Just when you thought that the Hoppin' Frog ceiling was reached, the small Akron brewery busted through its BORIS threshold with DORIS, then with Barrel-Aged BORIS, so should Barrel-Aged DORIS be any surprise? ...yet it kinda was.

The bourbon barrel-aged imperial stout pours just as viscous, ominous and daring as the militant label suggests. Inky black and with the consistency of motor oil, the ale lumbers along with thick and densely layered foam. Like mousse, the head caps the beer during most of the session but eventually folds back in, leaving the beer still like coffee white it comes up to temperature.

Rich chocolaty aromas capture the essence of true cocoa that's laden with espresso and unmistakable bourbon. Its caramel, vanilla and oak fusion weaves through the boldly roasted aromas as a sweeter and spicier balance to the dry char and burnt cinder scent. Roasted fruits of blackcurrant, red grape and dark berries are greeted with a distinctive and spicy aniseed character as that first sip draws near.

Its charred taste is heartily of smoky chocolate, dark espresso roast, heavy burnt toast and roasted walnuts. An aura of campfire, dry cocoa and heavy whipping cream swirl to keep the flavors together. Even while finer elements of caramel, vanilla, toasted coconut and grilled cherries extend from the bourbony taste, the focus is squarely on the coffee and bitter chocolate. Though there's a lot going on, the taste is exquisitely balanced and properly proportioned. Finishing fruity and warmingly boozy a taste of peppercorn and fenel give a lasting fruit and spice balance to remind the taste buds that this is a British-style "Russian Imperial Stout" at heart.

The beer is unquestionably full bodied as it oozes with thick, chewy and cream textures. Despite its richness, the ale relies on high hop bitterness and astringency from both powdered cocoa and oak to balance the massive sweetness even in moutheel. Very warm and savory, the beer has an indefinite finish of chocolate and coffee.

BA DORIS is not simply your sweet imperial stout- its got a ton of dry roast, wood spice and bitterness to keep it nodding to the drier side. Save that sweeter and creamier tone for the BORIS family of Stout.

2200th review! 22 ounce bottle into snifter, bottled in Fall 2013. Pours dense pitch black color with a 1 finger dense dark brown head with good retention, that reduces to a thin cap that lingers. Light spotty lacing clings on the glass. Aromas of big dark chocolate, cocoa, coffee, roasted malt, vanilla, toffee, toast, molasses, char, vanilla, oak, bourbon, light clove, herbal, and roast/oak earthiness. Damn nice aromas with good balance and complexity of dark/roasted malt and bourbon barrel notes; with good strength. Taste of big dark chocolate, cocoa, roasted malt, coffee, toast, dark bread, molasses, vanilla, toffee, oak, bourbon, light clove, light char, herbal, and roast/oak earthiness. Fair amount of earthy roast/oak bitterness on the finish; with lingering notes of dark chocolate, cocoa, roast, coffee, toast, dark bread, light char, vanilla, toffee, oak, clove, bourbon, herbal, and roasted earthiness on the finish for a while. Incredible complexity and balance of dark/roasted malt and bourbon barrel flavors; with a great balance of roasted malt and oak bitterness/sweetness with no cloying flavors after the finish. Light-medium carbonation and very full bodied; with a very creamy, slick, and lightly syrupy/chalky mouthfeel that is nice. Alcohol is well hidden with only a small warming present after the finish. Overall this is an awesome barrel aged imperial stout. All around great balance and complexity of dark/roasted malt and bourbon barrel flavors; and very smooth to sip on for the big ABV. A highly enjoyable offering.

From 05/01/14 notes. Received in a trade last month, 22 oz. bottle into a globe glass.

a - Pours a dark brown, almost black looking color, with two inches of very dark tan head and moderate carbonation evident. Looks great, like a big stout.

s - Smells of sweet chocolate, dark chocolate, sweet dark fruits, whiskey, oak, toasted malts, and cocoa. Nice nose, lots of chocolate like the base, whiskey isn't too strong.

t - Tastes of bitter chocolate and harsh whiskey. Also tastes of sweet chocolate, dark chocolate, oak, toasted malts, burnt malts, dark fruits, molasses, cocoa, vanilla, and bourbon. Little more bitter and harsh than the nose.

m - Full bodied stout that is rich and creamy, and low to moderate carbonation. Nice mouthfeel.

o - Overall a nice BA stout but I was a bit disappointed considering how much I love the base beer and seeing the reviews. Personally I like the normal DORIS better, though this improved greatly as it warmed up. Not a ton of whiskey in the nose, though it is there a little bit hot in the taste. Worth checking out but wouldn't give up a lot to get it.

Servign Type - 22oz bottle

Appearance - Dark as night, thick like syrup. Monster thick 2 inch head that formed like it was a nitro beer. Nice sticky lacing.

Smell - Huge about of barrel aged bourbon. Vanilla, raisin, plum, smoked malts. Some dark chocolate and booze round this one out.

Taste - Wow, such a great balance of whiskey, malts and dark fruits. Big, bold yet very easy to enjoy. Lots of vanilla mixed with raisin, plum and grapes. Dark Chocolate adds a nice sweet and bold flavor. Strange I really don't get much coffee flavor. Malts are roasted, and just work perfect with this beer.

Mouthfeel - Malts, whiskey and vanilla really nail the tongue. Palate gets chocolate, dark fruits and remaining malts and whiskey. Aftertaste is malty, whiskey and vanilla with dark fruits.

Overall - Simply amazing. Incredible balance along with huge flavors yet everything is tied together so well. The malts and chocolate balance out the whiskey, and the fruits provide bitter flavors. Another world class beer from hoppin frog.

I was not expecting this one to be as good as it was. Regular old BORIS does not compare to this beer. I would definitely get again

Poured from 22oz. bottle into Hoppin Frog snifter. Date of review is 2/7/14.

Appearance- The darkest black one can imagine. No light shines through whatsoever while held up to a bright light. Dark brown quarter-finger head that disappears right away. Beautiful lacing due to the hops.

Smell- Dark chocolate and coffee right up front. Then I get hops and bourbon. I hope the taste is EXACTLY like the nose.

Taste- Dark chocolate and bourbon hit me in the mouth! Then, as I had hoped, coffee and hops soon follow. So damn good!

Mouthfeel- Hoppy and thick at the same time. This beer is sweet and bitter somehow all at once.

Overall- Another grand slam from Hoppin Frog. It is little wonder why they are one of the world's best breweries. This is one of the top 15 beers I have ever had.
