Pours thick viscous dark black in color with a thin tan head.

Smell has aromas of dark chocolate, roasted malt, lots of oaky wood aromas and some hints of vanilla licorice and bourbon.

Taste has rich moderately sweet roasted chocolate malt forward with a big wood presence that follows with notes of vanilla. Lots of booze,charcoal and possibly hop bitterness in the end.

Mouthfeel is super thick with low carbonation leading to this coating the mouth with loads of booze, and charred woody bitterness.

Undated bottle (I've had it for at least 2 months) into a snifter at fridge temp; allowed to warm 20 mins before drinking.

Look: pours very dark--as much like used motor oil as anything I've seen. Viscous, light-devouring ultra-dark brown. Very very tiny, cinnamon-colored head that quickly dissipates, leaving just a ring along the edge. Moderate amount of carb evident.

Smell: roasty, but with bright notes reminiscent of lemongrass. As it warms, rich homemade fudge asserts itself, along with a mild booziness. Also some fig/raisin in the background. The alcoholic version of Willy Wonka has a river that smells like this flowing through his factory.

Taste: sadly, the first (and strongest) taste is very metallic. It's like having a mouthful of pennies. This is a flavor I get in many (but not all); I generally associate it with lower quality, but given the solidness of this beer in all other categories, maybe it's just an ingredient or brewing technique that doesn't agree with me. There's also ample roast, some cherry, a bit of chocolate, and very mild hops. Obviously, this beer is at least 2-3 months old (and being from a trade, maybe much more), so whatever hops were there fresh are pretty faded at this point (which suits my tastes for stouts better--hops belong in CDAs).

Feel: really nice. Fairly thick, low but "correct" carbonation, straddles the line between dry and juicy.

Overall: I'm going to chalk up the taste to either a quirk of my palate, or else a result of any mishandling/incorrect storage that may have gone on before the bottle made it into my hands. Everything else about this beer attests to the skill of the brewer. It's also worth pointing out that I've recently discovered I really don't care for most non-BA American stouts, so even with the off taste I got, this one compares favorably against that cohort.

650 mL bottle poured into a snifter. Reviewed from notes.

Appearance - Inky pitch black. Nice mocha head. Reduces to faint wisps, but stains the glass.

Smell - Lots of black patent malt. Deep chocolate. Boozy.

Taste - Immediate booze and chocolate. Then it has this intense peppery flavor that is quite bad. Very bitter. Harsh and metallic.

Mouthfeel - Harsh alcohol. Oxidized, I think, but there's no age information on the bottle. Medium heavy.

Overall - No idea what is causing that terrible flavor, but it makes it undrinkable. They way I'd imagine rust would taste.

Look: Jet black. Pours with a 1 finger head, dark caramel/reddish in color. The head fades quickly, leaving a foaming ring around the edge.

Smell: Chocolates, cherry, dessert. Just very sweet. Hints of brown sugar.

Taste: Much inline with the smell. It has a very wooden finish, as if it was oak aged. Maybe a bit hoppy as well, which I wasn't expecting.

Feel: This is absolutely amazing. Very full bodied. Very creamy and thick.

Overall: This is a great brew, however, I will say, I prefer Boris over Doris. I had Boris first and wanted to give Doris a try. While it's good, I feel as if they tried to make it better than Boris, and in my opinion, wasn't successful. Still a great beer.
