasting.

Beer pours a cloudy, medium golden-yellow. No head or carbonation evident in glass.

Aroma is sweet grapefruit.

Flavor is a bit sweet and cidery with bitter citrus peel and a slightly powdery, sightly floral yeast note.

Mouthfeel is a little thick and could use some carbonation.

Overall, this was one of the more drinkable VE beers we shared.
