“India pale ales harness the inherent flavor characteristics of hops to bring forward familiar flavors of pine, resin, spice and citrus. In some cases, those botanicals are so potent, they exactly mirror specific edibles. Such is the case with Centennial hops, which hail form the great Northwest and come across on the palate like a mouthful of citrus fruit. That sensation is amplified with this, the first beer introduced via the Stochasticity Project, a double IPA brewed with Centennial, Chinook and Magnum hops as well as an immense dosing of fresh grapefruit peel. The result is over-the-top bittersweet grapefruit intensity that is at once refreshing and bracing in its citrusy bitterness.” Brewed in the style of an American IPA with fresh grapefruit peel added. Available as a one-off batch in 22 oz. bottles and on limited draft.

Poured from a 22 oz. bottle to a Stone pint glass. Served above 54 degrees Fahrenheit.

(Appearance) Grapefruit Slam pours a golden-white soapy froth consistency head over a densely hazy amber body with plenty of pulpy sediment in tow. Carbonation is plentiful and assertive. Retention is good, lacing is light and curtained. 4

(Smell) Aromas of citrusy, piney, resinous and fruity hops coalesce atop a fairly simple malt base, some pale and light caramel syrup with a moderate sweetness. The hop bitterness is equally potent to match. Potency is moderate. 3.75

(Taste) Biscuity and spicy malt base with a big hoppy bitterness and less hop flavor. Faint grapefruit peel comes through the most, with peppery and citrusy hops a lesser impact. Fairly assertive-bodied for an American IPA. 3.5

(Mouthfeel) The texture is slick, moderate oily and lightly chewy. The carbonation is moderate and zippy for a medium crisp mouthfeel. The body is medium/heavy for the style and medium+ overall. Balance is bitter over sweet. Alcohol presence is low, and there are few off characters. 3.5

(Overall) In predictable Stone fashion, Grapefruit Slam delivers the slam most notably in the assertive bitterness, although the hop flavor doesn’t quite match the boldness that the hop bitterness suggests. Therefore, it’s a more delicate sipper than most west-coast style IPAs. Its age is certainly evident that it was better once than it is now, thus I don’t recommend seeking out a bottle of this on an account of it being far past its prime. 3.75
